Traditional Healthy Snack made from Dudhi - Dudhi Muthiya | Bottle Gourd Nuggets | दूधी मुठिया | लौकी मुठिया

Bottle Gourd Nuggets Ingredients : Dudhi / Lauki / Bottle gourd - 500 gm Carrots (grated) - 1 cup Besan (Gram flour) - 1.5 cup Sooji / Semolina - 2 tbsp Green Coriander (finely chopped) - 1/2 cup Curd / yogurt - 3 tbsp Ginger (grated) - 1 tbsp Green Chilli (finely chopped) - 2  Lemon juice - 1 tsp Oil - 4 tbsp Cumin seeds - 1 tsp Sesame seeds - 1 tbsp Curry leaves - 5-6 (optional) Salt - 1.5 tsp or as per taste Method : 1. In a bowl add besan, sooji, yogurt and 2 tbsp oil 2. Add salt, ginger, green chilli, lemon juice and mix 3. Peel and grate the bottle gourd just before making the dish 4. Add grated bottle gourd, carrots, coriander leaves in the besan mixture 5. Mix everything without adding water as water content in bottle gourd is enough to firm it 6. Keep a vessel with 1 litre water in it to boil  7. Make big dumplings (muthiya) of the dough and place it on a greased colander 8. Place the colander on the vessel with boiling water and cover it 9. Steam it for 10-12 minutes...

 🥣  Falahari Lauki Raita Recipe (Vrat Special Bottle Gourd Yogurt)  A light, cooling, and nutritious yogurt dish ideal for fasting days. Ingredients: Lauki (Bottle Gourd) - 300 gm Curd (Yogurt) - 300 gm Rock Salt (Sendh Namak) - 1 tsp Roasted Cumin Powder - 1 tsp Green Chillies - 2 (Finely Chopped) Method: 🥒 1. Prep the Bottle Gourd (Lauki) Wash and peel the lauki thoroughly. Grate it using a medium grater. 🔥 2. Boil the Lauki Boil the grated lauki in sufficient water for about 15 minutes until soft. Drain it using a sieve and let it cool completely. 💧 3. Remove Excess Moisture Once the boiled lauki is cool, gently squeeze out the excess water using your hands. 🥛 4. Prepare the Yogurt Base Beat the curd (dahi) until it becomes smooth and creamy. 🥗 5. Combine Ingredients Add the cooled and squeezed lauki to the beaten curd. Mix well to evenly combine. 🌿 6. Bottle Gourd Kofte | Lauki Ke Kofte Ingredients (Koftas): Lauki (Bottle Gourd) - 500 gram  Besan - 1/2 cup Green chilly - 2 (Finely chopped) Ginger - 1/2" piece (Finely grated) Red Chilli Powder - 1/4 tsp Green coriander - 1 tbsp (Finely chopped) Salt - 1/2 tsp Oil for frying Method (Koftas): 1. Peel, wash and grate the Lauki 2. In a bowl nicely mix grated lauki, green chilly, ginger, red chilli powder, green coriander, besan and salt 3.  Heat Oil in a Kadahi   4.  Take about 1 tbsp mixture in your fingers and put it in Kadahi.
