Veg Russian Salad | Olivier Salad Ingredients: Cabbage (Finely Chopped)- 1/2 cup Potato (Chopped)- 1/2 cup Carrot (Chopped)- 1/2 cup Green Capsicum (Chopped)- 1/2 cup French beans (Chopped)- 1/4 cup Peas - 1/4 cup Sweet Corn - 1/4 cup Apple (Chopped) - 1 Cucumber (Chopped)- 1 Veg Mayonnaise - 3 tbsp Cream - 1 tbsp Sugar - 1 tsp Salt - 1 tsp Black Pepper powder - 1/2 tsp Pomegranate seeds - 2 tbsp Method: 1. To steam the vegetables, boil water in a vessel 2. Place french beans, peas, sweet corn, carrot and potato on a colander 3. Now place the colander on the vessel 4. Cover it and let the vegetables cook in steam 5. After 5 minutes stir the vegetables and again cover and cook 6. Steam the vegetables for about 15 minutes or till potato is cooked 7. Now let the steamed vegetables cool to room temperature 8. Then keep the steamed vegetables in refrigerator for 15 minutes 9. Rainbow Slaw Salad Ingredients: Honey - 1/4 cup Lime Juice - 1 tbsp Cumin Powder - 1 tbsp Salt - 1 tsp Black Pepper (Grounded) - 1/4 tsp Ginger (grated) - 2 tbsp Red Cabbage (shredded) - 2 cup Carrot (grated) - 1 cup Spring Onions - 5 Red Capsicum - 1 Yellow Capsicum - 1 Coriander leaves (chopped) - 1 cup Radish (grated) - 1 cup Lettuce (for garnishing) Peanuts (roasted) - 2 tbsp (for garnishing) Method: 1. Press grated ginger through a sieve to extract ginger juice 2. Whisk together honey, lime juice, ginger juice, cumin powder, salt, black pepper 3. Chop yellow capsicum, red capsicum, Onion greens, Onions to bite size 4. In a large bowl, combine red cabbage, carrots, onion greens, red capsicum, yellow capsicum, radish, onions 5. Kachumber Salad Ingredients: Cucumber - 1 cup (cut into thin strips) Carrot - 1 cup (cut into thin strips) Green capsicum - 1/2 cup (cut into thin strips) White Radish - 1 cup (cut into thin strips) Onion - 1 cup (thin slices) Tomato - 1 cup (cut into thin strips after removing seeds and pulp) Green Chillies - 1 tbsp (chopped) Coriander Leaves - 2 tbsp (finely chopped) Salt - 1/2 tsp Black salt - 1/4 tsp Red Chilli powder - 1/4 tsp Lemon Juice - 1 tbsp Beetroot - 1 tbsp (grated) Method: 1. Put sliced onion in cold water for 15 minutes 2. Remove onions from water 3. Mix all the ingredients (except beetroot) nicely in a large bowl 4. Serve the salad garnished with beetroot 5. The kachumber salad can be served as an accompaniment with lunch or dinner.
