Stuffed Karela with Aloo | Stuffed Bitter Gourd with Potatoes | भरवाँ करेला

Stuffed Karela with Aloo Ingredients: Karela (Bitter Giurd) - 250 gm Potatoes (boiled) - 2 Turmeric powder - 1/2 tsp Red chili powder - 1/2 tsp Garam masala powder - 1 tsp Chat masala powder - 1 tsp Salt - 1 tsp Oil - 2 tbsp Method: 1. Wash the karelas and peel them slightly 2. Make a vertical slit on each karela. 3. Scoop out and discard seeds and pulp to fill the potato masala 4. Sprinkle and rub 1/2 tsp salt and 1/4 tsp turmeric powder to remove bitterness 5. Let it rest for 20-25 minutes 6. In a mixing bowl mash the boiled potatoes 7. Add 1/4 tsp turmeric powder, red chili powder, chat masala, garam masala and 1/2 tsp salt 8. Mix everything nicely 9. Now fill the karelas with potato masala filling tightly 10. Paneer Ghee Roast Ingredients: Coriander seeds - 3 tsp Cumin seeds - 1.5 tsp Fennel seeds (saunf) - 2 tsp Fenugreek seeds (methi dana) - 1/2 tsp Black peppercorns - 1/2 tsp Garlic cloves - 7-8 Tamarind pulp - 2 tbsp Dry red chilies - 6 Ghee - 5 tbsp Paneer (cottage cheese) - 400 gm Curd - 5 tbsp Lemon juice - 1 tbsp Salt as per taste Onion (finely chopped) - 1 cup Turmeric powder - 1/2 tsp Curry leaves - 12-14 Method: 1. Heat a pan with 1 tbsp ghee and roast coriander seeds, cumin seeds, fennel seeds, fenugreek seeds, peppercorns, red chilies. 2. Vegan Broccoli Salad Ingredients: Broccoli (small florets) - 3 cups Olive oil - 1 tbsp Sesame seeds - 1 tbsp Peanuts - 2 tbsp Spring onions green - 1 cup Salt as per taste Soy Sauce - 2 tbsp Vinegar - 1 tbsp Chilli Sauce - 1 tbsp Cornstarch - 1 tsp Method: 1. Wash and rinse broccoli florets very nicely 2. Heat a pan and add 3 tbsp water 3. Add broccoli and cover it 4. Cook on low flame for 4-5 minutes 5. Take 2 tbsp water in a small bowl, add cornstarch and mix nicely 6. Remove broccoli from pan 7. Now add 3 tbsp water in the pan and let it get hot 8. Beetroot Chickpea Salad Ingredients: Beetroot (diced and boiled) - 2 cups Chickpeas (boiled) - 1.5 cups Cucumber (diced) - 1/2 cup Onion (finely chopped) - 1/4 cup Paneer / Tofu (cubed) - 1/2 cup Coriander leaves - 2 tbsp Virgin Olive Oil - 3 tbsp Lemon juice - 2 tbsp Garlic cloves (minced) - 2 Roasted cumin powder - 1 tsp Salt - 1/2 tsp or as per taste Black pepper powder - 1/2 tsp Method: 1, In a small jar add olive oil, lemon juice, minced garlic, cumin powder, salt, black pepper powder 2. Whisk to combine 3. In a large mixing bowl add beetroot, chickpeas, cucumber, onion, paneer / tofu, coriander leaves 4. Drizzle the dressing over the salad ingredients 5. Toss well to combine 6. Lobia Salad Ingredients: Lobia / Black Eyed Peas- 1 cup Cucumber (chopped) - 1 cup Tomatoes (chopped) - 1/2 cup Onion(chopped) - 1/4 cup Coriander leaves (chopped) - 2 tbsp Sunflower seeds/ peanuts - 1/4 cup Olive Oil - 2 tbsp Lemon Juice - 1 tbsp Cumin powder - 1/4 tsp Pepper powder - 1/2 tsp Salt to taste Potatoes (boiled and cubed) - 1 cup Method: 1.  Soak the lobia for 3 to 4 hours. 2. Wash the soaked lobia and add them to the Pressure cooker. 3. Add 2 cups of water, 3/4 tsp salt and cook for 2-3 whistles  4. Let the pressure release on its own and then strain the lobia and keep it aside 5. Dice boiled potatoes 6. Finely chop onion, tomatoes, cucumber, and cilantro. 7. Butter Garlic Broccoli Salad / Appetizer Ingredients: Broccoli florets - 2 cups Carrots (cubed) - 1 cup Onion (cubed) - 1 cup Garlic (finely chopped) - 1/2 tbsp Butter - 2 tbsp Coriander leaves (finely chopped) - 4 tbsp Oregano - 1 tsp Red chili flakes - 1 tsp Salt - 1/2 tsp or as per taste Method: 1. In a mixing bowl add broccoli florets, carrots, onion, garlic, butter 2. Mix nicely 3. Add coriander leaves, oregano, chili flakes, salt 4. Toss well to mix everything nicely 5. Transfer to the air fryer basket 6. Air fry at 180 C for 12 minutes  7. Toss and mix in between for even cooking 8. Quick and easy Butter Garlic Broccoli is ready to be served as a Salad or Appetizer

Broccoli Stir Fry with Almonds Ingredients : Broccoli florets minced - 2.5 cups Onion (finely chopped) - 3/4 cup Oil - 2 tbsp Curry leaves - 8-10 Green chilli (slit) - 1 Cumin seeds - 1/4 tsp Mustard seeds - 1/8 tsp Ginger garlic paste - 1 tsp Red chilli powder - 1/3 tsp Garam masala powder - 3/4 tsp Almonds (blanched) - 20 Salt - 1 tsp Lemon Juice - 1 tbsp Method: 1. Heat oil in a pan 2. Add cumin seeds and mustard seeds 3. Add curry leaves and fry 4. Add chopped onions and fry till they are lightly golden  5. Add ginger garlic paste and fry till the raw smell disappears 6. Add broccoli florets , salt and fry for 2-3 minutes 7. Add red chilli powder, garam masala powder and stir well 8. Cover and cook for 2-3 minutes 9. Make a fine paste of almonds by adding liitle water 10. Pour almond paste in the pan  11. Stir fry for 2-3 minutes or till it becomes fragrant and cooked 12. Falahari Makhana Raita  Ingredients: Curd / Yogurt - 2 cups Fox Nut (Makhana) - 1 cup Red Chilli Powder / Black pepper powder- 1/2 tsp Roasted Cumin Powder - 1/2 tsp Green Chillies (finely chopped) - 2 Rock salt (Sendha Namak) - 1 tsp Desi ghee - 1 tsp Coriander leaves for garnish Method : 1. Heat ghee in a pan and add makhana in it 2. Roast the makhana on low flame 3. Stir at intervals while roasting 4. Roast till they become crunchy and crisp 5.  To check if they are correctly roasted, take one Makhana in hand and crush it. If it breaks nicely with a crunching sound, that means they are perfectly roasted. 6. Take them out in a plate and let them cool 7. Whisk curd in a bowl 8. Bathua Boondi Raita Ingredients: Bathua - 500 gm Curd - 500 gm  Boondi - 1 cup Salt - 1/2 tsp Black Salt - 1/2 tsp Green Chilly - 1 (finely chopped) Cumin powder - 1/2 tsp Red chilli powder - 1/4 tsp Oil - 1 tsp Cumin seeds - 1/2 tsp Hing - 1/4 tsp Method: 1. Clean bathua by plucking leaves and removing sticks and grass 2. Wash it with clean water 2 times 3. Put bathua in 2 cups of boiling water and let it boil 4. Cook it for 5-6 minutes 5. Malai Paneer Korma Ingredients: Paneer Cubes - 2 cups Onion (roughly chopped) - 6 Garlic Cloves - 7 Ginger (roughly chopped) - 1/2 inch piece Green Chilli - 2 Black Cardamom - 1 Green Cardamom - 3 Shahi Jeera - 1/4 tsp Cashew nuts - 1/2 cup Black Peppercorns - 6 Curd - 1 cup Desi Ghee - 4 tbsp Salt - 1 tsp or as per taste Milk - 1 cup Nutmeg powder - a pinch Cardamom powder - a pinch Crushed black pepper - a pinch Method: 1. Broccoli Corn Stir Fry Ingredients : Broccoli florets - 1 cup Carrots (finely chopped) - 1/2 cup Corn (boiled) - 1/2 cup Garlic cloves (chopped) - 1 tbsp Cumin Seeds - 1/2 tsp Salt - 1 tsp Oil - 1 tbsp Red Chilli powder - 1/4 tsp Garam Masala powdet - 1/4 tsp Method : 1. Heat 3 to 4 cups of water in a pot and add 1/2 tsp salt, broccoli florets in it for 2 minutes 2. Rinse the florets under running water and drain in a colander 3. Green Chilli Thecha Ingredients : Green chillies (chopped) - 1/4 cup Raw peanuts - 3 tbsp Oil - 2 tsp Garlic (roughly chopped) - 2 tbsp Green Coriander (roughly chopped) - 1/4 cup Salt - 1/2 tsp or as per taste Method: 1. Dry roast peanuts on medium flame for 3-4 minutes while stirring continuously 2. Remove and deskin the peanuts 3. Heat the oil in a pan and add the green chillies and mix well 4. Cover and cook on medium heat for 2 minutes while stirring occasionally 5. Add garlic and saute on medium flame for 1 minute 6. Allow the mixture to cool completely 7. Once cooled, add peanuts, green coriander, salt and chili garlic mixture in a blender jar 8. Blend it to a coarse mixture 9. Curry Leaves Chutney Ingredients : Curry leaves - 14-15 sprigs Urad dal (husked black gram) - 1 tsp Mustard seeds - 1 tsp Cumin seeds - ½ tsp Ginger (chopped) - ½ inch Green chilies (chopped) - 2 Coconut (dessicated) - ½ cup Roasted chana (roasted bengal gram) - 1 tbsp Asafoetida (hing) - 1 pinch Oil - 2 tbsp Lemon juice - 1 tbsp Salt - 1/2 tsp or as required Method : 1. Wash the curry leaves sprigs and remove the leaves from the sprigs 2. Dry the curry leaves with a clean kitchen towel. 3. Heat oil in a frying pan. Then add mustard seeds and urad dal. 4. Mint  Raita | Pudina Raita Ingredients: Curd / Yogurt - 1 cup Fresh mint leaves - 1/2 cup Red Chilli Powder - 1/4 tsp Roasted Cumin Powder - 1/2 tsp Chat Masala powder - 1/4 tsp Black Salt   - 1/2 tsp Salt - 1/2 tsp Method : 1. Whisk curd in a bowl 2.  Wash mint leaves nicely  3.  Grind mint leaves to a fine paste using 2-3 tbsp water  4.  Add mint paste along with its juices to the curd  5.  Stir very well 6.  Spice the curd with salt, black salt, red chilli powder, cumin powder and chat masala powder 7.  Mix everything very well 8.
