Bathua Soup | बथुआ सूप
Bathua Soup Ingredients : Bathua (Chenopodium) - 500 gm Cumin Seeds - 1/2 tsp Salt - 1 tsp or as per taste Ginger (chopped) - 2 tbsp Green Chillies (chopped) - 1/2 tbsp Lemon Juice - 1 tbsp Desi ghee - 1.5 tbsp Cream - 1 tbsp and for garnishing (optional) Method : 1. Clean bathua by plucking leaves and removing sticks and grass 2. Wash it with clean water 2 times 3. Heat 1 tbsp ghee in a pan 4. Add ginger and saute for a while 5. Add green chillies and let them cook for few seconds 6. Now add the bathua leaves and 1/2 tsp salt and mix well 7. Cover it and cook on low flame till bathua becomes soft 8. Remove from fire and let it cool 9. Grind the bathua mixture in a grinder 10. Again heat 1/2 tbsp ghee in a pan 11. Add cumin seeds and let them splutter 12. Add bathua paste and 2 cup water, 1/2 tsp salt 13. Let it boil and cook for about 3-4 minutes after boiling 14. Add 1 tbsp cream and mix well 15. Remove from fire and add lemon juice and mix it 16. Serve hot healthy tasty bathua soup
