Masaledar Aloo Do Pyaza (Dry) Ingredients: Potato - 500 gram (Medium size) Small onions (Shallots)- 250 gram Medium Size onion - 1 (finely chopped) Curd / Yogurt - 1 cup Cinnamon - 2" stick Black Pepper - 1 tsp Cloves - 8 Big Cardamom - 4 Coriander Seeds - 4 tsp Whole Red Chilli - 2 Cumin Seeds - 1 tsp Red Chilli powder - 1/2 tsp Salt - 1 tsp Oil - 4 tbsp Coriander leaves (finely chopped) - 1 tbsp Method: 1. Grind the medium size onion to a paste 2. Coarsely grind the coriander seeds 3. Peel the potatoes and cut each potato into 4 pieces. Peel the small onions. 4. Heat Oil in a pan 5. Add cumin seeds, cinnamon, black pepper, cloves, cardamom, whole red chilli in oil and stir it lightly 6. Now add potato in the pan and fry it for 2 minutes 7. Vrat ka Aloo Raita Ingredients: Small Potatoes - 250 gm (Boiled) Curd - 250 gm Rock Salt - 1 tsp Black Pepper Powder- 1/2 tsp Roasted Cumin Powder - 1 tsp Green Chillies - 2 (Finely chopped) Cumin seeds - 1/2 tsp Desi Ghee - 1 tsp Method: 1. Peel the boiled potatoes 2. Cut the potatoes into circular pieces 3. Whip the curd to make it smooth 4. Add rock salt, cumin powder, pepper powder in curd and mix well 5. Now add the potato pieces in the curd and mix with gentle hand 6. Heat ghee in a tadka pan 7. Add cumin seeds in it and let them sizzle 8. Vrat Wale Rasedar Aloo Ingredients: Potato - 500 gms (Boiled) Kuttu Atta (Buckwheat Flour) - 1 tbsp Sendha Namak ( Rock Salt) - 1 tsp Green Chillies - 2 (Finely Chopped) Cumin Seeds - 1/2 tsp Amchur Powder - 1 tsp Desi Ghee - 1 tbsp Method: 1. Break the boiled potatoes in uneven pieces 2. Heat Ghee in a pan and add cumin seeds 3. After the cumin seeds splutter, add green chillies and fry for 30 seconds 4. Now add kuttu atta and fry for a minute 5. Add the potatoes in the pan 6. Put rock salt in it 7. Now put amchur powder 8. Mix well and keep stirring for a minute 9. Add 2 cup water and mix well 10. Aloo Sabji (For Poori /Kachori) Ingredients: Potato - 500 gm (Boiled) Coriander Seeds - 2 tsp Cumin seeds - 2 tsp Ajwain ( Carom Seeds) - 1/2 tsp Turmeric Powder - 1/2 tsp Amchur Powder - 1/2 tsp Red Chilly Powder - 1/2 tsp Garam Masala Powder - 1/2 tsp Hing ( Asafoetida)  - a pinch Ginger Powder - 1/2 tsp Oil - 2 tbsp Whole Red Chillies - 2 (Broken in 2 pieces) Tomato - 1 (Grated) Kasoori Methi - 1 tsp Coriander Leaves - 1 tbsp Method: 1. Dry roast coriander seeds, 1 tsp cumin seeds and ajwain in a pan 2. Coarsely Crush the roasted masalas 3. Bombay Potatoes | Chatpate Masala Aloo Ingredients: Small Potatoes - 400 gm Ginger Paste - 1 tsp Ajwain (Carrom Seeds) - 1 tsp (Crushed) Methi (Fenugreek) Seeds - 1 tsp (Coarsely grounded) Hing (Asfoetida) - 1/4 tsp Red Chilli Powder - 1 tsp Oil - 2 tbsp Salt - 1 tsp or as per taste Chat Masala - 1/2 tsp Coriander Leaves - 1 tbsp Method: 1. Keep three glass water with salt on heat to boil 2. When the water starts boiling, add the potatoes 3. Let the Potatoes boil for 10 minutes 4. Remove the Potatoes from water and let them cool 5. Peel the boiled potatoes 6. Heat Oil and add crushed ajwain 7. Now add ground Methi, Hing 8. Put Ginger paste in it 9. Put Red Chilli powder 10. Add the potatoes and mix well 11.
