 🥔 Falahari Lauki Kuttu Pakora A light, crispy, and vrat-friendly snack made with bottle gourd and buckwheat flour 🧾  Ingredients: Lauki / Doodhi (Bottle gourd) - 500 gm Kuttu Atta (Buckwheat) / Singhara Atta (Water chestnut) - 5 tbsp Rock Salt (Sendha Namak) - 1 tsp Black Pepper (crushed) - 1/2 tsp Green Chilly (chopped) - 1 tsp Peanut Oil for frying Method: 🥒  Step 1: Prepare the Bottle Gourd Wash and peel the lauki (bottle gourd). Using the fine side of a grater , grate the lauki into a large mixing bowl. 🌿 Step 2: Season and Mix Add the following spices and aromatics to the grated lauki: ½ tsp rock salt (sendha namak) ½ tsp crushed black pepper Chopped green chilies (adjust to taste) For binding, add 5 tablespoons of Kuttu atta (or Singhara atta). Falahari Singhara Aata Poori Ingredients : Singhara Aata (Chestnut flour) - 1 cup Potatoes (boiled) - 2 (medium size) Rock Salt (Sendha namak) - 1 tsp or as per taste Green Chilli (finely chopped) - 1 tsp Roasted Cumin powder - 1/2 tsp Peanut Oil for frying Method: 1. Grate the boiled potatoes 2. Add green chilli, rock salt, cumin powder, singhara aata in the grated potatoes and mix well 3. Adding very little water knead a smooth dough from the singhara aata mixture 4. Take a small portion from the dough and form a ball from it by rolling it in between the palms 5. Press it a little and apply little oil on it. Roll out a circle using a rolling pin 6. Heat Oil in a kadahi and deep fry the poori by regularly flipping it from both sides  7. Falahari Sabudana Peanut Mixture | फलाहारी साबूदाना मूंगफली नमकीन

Falahari Sabudana Peanut Namkeen Ingredients: Big Sabudana (Nylon Sabudana) - 1 cup Peanuts (Moongfali) _ 1cup Rock salt (Sendha Namak) - 1 tsp or as per taste Black pepper powder - 1/2 tsp Peanut Oil for frying Method: 1. Heat oil in a kadahi for frying sabudana 2. When the oil is nicely hot, add 1 tbsp sabudana in it 3. Stir sabudana and then let it pop like popcorns  4. When the sabudana is nicely puffed take it out with a strainer 5. Similarly fry the rest of the sabudana 6. Remove excess oil from kadahi and leave 1 tbsp oil in it. Add peanuts in the kadahi. 7. Stir fry the peanuts till they become golden brown 8. Take them out in a plate lined with paper napkin. Let the fried peanuts cool down 9. Add fried peanuts in the sabudana 10. Falahari  Khatta Meetha Kaddu for Vrat Ingredients: Pumpkin (Kaddu) - 500 gm Desi Ghee - 1 tbsp Cumin Seeds - 3/4 tsp Roasted Cumin Powder - 1 tsp Amchur Powder - 1 tsp Black Pepper powder - 1 tsp Green Chilly - 2 (finely chopped) Rock Salt (Sendha Namak) - 1 tsp Sugar - 1 tbsp Method: 1. Peel and chop pumpkin in bite size pieces 2. In a Kadahi heat ghee 3. Add cumin seeds and allow to splutter 4. Add green chillies and fry for few seconds 5. Add pumpkin pieces and mix and stir for a minute 6. Add rock salt and sugar and mix well 7. Cover and cook on medium flame for 5-7 minutes 8. Falahari Sweet Potato Fry Ingredients: Sweet Potato (Shakarkand) - 250 gm Rock Salt ( Sendha Namak) - 1 tsp Black Pepper Powder- 1 tsp Lemon Juice - 1 tbsp Cumin Seeds - 1 tsp Desi Ghee - 1 tbsp Almonds (Chopped) - 1 tbsp Method: 1. Wash and Boil Sweet Potatoes in Cooker for 3 whistles 2. Let them cool and then peel them 3. Cut boiled sweet potatoes into circular about 1 cm thick pieces 4.  🥣  Falahari Lauki Raita Recipe (Vrat Special Bottle Gourd Yogurt)  A light, cooling, and nutritious yogurt dish ideal for fasting days. Ingredients: Lauki (Bottle Gourd) - 300 gm Curd (Yogurt) - 300 gm Rock Salt (Sendh Namak) - 1 tsp Roasted Cumin Powder - 1 tsp Green Chillies - 2 (Finely Chopped) Method: 🥒 1. Prep the Bottle Gourd (Lauki) Wash and peel the lauki thoroughly. Grate it using a medium grater. 🔥 2. Boil the Lauki Boil the grated lauki in sufficient water for about 15 minutes until soft. Jaggery Foxnut | Gud Ka Makhana Ingredients: Foxnut (Phool makhana) - 50 gm Jaggery (Gud) - 100 gm Desi Ghee - 2 tbsp Method: 1. Cut jaggery into small pieces 2. Add 2 tbsp water in it and keep aside for 10 minutes 3. Roast makhanas in microwave for 30 seconds and then stir it 4. Repeat the process of roasting in microwave 3 times 5. Heat ghee in a pan and fry the makhanas till light brown and crispy 6. Take them out of the pan and keep aside 7. Now add the jaggery with the water in the pan 8. Keep stirring on high flame till it becomes little thick 9. To check correct thickness, put 2 drops on a spoon and then take the syrup between your index finger and thumb 10. Singhare Ki Chaat  Ingredients: Singhare (Water Chestnut) - 1 kg Cumin Seeds - 1 tsp Green Chillies - 2 (finely chopped) Rock Salt (Sendha Namak) - 1 tsp Desi Ghee - 1 tsp Lemon Juice - 1 tbsp Roasted Peanuts - 1 tbsp Method: 1. Boil Singhara in cooker for 3-4 minutes 2. Drain, cool and peel boiled singharas 3. Chop each singhara into two pieces 4. Heat ghee in a pan 5. Add cumin seeds and let them splutter 6. Falahari Vrat ki  Sukhi Arbi Ingredients: Arbi (Colocasia) - 500 gm Peanut Oil - 2 tbsp Ajwain (Carom Seeds) - 1 tsp Green Chillies - 2 (Slit lengthwise) Roasted Cumin Powder - 2 tsp Grounded Black Pepper - 1 tsp Rock Salt (Sendha Namak) - 1 tsp Lemon Juice - 1 tbsp Coriander Leaves - 1 tbsp (Finely chopped) Method: 1. Sabudana Khichdi Ingredients: Sabudana (Sago) - 200 gm Peanut - 100 gm Potato (Medium Size) - 3 (Finely chopped) Green Chilli - 4 (Finely Chopped) Cumin Seeds - 1 tsp Rock Salt (Sendha Namak) - 1 tsp Lemon Juice - 1 tbsp Desi Ghee - 2 tbsp Method: 1. Soak Sabudana in water up to 10 cm above sabudana, for 20 minutes 2. After 20 minutes drain the water completely from sabudana  3. Allow the water drained sabudana to remain as it is for 2 hours 4. Dry roast the peanuts  5. Let the roasted peanuts cool 6. Rub the roasted peanuts in between your palms and remove the cover of peanuts 7. Grind these peanuts 8. Heat Ghee in a Kadai 9.
