Falahari Pomegranate   Raita | Anardana Raita Ingredients: Curd / Yogurt - 1 cup Pomegranate arils (Anardana) - 3/4 cup Roasted cumin powder - 1/2 tsp Black pepper powder - 1/4 tsp Sugar - 1 tbsp Rock Salt (Sendha Namak) / Black Salt   - 3/4 tsp Coriander leaves for garnish Method 1. Whisk curd in a bowl 2. Add sugar and stir well till sugar is dissolved 3. Add black pepper   powder, cumin powder and rock salt / black salt and mix well 4. Add the pomegranate arils and reserve a few for garnishing 5. Mix well 6. Chill the pomegranate raita in refrigerator 7. Pour the pomegranate raita in serving bowls and garnish with pomegranate arils and coriander leaves. Mint  Raita | Pudina Raita Ingredients: Curd / Yogurt - 1 cup Fresh mint leaves - 1/2 cup Red Chilli Powder - 1/4 tsp Roasted Cumin Powder - 1/2 tsp Chat Masala powder - 1/4 tsp Black Salt   - 1/2 tsp Salt - 1/2 tsp Method : 1. Whisk curd in a bowl 2.  Wash mint leaves nicely  3.  Grind mint leaves to a fine paste using 2-3 tbsp water  4.  Add mint paste along with its juices to the curd  5.  Stir very well 6.  Spice the curd with salt, black salt, red chilli powder, cumin powder and chat masala powder 7.  Mix everything very well 8. Garnish the raita with a sprig of mint leaves 9. Serve raita with baked or tandoori starters.  10. It can also be served as a side dish in any meal. 11. Masala Chaach Ingredients: Coriander leaves (roughly chopped) - 2 tbsp Mint leaves (roughly chopped) - 2 tbsp Ginger (roughly chopped) - 1/2 tbsp Green chilli - 1 (chopped) Curd - 1 cup Water - 1 glass Salt - 1/2 tsp Black salt - 1/2 tsp Roasted Cumin powder - 1/2 tsp Chat masala - 1/4 tsp Method: 1. Add curd, coriander leaves, mint leaves, ginger, green chilli in a blender 2. Blend all the ingredients. 3. Add 1 cup water in the blended mixture 4. Sieve the blended mixture to get a smooth texture 5. In the chaach add salt, black salt, cumin powder, chat masala and mix well 6. For serving add ice cubes in a glass and pour the prepared chaach 7. Garnish with mint leaves and serve it immediately 8. Masala Chaach aids in digestion, is a great tool against dehydration and helps caim the stomach after a spicy meal 9. Carrot  Raita | Gajar Raita Ingredients: Curd / Yogurt - 1 cup Carrot (peeled and grated) - 1/2 cup Coriander leaves (finely chopped)   - 1 tbsp Mint leaves (finely chopped)   - 1 tbsp Green Chilly (finely chopped) - 1 Roasted Cumin Powder - 1/2 tsp Black Salt   - 1/2 tsp Desi ghee - 1/2 tsp Hing (Asafoetida) - a pinch Method : 1. Whisk curd in a bowl 2. Add the grated carrots (reserve 1 tsp for garnish) 3. Add the chopped green chilly, chopped mint leaves and mix well 4. Add cumin powder, black salt and mix well 5. In a small pan heat ghee 6. Add hing and fry hing for few seconds 7. Pour the tempering on raita and mix well 8. Chill the carrot raita in refrigerator 9. Kachumber Raita Ingredients: Curd (Yogurt) - 2 cups Potato (Boiled and chopped) - 1 Cucumber (Finely chopped) - 1 Tomatoes (Finely chopped) - 4 tbsp Onion (Finely chopped) - 4 tbsp Carrot (grated) - 2 tbsp Capsicum (Finely chopped) - 2 tbsp Green Chilli (Finely chopped) - 1 tsp Red Chilli powder - 1/2 tsp Roasted Cumin powder - 1/2 tsp Mint leaves (Finely chopped) - 1 tbsp Coriander Leaves (Finely chopped) - 1 tbsp Sugar powdered (Boora) - 1/2 tsp Salt - 1 tsp Method: 1.  🥣  Falahari Lauki Raita Recipe (Vrat Special Bottle Gourd Yogurt)  A light, cooling, and nutritious yogurt dish ideal for fasting days. Ingredients: Lauki (Bottle Gourd) - 300 gm Curd (Yogurt) - 300 gm Rock Salt (Sendh Namak) - 1 tsp Roasted Cumin Powder - 1 tsp Green Chillies - 2 (Finely Chopped) Method: 🥒 1. Prep the Bottle Gourd (Lauki) Wash and peel the lauki thoroughly. Grate it using a medium grater. 🔥 2. Boil the Lauki Boil the grated lauki in sufficient water for about 15 minutes until soft. Drain it using a sieve and let it cool completely. 💧 3. Remove Excess Moisture Once the boiled lauki is cool, gently squeeze out the excess water using your hands. 🥛 4. Vrat ka Aloo Raita Ingredients: Small Potatoes - 250 gm (Boiled) Curd - 250 gm Rock Salt - 1 tsp Black Pepper Powder- 1/2 tsp Roasted Cumin Powder - 1 tsp Green Chillies - 2 (Finely chopped) Cumin seeds - 1/2 tsp Desi Ghee - 1 tsp Method: 1. Peel the boiled potatoes 2. Cut the potatoes into circular pieces 3. Whip the curd to make it smooth 4. Add rock salt, cumin powder, pepper powder in curd and mix well 5. Now add the potato pieces in the curd and mix with gentle hand 6. Heat ghee in a tadka pan 7. Add cumin seeds in it and let them sizzle 8.
