Kathal Dry Sabzi (Less Oil & Without Onion) 🧾  Ingredients: Unripe Kathal (Jackfruit) - 500 gm Besan (Gram flour) - 2 tbsp Hing (Asafoetida) - 1/4 tsp Turmeric Powder - 1/2 tsp Coriander Powder - 2 tsp Red Chilli Powder - 1/2 tsp Amchur powder - 1 tsp Mustard Oil - 2 tbsp Salt - 1 tsp Method: 🌱🔪 1. Prep the Jackfruit Cut jackfruit (kathal) into medium-sized pieces. 👉 Tip: Apply oil on your hands to avoid stickiness. 🍲⏱️ 2. Pressure Cook the Jackfruit Boil the kathal pieces in a pressure cooker for 2 whistles . 🧺❄️ 3. Drain and Set Aside Drain the boiled jackfruit and keep it aside to cool. 🛢️🌶️ 4. Start Tempering Heat oil in a pan. Add a pinch of hing (asafoetida) and let it cook for a few seconds. 🌾🥄 5. Add Besan (Gram Flour) Add besan and stir well to combine with the oil. 🔥👀 6. Crispy Karela Fry without Onion Ingredients: Bitter Gourd(Karela) - 250 gm Turmeric powder - 1/2 tsp Red Chilli Powder - 1/2 tsp Roasted Cumin powder - 1/2 tsp Coriander powder - 1 tsp Fennel (Saunf) Powder - 1 tsp Garam Masala powder - 1/4 tsp Hing (Asafoetida) - 1/4 tsp Amchur Powder - 1 tsp Gram Flour (Besan) - 1 tbsp Mustard Oil - 2 tbsp Salt - 1/2 tsp Method: 1. Lightly scrap the karelas 2. Wash them and cut them in thin rings. 3. If there are hard seeds in the karelas, remove them 4. Heat Oil in a pan 5. Add the karela slices and saute on medium flame till the slices become lightly browned. 6. Keep stirring in between 7. Now add turmeric powder, red chilli powder, cumin powder, coriander powder, fennel powder, garam masala powder, hing, amchur powder, salt and mix well 8. Guava Chutney Ingredients: Guava - 250 gm Green Coriander Leaves - 1/4 cup Salt - 1/2 tsp Black Salt - 1/2 tsp Roasted Cumin Powder - 1 tsp Black Pepper Powder - 1/4 tsp Green Chilli - 2 Ginger - 1" piece Lemon Juice - 1 tbsp Method: 1. Wash and pat dry guavas 2. Cut Guavas into long pieces 3. Remove the seeds 4. Cut each piece to 2-3 parts 5. Chop the green chillies 6. Chop the ginger 7. Put guava, green coriander, green chilli and ginger in the grinder 8. Add salt, black salt, cumin powder and black pepper powder to this 9. Now put lemon juice in it. 10. Ginger Soup Ingredients: Ginger - 100 gm Lemon Juice - 2 tbsp Salt - 1 tsp Cumin Seeds - 1/2 tsp Hing (Asafoetida) - 1/4 tsp Desi Ghee - 1 tsp Method: 1. Peel and wash Ginger 2. Chop ginger into small pieces  3. Grind these ginger pieces to a smooth paste using 1/2 cup water 4. Sieve this ginger paste 5. Use 1 cup water to sieve the ginger finely 6. Add 2  cup water to the ginger water  7. Heat ghee in a pan and add cumin seeds and hing 8. When it splutters add ginger water in it and let it boil 9. Add salt and lemon juice 10. Boil it for 4-5 minutes 11. Serve it piping hot in a winter evening for warmth  12. Falahari Vrat ki  Sukhi Arbi Ingredients: Arbi (Colocasia) - 500 gm Peanut Oil - 2 tbsp Ajwain (Carom Seeds) - 1 tsp Green Chillies - 2 (Slit lengthwise) Roasted Cumin Powder - 2 tsp Grounded Black Pepper - 1 tsp Rock Salt (Sendha Namak) - 1 tsp Lemon Juice - 1 tbsp Coriander Leaves - 1 tbsp (Finely chopped) Method: 1. Wash and parboil arbi so that it is still hard 2. Peel it when cold 3. Cut slices lengthwise 4. Heat oil in a pan 5. Add ajwain and slit green chillies 6. When they start to splutter, add arbi slices and mix 7. Cook uncovered on low flame till done 8. When the arbi is properly cooked, add cumin powder, rock salt, pepper powder and mix well 9. Vrat Wale Rasedar Aloo Ingredients: Potato - 500 gms (Boiled) Kuttu Atta (Buckwheat Flour) - 1 tbsp Sendha Namak ( Rock Salt) - 1 tsp Green Chillies - 2 (Finely Chopped) Cumin Seeds - 1/2 tsp Amchur Powder - 1 tsp Desi Ghee - 1 tbsp Method: 1. Break the boiled potatoes in uneven pieces 2. Heat Ghee in a pan and add cumin seeds 3. After the cumin seeds splutter, add green chillies and fry for 30 seconds 4. Peel, wash and grate the Lauki 2. Wash and peel the karelas 2. Don't throw the peels 3. Cut the peels into small pieces 4. Slit the karelas from one side 5. Put 1 tsp salt on peels and mix and keep aside for 1 hour 6.
