Veg Vermicelli Upma Ingredients : Whole wheat roasted Vermicelli - 2 cup Onion (finely chopped) - 1 cup Carrots (finely chopped) - 1/2 cup Peas (blanched) - 1/2 cup Tomato (finely chopped) - 1/2 cup Green capsicum (finely chopped) - 3/4 cup Oil - 1 tbsp Mustard seeds - 1 tsp Curry leaves - 2 sprigs Green chilli (finely chopped) - 2 Salt - 1/2 tsp Lemon juice - 1 tbsp Method : 1. Heat oil in a Kadahi 2. Add mustard seeds and let them crackle 3. Add curry leaves and stir for a while 4.  Add chopped onions, green chilli, carrot, peas and mix nicely 5. Add tomatoes and  salt and mix nicely 6. Cover and cook for 2 minutes 7. Remove cover, add capsicum and mix 8. Cover and cook till vegetables are soft. 9.  Add 4 cups of water and bring it to a boil. 10.  Once the water starts boiling, add the roasted vermicelli  11. Vegetable Rava Upma (Renal & Diabetes Diet) Ingredients : Suji / Rava / Semolina - 1 cup Capsicum (finely chopped) - 1/4 cup Fresh green peas - 1/4 cup Onions (finely chopped) - 1/2 cup Green chilly (finely chopped) - 2 Green coriander (finely chopped) - 1 tbsp Lemon juice - 1 tbsp Salt - 1/4 tsp Vegetable Oil - 2 tbsp Urad dal - 1 tsp Chana dal - 1 tsp Mustard seeds - 1 tsp Curry leaves - 1 sprig Method : 1.  Boil 4 cups of water in a pan. 2.  In another heated hard bottom pan add oil.   3. Soya Vegetable Upma Ingredients : Soya granules - 1/2 cup Sooji / Rava - 1/2 cup Carrots (chopped) - 1 cup Green peas - 1/2 cup Onion (chopped) - 1 (medium size) Tomato (chopped) - 1 (medium size) Green chillies (chopped) - 2 Ginger (grated) - 1 tbsp Coriander leaves (chopped) - 1 tbsp Coconut (grated) - 1 tbsp Chana dal - 1/2 tsp Urad dal - 1/2 tsp Lemon Juice - 2 tsp Mustard seeds - 1/2 tsp Curry leaves - 3-4 sprigs Hing (Asafoetida) - 1/4 tsp Salt - 1 tsp or as per taste Ghee - 3 tbsp Method : 🧂 Step 1: Soak the Soya Granules Soak soya granules in lukewarm salted water 🫗 for about 10–15 minutes . 🤲 Step 2: Strain and Squeeze Strain the soaked soya granules and squeeze out all excess water . 🌾 Step 3: Roast the Sooji In a separate pan, roast sooji (semolina) with 1 tbsp ghee 🧈 on medium flame until it turns golden brown . Bread Poha Ingredients: Bread Slices (Cut into cubes) - 6 Oil - 2 tbsp Mustard seeds - 1 tsp Onion (finely chopped) - 1/2 cup Green Chilli (finely chopped) - 1 tsp Ginger (finely chopped) - 1 tsp Curry leaves (chopped) - 6-7 Tomatoes (finely chopped) - 1 cup Turmeric powder - 1/4 tsp Red Chilli powder - 1/4 tsp Hing (Asafoetida) - a pinch Coriander leaves (finely chopped) - 2 tbsp Salt - 1/2 tsp or as per taste Method : 1. Heat oil in a pan 2. Add mustard seeds and let them crackle 3. Add chopped onion and saute on medium flame till they turn translucent 4. Add chopped green chilli, ginger and curry leaves 5. स्वस्थ सब्जियों भरा उपमा  सामग्री: सूजी (भुनी हुई) - १/२ कप  सरसों के दाने - १/२ छोटा चम्मच करी पत्ता - ३ डंडी प्याज (बारीक़ कटा हुआ)  - १ (मध्यम आकर) आलू  (बारीक़ कटा हुआ)  - १ (मध्यम आकर) मटर के दाने  (उबले हुए)  - १ कप गाजर    (बारीक़ कटी हुई )  - १ (मध्यम आकर) शिमला मिर्च  (बारीक़ कटी हुई )  - १ (मध्यम आकर) तेल - १ बड़ा चम्मच  नीम्बू का रस - १ बड़ा चम्मच  नमक - १ छोटा चम्मच  पिसी लाल मिर्च - १/२ छोटा चम्मच  पानी - २ कप  हरा धनिया   (बारीक़ कटा हुआ)  - १ बड़ा चम्मच विधि: मध्यम आंच पर एक बर्तन में तेल गरम करें   जब सरसों के दाने फूल जाएं तो करी पत्ता डालें  अब प्याज डालें  इसे चलाते रहें जब तक प्याज पारदर्शी न हो जाये  आलू, गाजर, शिमला मिर्च, मटर को इस भुने प्याज में डालें  सब सब्जियां अच्छे से मिलाएं और धीमी आंच पर तब तक पकाएं जब तक सब्जियां गल नहीं जाती  नमक और पिसी लाल मिर्च डालें अच्छे से मिलाए...
