Lobia Creamy Salad Ingredients: Lobia - 1 cup Yellow Bell pepper (cut in strips) - 1/2 cup Red Bell pepper (cut in strips) - 1/2 cup Green Bell pepper (cut in strips) - 1/2 cup Carrot (cut into match sticks) - 1/2 cup Lettuce (torn into large chunks) - few leaves Coriander leaves (finely chopped) - 2 tbsp Olive oil - 2 tbsp Hung curd - 2 tbsp Garlic (grated or minced) - 1 clove Lemon Juice - 2 tbsp Salt - 1 tsp or as per taste Black pepper powder - 1/2 tsp Method: 1.  Soak the lobia for 3 to 4 hours. 2. Wash the soaked lobia and add them to the Pressure cooker. 3. Add 2 cups of water, 3/4 tsp salt and cook for 2-3 whistles  4. Let the pressure release on its own and then strain the lobia and keep it aside 5. In a mixing bowl add olive oil, hung curd, garlic, lemon juice, 1/4 tsp salt, black pepper powder and whisk well 6. Capsicum  Raita  Ingredients: Curd / Yogurt - 1 cup Oil - 2 tsp Mustard Seeds - 1/2 tsp Curry Leaves (Kari Patta) (Chopped) - 1 tsp Onion (Finely chopped) - 1/4 cup Green Chilly (Finely chopped) - 1 Capsicum (Finely chopped) - 1/4 cup Red Chilli Powder - 1/4 tsp Roasted cumin powder -1/4 tsp Salt  - 3/4 tsp Method: 1. Whisk the curd till smooth and keep aside 2. Heat oil in a pan 3. Add mustard seeds  and let them crackle 4. Add onion, curry leaves , green chilly  5. On a medium flame saute onions for 1 or 2 minutes 6. Add capsicum and mix it nicely  7. Saute on low flame for 6-7 minutes, till the capsicum are half done 8. Switch off the flame and add red chilli powder,Cumin powder, salt and mix well. 9. Stuffed Capsicum with Potato (Microwave) Ingredients: Capsicum - 250 gm Potato - 250 gm (Boiled) Hing (Asafoetida) - 1/4 tsp Cumin seeds - 1/2 tsp Coriander powder - 2 tsp Red Chiili Powder - 1/2 tsp Garam masala powder - 1/2 tsp Amchur powder - 3/4 tsp Oil - 1 tbsp Salt - 1 tsp Cheese Slice - 1 (optional) Method: 1. Wash and Cut capsicum into two halves horizontally 2. Remove the seeds and stalk from the halves 3. Chop the boiled potatoes to small pieces 4. Heat oil in a pan 5. Add cumin seeds and hing 6. When cumin seeds splutter add chopped potatoes 7. Add coriander powder, red chilli powder, salt and mix well 8. Cook for 3-4 minutes and then add garam masala powder, amchur powder and mix nicely 9.
