Amritsari Chhole Ingredients: Chickpeas / Chhole - 1.5 cup Cinnamon stick - 1/2 inch Bay leaf - 1 Dry red chillies - 4 Black cardamom - 3 Cloves - 2 Black peppercorns - 18 Tea leaves - 1 tsp Ginger (sliced) - 1.5 inch Garlic cloves - 4 Salt - 1.5 tsp Green chilies - 4 Coriander seeds - 1.5 tbsp Cumin seeds - 1 tsp Hing - 1/4 tsp Mango powder - 1 tsp Carom seeds - 1/4 tsp Oil - 3 tbsp Onion (finely chopped) - 3 (medium size) Tomato - 2 (medium size) Ghee - 1 tbsp Coriander leaves (finely chopped) - 1 tbsp Kashmiri red chili powder - a pinch Method: 1. Soak Chole in enough water for 8 hours or overnight 2. In a cotton cloth keep cinnamon stick, bay leaf, 2 dry red chilies, 1 black cardamom, cloves, 8 black peppercorns, tea leaves 3. Aloo Masala Poori Ingredients: Whole wheat flour - 2 cups Sooji - 2 cups Potato (boiled) - 4 (medium size) Red chili flakes - 2 tsp Kasoori Methi - 1 tsp Turmeric powder - 1 tsp Roasted cumin powder - 1 tsp Ajwain - 1 tsp Salt as per taste Coriander leaves (finely chopped) - 1 cup Oil - 4 tsp Oil for frying  Method: 1. In a mixing bowl add 2 cup sooji and 2 cup very hot water 2. Mix it nicely using a spoon  3. Cover it and keep it aside for 10 minutes 4. Curd Rice Ingredients: Rice - 1/2 cup Curd - 1 cup Milk - 1/2 cup Carrot (grated) - 2 tbsp Cucumber (grated) - 2 tbsp Coriander leaves (finely chopped) - 1 tbsp Oil - 1 tbsp Mustard seeds - 1/2 tsp Cumin seeds - 1/2 tsp Chana dal - 3/4 tsp Urad dal - 3/4 tsp Dry red chilli (broken) - 1 Curry leaves - 1 sprig Hing - a pinch Ginger (finely chopped) - 1/2 tsp Green chilli (finely chopped) - 1 Cashews (roasted and chopped) - 6-8  Salt as per taste Method: 1. Stuffed Karela with Aloo Ingredients: Karela (Bitter Giurd) - 250 gm Potatoes (boiled) - 2 Turmeric powder - 1/2 tsp Red chili powder - 1/2 tsp Garam masala powder - 1 tsp Chat masala powder - 1 tsp Salt - 1 tsp Oil - 2 tbsp Method: 1. Wash the karelas and peel them slightly 2. Make a vertical slit on each karela. 3. Scoop out and discard seeds and pulp to fill the potato masala 4. Sprinkle and rub 1/2 tsp salt and 1/4 tsp turmeric powder to remove bitterness 5. Let it rest for 20-25 minutes 6. In a mixing bowl mash the boiled potatoes 7. Beetroot Pulao Ingredients : Basmati rice - 1 cup Oil - 2 tbsp Green cardamoms - 4 Cinnamon - 1 inch Cloves - 3 Black peppercorns - 6 Mustard seeds - 1/2 tsp Cumin seeds - 1/2 tsp Onion (chopped) - 1/2 cup Curry leaves - 7-8 Beetroot (grated) - 1 cup Ginger garlic paste - 1 tsp Green chillies (slit) - 2 Coriander leaves - 1/4 cup Turmeric powder - 1/4 tsp Red chilli powder - 1/4 tsp Coriander powder - 1/2 tsp Salt - 1 tsp or as per taste Coriander leaves for garnish Method : 1. Palak Matar Paneer Bhurji Ingredients : Spinach leaves (finely chopped) - 250 gm Green peas - 1/2 cup Full cream Milk - 2.5 cup Desi Ghee - 2 tsp Cumin seeds - 1 tsp Lemon - 1/2 Onions (finely chopped) - 2 (medium size) Green chillies (chopped) - 1 tbsp Salt - 1 tsp or as per taste Method : 1.  Heat milk in a deep pan. 2.  Squeeze one half lemon into the milk and stir to mix.  3.  Let the milk come to a boil and milk curdles nicely. Keep stirring in between 4. When the milk curdles, s train the milk to get the paneer.  5. 🥣 Healthy Bathua Soup Recipe Ingredients : Bathua (Chenopodium) - 500 gm Cumin Seeds - 1/2 tsp Salt - 1 tsp or as per taste Ginger (chopped) - 2 tbsp Green Chillies (chopped) - 1/2 tbsp Lemon Juice - 1 tbsp Desi ghee - 1.5 tbsp Cream - 1 tbsp and for garnishing (optional) 👩‍🍳 Instructions : 🧼 1. Clean the Bathua Leaves Pluck the leaves, removing stems, sticks, and grass. Wash thoroughly with clean water 2–3 times to ensure all dirt is removed. 🔥 2. Kachumber Salad Ingredients: Cucumber - 1 cup (cut into thin strips) Carrot - 1 cup (cut into thin strips) Green capsicum - 1/2 cup (cut into thin strips) White Radish - 1 cup (cut into thin strips) Onion - 1 cup (thin slices) Tomato - 1 cup (cut into thin strips after removing seeds and pulp) Green Chillies - 1 tbsp (chopped) Coriander Leaves - 2 tbsp (finely chopped) Salt - 1/2 tsp Black salt - 1/4 tsp Red Chilli powder - 1/4 tsp Lemon Juice - 1 tbsp Beetroot - 1 tbsp (grated) Method: 1.
