One Pot Vegetable Mangodi Tahiri / Pulao

Vegetable Mangodi Tahiri Ingredients: Basmati rice - 2 cups Mangodi - 1 cup Green Peas - 3/4 cup Potato (Cut in big pieces) - 1 cup Onion (thinly sliced) - 1 cup Ginger (grated) - 1 tbsp Green chillies (slit) - 2 Desi ghee - 3 tbsp Turmeric powder - 1/2 tsp Red chilli powder - 1/2 tsp Garam masala - 1 tsp Cumin seeds - 1 tsp Bay leaf - 1 Cloves - 6-7 Cinnamon stick - 1/2 " Black Cardamom - 2 Salt as per taste Method: 1. Rinse the rice in clean water 3-4 times  2. Soak the rice in water for 20 minutes 3. In a pressure cooker add 2 tbsp ghee 4. Add the mangodi and shallow fry them on low heat 5. When they have turned golden brown take them out in a plate  6. In the same cooker add 1 tbsp ghee 7. Add cumin seeds, bay leaf, cinnamon stick, cardamom, cloves 8. Saute for few seconds 9. Gur Ki Kheer Ingredients : Full cream milk - 1 ltr Rice (medium or small grain) - 1/4 cup Powdered jaggery(preferably date jaggery) - 1/2 cup Almonds (soaked, peeled and chopped) - 1 tbsp Cashew nuts (chopped) - 1 tbsp Pistachios (chopped) - 1 tbsp Golden raisins - 1 tbsp Green cardamom powder - 1/2 tsp Method : 1. Wash rice nicely and soak in water for 15 minutes 2. Heat milk in a heavy bottomed pan 3. As soon as the milk comes to a boil, lower the flame 4. Remove rice from water and add to the milk 5. Mix and cook on low medium flame for 15-20 minutes 6. Keep on stirring in between so that it doesn't stick to the bottom of the pan 7. Add raisins, chopped almonds, chopped pistachios, chopped cashew, chopped walnuts and mix 8. Add cardamom powder, mix and cook for 10-12 minutes more 9. Palak Paneer Pulao Ingredients : Spinach (Palak) - 500 gm Rice - 1 cup Salt - 1 tsp Turmeric Powder - 1/4 tsp Paneer (Cottage Cheese) - 200 gm (cut into cubes) Ghee - 1 tbsp Cumin Seeds - 1 tsp Onion (chopped) - 1/2 cup (optional) Ginger (grated) - 1 tbsp Green chilli (sliced lengthwise) - 1 Black Cardamom - 2 Cinnamon Stick - 1 inch piece Black Peppercorn - 1/2 tsp Bay Leaf - 1 Method : 1. Wash and soak the rice for 10 minutes 2. Wash and chop the spinach 3. Grind it to a smooth paste by adding little water 4. Heat 1 tbsp ghee in a Pan 5. Add cumin seeds, black cardamom, cinnamon stick, black peppercorns, bay leaf and let them crackle 6. Now add the onions (optional), ginger, green chilli and saute them for 2 minutes 7. Phale  | Rice & Urad Dal Snack Ingredients: Rice Flour - 2 cup Salt - 2 tsp Oil - 3 tbsp Urad Dal - 1/2 cup Ginger - 1 tbsp (grated) Green Chilly - 2 (finely chopped) Cumin seeds - 1/2 tsp Red Chilli Powder - 1/2 tsp Coriander Powder - 1 tsp Fennel Powder (Saunf Powder) - 1 tsp Amchur Powder - 1 tsp Hing (Asafoetida) - 1/4 tsp Oil for deep frying Method: 🥣 Step 1: Prepare the Urad Dal Filling Rinse and Soak Rinse urad dal a couple of times and soak it in enough water for 3–4 hours .
