Khatti Achari with Garam Masala (No Oil Pickle) | खट्टी अचारी गरम मसाला वाली (बिना तेल का अचार)

Khatti Achari with Garam Masala Ingredients : Raw mango - 2 kgs Salt - 5 tbsp Hing - 1 tsp Red chilli powder - 1 tbsp Sugar - 400 gm Black cardamom - 8 Cloves - 20 Cumin seeds - 3 tsp Black peppercorns - 1.5 tsp Cinnamon (2" piece) - 2 Method : 1. Wash and wipe the mangoes 2. Peel the mangoes and cut them into about 1 inch big pieces 3. Add Salt, Hing in mangoes and mix well. 4. Cover with a muslin cloth and keep in Sun for 2 days and  keep mixing it with a clean and dry spoon once a day. 5. Slightly dry roast cumin seeds, cloves, black pepper, cinnamon, pods of black cardamoms on low flame for 2-3 minutes to remove moisture from them 6. Grind these masalas coarsely 7. Add coarsely ground masala, red chilli powder in mangoes and mix 8. North Indian Spicy Raw Mango Pickle Ingredients: Raw Mango - 2 kg Salt - 1 cup (200 gm) Hing (Asafoetida) - 1/2 tsp Turmeric Powder - 2 tsp Saunf (Fennel) Seeds - 50 gm Fenugreek Seeds - 1 tsp Mustard Seeds - 3 tsp Red Chilli Powder - 5 tsp Black Gram (Kala Chana) - 50 gm Whole Red Chilly - 25 gm Mustard Oil - 1/2 litre Method: 1. Wash the mangoes and dry them completely making sure there is no moisture or dust 2. Cut the mangoes in half, deseed and further cut them into one inch cubes. 3. Grind Fennel seeds, fenugreek seeds, mustard seeds to a coarse powder 4. In a bowl add ground masala, salt, red chilli powder, turmeric powder, black gram, whole red chilly, hing 5. Mango Sour Chunda | Mango Sour Kuchla   Ingredients: Raw Mango - 2 kg Salt - 5 tbsp Hing ( Asafoetida) - 1/2 tsp Big Cardamom - 7 Cloves - 16 Cumin seeds -  2 tsp Black Pepper - 1 tsp Cinnamon - 2" piece Red Chilli Powder - 1 tbsp Sugar - 400 gm Method: 1. Wash the mangoes and wipe them with a kitchen towel 2. Peel the mangoes 3. Grate the mangoes 4. Add Hing and salt to the grated mangoes 5. Mix it with a clean and dry spoon and cover it with a muslin cloth 6. Keep it in sun for 2 days (Do mix it once a day with a clean and dry spoon) 7. Grind Big Cardamom, cloves, cumin seeds, black pepper and cinnamon to a coarse powder 8. After 2 days, add  grounded powder and red chilli powder  9. Mix well with a clean and dry spoon  10.  🥭🍯 Raw Mango Jaggery Pickle 🧾  Ingredients: Raw Mango - 2 kg Salt - 3 tbsp Hing ( Asafoetida) - 1/2 tsp Red Chilli Powder - 2 tbsp Fennel (Saunf) Powder- 1 tbsp Jaggery - 1 1/2 kg Method: 🥭✨ Step 1: Wash, Peel & Chop the Mangoes Start by washing the raw mangoes thoroughly. Peel the skin and chop them into bite-sized pieces —feel free to choose your preferred size or shape. 🧂🌿 Step 2: Salt & Spice Prep Place the chopped mangoes in a ceramic or glass bowl . Add rock salt and a pinch of hing (asafoetida) .
