Soya Bathua Sabji | सोया बथुआ सब्जी

Soya Bathua Sabji Ingredients :   Bathua - 250 gms Soya chunks - 1 cup Onion (finely chopped) - 1 cup Tomato (finely chopped) - 1 cup Green chillies (finely chopped) - 1 tsp Ginger (grated) - 1 tsp Mustard oil - 2 tbsp Cumin seeds - 1/2 tsp Coriander powder - 2 tsp Turmeric powder - 1/2 tsp Red chili powder - 1/2 tsp Garam masala powder - 1/2 tsp Salt - 1 tsp or as per taste Curd - 1/2 cup Method : 1. Remove the bathua leaves from the stem and discard the stem 2. Wash the bathua leaves 2 times nicely with water 3. Boil 2 cup water in a pan and add 1/2 tsp salt, soya chunks to it. 4. Cook for about 5 to 6 minutes or until the soya chunks become spongy and enlarged.  5. Next, run cold water over the cooked soya chunks to rinse them well.  6. Corn Pulav (Renal & Diabetic Diet) Ingredients : Basmati Rice (Boiled) – 2 Cup Corn kernels (Boiled) – 3/4 Cup Onions (finely chopped) – 1/2 cup   Tomato Puree – 1/2 cup  Green chilly (chopped) - 1  Ginger – Garlic Paste – 1 tsp  Cumin Seeds – ½ tsp  Coriander leaves – a few – for garnish (Optional)  Oil – 1  tbsp Salt – 1/2 tsp    Method: 1. Heat oil in a pan. 2.  Add Cumin Seeds, Onion, green chilli and fry for some time. 3. Add ginger- garlic paste and fry for some time. 4. Add boiled Corn, Tomato Puree and salt and cook well. 5. When the puree is nicely cooked, mix in rice to the corn masala 6. Garnish with Coriander Leaves. Vegetable Rava Upma (Renal & Diabetes Diet) Ingredients : Suji / Rava / Semolina - 1 cup Capsicum (finely chopped) - 1/4 cup Fresh green peas - 1/4 cup Onions (finely chopped) - 1/2 cup Green chilly (finely chopped) - 2 Green coriander (finely chopped) - 1 tbsp Lemon juice - 1 tbsp Salt - 1/4 tsp Vegetable Oil - 2 tbsp Urad dal - 1 tsp Chana dal - 1 tsp Mustard seeds - 1 tsp Curry leaves - 1 sprig Method : 1.  Boil 4 cups of water in a pan. 2.  In another heated hard bottom pan add oil.   3. Lauki  Amritsari  Badi Curry Ingredients : Lauki (Bottlegourd) - 500 gm Amritsari Urad Badi (Wadi) - 1 Tomato puree - 1/2 cup Salt - 1 tsp or as per taste Turmeric powder - 1/2 tsp Coriander powder - 1 tsp Cumin seeds - 1/2 tsp Hing - 1/4 tsp Oil - 2 tbsp Method : 1. Wash and peel the Bottle gourd  2. Chop it into about 1 inch big pieces and keep them in a vessel filled with water 3. Crush Amritsari Badi into very small pieces 4. Heat 1/2 tbsp Oil in a pan and roast the crushed badi on low heat 5. Take it out in a plate and keep it aside 6. Heat 1.5 tbsp oil in a cooker on medium heat 7. Cold Cucumber Soup Ingredients : Cucumbers - 500 gm Ginger (chopped) - 2 inch piece Green Chillies (chopped) - 2 Salt - 1 tsp or as per taste Buttermilk - 2 cups Black pepper powder - 1/2 tsp Lemon Juice - 1 tbsp Method : 1. Peel the cucumbers and cut into chunks 2. In a blender add cucumber chunks 3. Add ginger, green chillies, salt, butter milk and blend to a fine puree 4. Add black pepper powder, lemon juice and blend again 5. Pour into 2 soup bowls 6. Chill in a refrigerator for at least 30 minutes 7.
