Besan Toast | Bread Besan Toast Ingredients: Bread slices - 6 Besan - 1 cup Onion (finely chopped) - ¼ cup Capsicum (finely chopped) - 2 tbsp Carrot (grated) - 1 tbsp Ginger garlic paste - 1 tsp Ajwain - ¼ tsp  Hing - a pinch Turmeric powder - a pinch Red chilli powder - ½ tsp Coriander leaves (finely chopped) - 1 tbsp  Salt to taste Water as needed Oil / butter to toast Method: 1. Take your bread slices and cut them into triangles.  2. To a mixing bowl add besan, salt, ajwain, hing, turmeric powder, red chilli powder and mix 3. Now add onion, capsicum, carrot, ginger garlic paste, coriander leaves and mix 4. Add water little by little to form a slightly thick batter so that it can coat the bread. 5. Heat dosa tawa spread oil/ghee  6. Dip the bread slice into the batter coat on both sides. 7. Immediately add it to tawa. Cook on low flame, covered for 2 mins or until the top looks cooked.  8. Eggless Cashew Biscuits

Cashew Biscuits Ingredients: Maida - 1 cup Ghee / Butter - 1/2 cup Sugar - 1/2 cup Cashew powder - 1/2 cup Cashews (cut into halves) - 6-7 Milk powder - 1.5 tbsp Milk - 1-2 tbsp (if required) Method: 1. Combine ghee and butter beating until fluffy 2. Mix maida, cashew powder, milk powder to form a dough 3. If it is too dry, add a tablespoon of milk. 4.  Cover the dough and chill in the refrigerator for at least 20-30 minutes 5. Preheat your oven at 180 C and line a baking tray with parchment paper 6. Scoop small portions of dough, shape into balls, and flatten slightly on the baking sheet. Top with cashew half and press them in gently 7. Bake for 12-15 minutes, or until the edges are golden brown 8.  Let them cool on the baking sheet for 5 minutes before transferring to a plate to cool completely 9.  Store in an airtight container for up to 5 days

Spicy Watermelon Soup | मसालेदार तरबूज़ का सूप

Spicy Watermelon Soup Ingredients: Watermelon (chopped and deseeded) - 6 cups Ginger (grated) - 1 tbsp Mint (chopped) - 2 tbsp Chilli flakes - 1/2 tbsp Oilve oil - 3/4 tbsp Black salt - 1/2 tsp Lemon juice - 1 tbsp Method: 1. Puree the watermelon and the mint in a blender until thoroughly blended.  2. Sauté the ginger and the chilli flakes in a little olive oil in a pan  3. Add the watermelon puree into the pan  4. Simmer until it thickens a little bit.  5. Remove from heat and let it cool to room temperature 6. Add black salt, lemon juice and mix 7. Chill for at least 1-2 hours before serving. 8. Watermelon Sorbet Ingredients: Watermelon (cubed and frozen) - 4 cups Lime juice - 2 tbsp Honey - 2-3 tbsp Salt - a pinch Method: 1. Peel, cube and freeze 4 cups of watermelon  2. Put the frozen watermelon cubes in the blender 3. Add lime juice, honey, salt and blend until the texture becomes smooth 4. Taste and adjust the sweetness accordingly 5. Serve immediately for a soft sorbet or freeze for 1-2 hours for a firmer texture Beat the heat this summer by making the perfect watermelon sorbet at home. Watermelon-Corn Salad Ingredients: Watermelon - 2 cups (cut into small cubes, seeds removed) Sweet Corn - 1 cup (boiled) Mint Leaves - 8–10 (finely chopped, for freshness) Lemon Juice -1 tsp Black Salt and Chaat Masala - To taste Black Pepper Powder - 1 pinch (for a mild kick) Method: 1. First, place the cubed watermelon pieces and the boiled sweet corn into a large mixing bowl. 2. Now, add the finely chopped fresh mint leaves. Mint is the soul of this salad, providing an extra cooling sensation for the stomach during the summer heat. 3. Sprinkle black salt and chaat masala (to taste), a pinch of black pepper powder, and squeeze fresh lemon juice over the mixture. 4. Finally, using a spoon, gently toss all the ingredients together with a light hand to ensure the watermelon cubes remain intact while the spices are thoroughly blended. 5. This salad is best enjoyed when served chilled.
