Capsicum Raita | शिमला मिर्च रायता

Capsicum  Raita  Ingredients: Curd / Yogurt - 1 cup Oil - 2 tsp Mustard Seeds - 1/2 tsp Curry Leaves (Kari Patta) (Chopped) - 1 tsp Onion (Finely chopped) - 1/4 cup Green Chilly (Finely chopped) - 1 Capsicum (Finely chopped) - 1/4 cup Red Chilli Powder - 1/4 tsp Roasted cumin powder -1/4 tsp Salt  - 3/4 tsp Method: 1. Whisk the curd till smooth and keep aside 2. Heat oil in a pan 3. Add mustard seeds  and let them crackle 4. Add onion, curry leaves , green chilly  5. On a medium flame saute onions for 1 or 2 minutes 6. Add capsicum and mix it nicely  7. Saute on low flame for 6-7 minutes, till the capsicum are half done 8. Switch off the flame and add red chilli powder,Cumin powder, salt and mix well. 9. Falahari Pomegranate   Raita | Anardana Raita Ingredients: Curd / Yogurt - 1 cup Pomegranate arils (Anardana) - 3/4 cup Roasted cumin powder - 1/2 tsp Black pepper powder - 1/4 tsp Sugar - 1 tbsp Rock Salt (Sendha Namak) / Black Salt   - 3/4 tsp Coriander leaves for garnish Method 1. Whisk curd in a bowl 2. Add sugar and stir well till sugar is dissolved 3. Add black pepper   powder, cumin powder and rock salt / black salt and mix well 4. Add the pomegranate arils and reserve a few for garnishing 5. Mix well 6. Chill the pomegranate raita in refrigerator 7. Pour the pomegranate raita in serving bowls and garnish with pomegranate arils and coriander leaves. Mint  Raita | Pudina Raita Ingredients: Curd / Yogurt - 1 cup Fresh mint leaves - 1/2 cup Red Chilli Powder - 1/4 tsp Roasted Cumin Powder - 1/2 tsp Chat Masala powder - 1/4 tsp Black Salt   - 1/2 tsp Salt - 1/2 tsp Method : 1. Whisk curd in a bowl 2.  Wash mint leaves nicely  3.  Grind mint leaves to a fine paste using 2-3 tbsp water  4.  Add mint paste along with its juices to the curd  5.  Stir very well 6.  Spice the curd with salt, black salt, red chilli powder, cumin powder and chat masala powder 7.  Mix everything very well 8. Garnish the raita with a sprig of mint leaves 9. Serve raita with baked or tandoori starters.  10. It can also be served as a side dish in any meal. 11. Beetroot Carrot   Raita Ingredients: Curd / Yogurt -2 cups Beetroot (peeled and grated) - 1/2 cup Carrot (peeled and grated) -  1/2 cup  Onion (Finely chopped) - 1/4 cup Capsicum (Finely chopped) - 1/4 cup Roasted cumin powder -1/2   tsp Coriander leaves (Chopped) - 1 tbsp Black salt - 1/2 tsp Salt   - 1/2 tsp Method: 1. Whisk the curd till smooth 2. Add beetroot, carrot, onion, capsicum and mix well 3. Add salt, black salt, cumin powder and mix well 4. Keep it in refrigerator to cool it 5. Falahari Sweet Mango Raita | Aam Ka Raita  Ingredients: Curd / Yogurt -2 cups Sugar - 2  tbsp Ripe Mangoes (diced) - 1 cup Green Cardamom Powder - 1 tsp Saffron (Kesar) - 1/4 tsp Almonds (chopped) - 1 tbsp Method: 1. Add sugar and beat the curd till smooth 2. Add mangoes (reserve a few for garnish), cardamom powder and saffron and mix well 3. Chill the mango raita before serving 4. Garnish with chopped mangoes, chopped almonds 5. Carrot  Raita | Gajar Raita Ingredients: Curd / Yogurt - 1 cup Carrot (peeled and grated) - 1/2 cup Coriander leaves (finely chopped)   - 1 tbsp Mint leaves (finely chopped)   - 1 tbsp Green Chilly (finely chopped) - 1 Roasted Cumin Powder - 1/2 tsp Black Salt   - 1/2 tsp Desi ghee - 1/2 tsp Hing (Asafoetida) - a pinch Method : 1. Whisk curd in a bowl 2. Add the grated carrots (reserve 1 tsp for garnish) 3. Add the chopped green chilly, chopped mint leaves and mix well 4. Add cumin powder, black salt and mix well 5. Kachumber Raita Ingredients: Curd (Yogurt) - 2 cups Potato (Boiled and chopped) - 1 Cucumber (Finely chopped) - 1 Tomatoes (Finely chopped) - 4 tbsp Onion (Finely chopped) - 4 tbsp Carrot (grated) - 2 tbsp Capsicum (Finely chopped) - 2 tbsp Green Chilli (Finely chopped) - 1 tsp Red Chilli powder - 1/2 tsp Roasted Cumin powder - 1/2 tsp Mint leaves (Finely chopped) - 1 tbsp Coriander Leaves (Finely chopped) - 1 tbsp Sugar powdered (Boora) - 1/2 tsp Salt - 1 tsp Method: 1.  🥣  Falahari Lauki Raita Recipe (Vrat Special Bottle Gourd Yogurt)  A light, cooling, and nutritious yogurt dish ideal for fasting days. Ingredients: Lauki (Bottle Gourd) - 300 gm Curd (Yogurt) - 300 gm Rock Salt (Sendh Namak) - 1 tsp Roasted Cumin Powder - 1 tsp Green Chillies - 2 (Finely Chopped) Method: 🥒 1. Prep the Bottle Gourd (Lauki) Wash and peel the lauki thoroughly. Grate it using a medium grater. 🔥 2. Boil the Lauki Boil the grated lauki in sufficient water for about 15 minutes until soft. Drain it using a sieve and let it cool completely. 💧 3. Remove Excess Moisture Once the boiled lauki is cool, gently squeeze out the excess water using your hands. 🥛 4. Bathua Raita Ingredients: Bathua - 200 gm Curd - 400gm (2 cup) Salt - 1/4 tsp Black Salt - 1/4 tsp Green Chilly - 1 (finely chopped) Hing - 1/4 tsp Cumin Seeds - 1/2 tsp Method: 1. Clean bathua by plucking leaves and removing sticks and grass 2. Wash it with clean water 2 times 3. Put 1 cup water in bathua and let it boil, covered with a lid 4. Cook it for 5-6 minutes 5. Dry roast cumin seeds and hing 6. Coarsely grind cumin seeds and hing 7. Remove bathua from fire and strain away the excess water 8. Let the boiled bathua cool 9. Grind bathua coarsely in mixie 10. Beat curd to make it smooth 11. Add ground bathua, salt, black salt, green chilly in curd and mix well 12. Sprinkle ground cumin seeds and hing 13.
