🧆 Kamal Kakdi Ke Kabab  Ingredients: Kamal Kaki (Lotus stem) - 500 grams Chana Dal - 1 cup Black cardamom (seeds only) - 2 Ginger (grated) - 2 tsp Garlic (peeled and chopped) - 1 tsp (optional) Salt - 1 tsp or as per taste Green chillies (finely chopped) - 1 tsp or as per taste Onion (finely chopped) - 2 tbsp Coriander leaves (finely chopped) - 2 tbsp Oil to fry - 2 tbsp Onion rings to garnish Lemon wedges to garnish Method: 🥬 Step 1: Prep the Lotus Stem Peel, wash, and slice the kamal kakdi (lotus stem) into thin pieces. 🍲 Step 2: Cook the Base Mixture In a deep pan, add the sliced lotus stem, chana dal , cardamom seeds, garlic, ginger, and 1 cup water . Bring it to a boil, then reduce the heat, cover, and cook until everything becomes soft and the water is fully absorbed. ❄️ Step 3: Cool and Grind Remove from heat and let the mixture cool down completely. Kala Chana Shami Kebab Ingredients: Black Chana - 3/4 cup Bread Slices - 5 Curd - 2 tbsp Green Coriander - 3 tbsp (finely chopped) Green Chilly -2 (Finely chopped) Garlic - 4 cloves (crushed) Coriander Powder - 1/2 tsp Garam Masala Powder - 1/2 tsp Turmeric Powder - 1/4 tsp Amchur Powder - 1/2 tsp Red Chilli Powder - 1/2 tsp Salt - 1 tsp Oil for frying Method: 1. Wash and Soak the chana overnight or 5-6 hours 2. Transfer chana with 1/2 tsp salt and 3 cup water in cooker, and when pressure starts building, lower the heat and cook it for 1/2 an hour. 3. Grind the bread in grinder and prepare bread crumbs 4. Keep the bread crumbs aside 5. Grind the boiled black chana, garlic, green chilly, curd and prepare a paste 6. Corn Kababs / Fingers Ingredients: Corn : 250 gm Green Chillies : 4 Ginger : 1" piece Lemon juice - 1 tbsp Gram Flour - 4 tbsp Coriander leaves (Chopped) - 1/2 cup Salt - 1 tsp Oil for frying Method: 1. Grind the Corn coarsely without adding water 2. Grind Chillies and ginger together 3. Add the chiili-ginger paste to ground corn and mix well 4. Add Gram flour to this mixture and mix well 5. Add coriander leaves and mix well 6. Add lemon juice and salt and mix well 7. Now take small portions at a time and give them a  kabab shape 8. Heat Oil and deep fry these kababs till light brown (Half fried) 9. Let these kababs cool 10. Cut these kababs to fingers  11.
