🥬  Bathua Ki Bhujia Recipe – Nutritious Winter Stir-Fry Ingredients: Bathua - 500 gm Ginger - 1 tsp (Finely chopped) Garlic - 1/2 tsp (Finely chopped) Green Chilly - 2 (Finely chopped) Dry Red Chilly - 2 Salt - 1/4 tsp Hing (Asafoetida)- 1/4 tsp Cumin Seeds - 1/2 tsp Mustard Oil - 2 tbsp Method:   🌿 Step 1: Clean the Bathua Leaves Separate the bathua leaves from stems. Remove any grass or tough stalks . 💧 Step 2: Wash Thoroughly Rinse the leaves in clean water twice to remove dirt and impurities. Drain the excess water. 🔥 Step 3: Boil the Bathua In a pan, add the cleaned bathua with 2 cups of water . Cover with a lid and let it boil for 5–6 minutes until softened. 🥣 Step 4: Drain the Boiled Bathua Turn off the heat and strain out excess water using a colander. Bathua Ki Dal | Sagpaita  Ingredients: Black Urad Dal - 1 cup Bathua (Chenopodium) - 250 gm Salt - 1 tsp Desi Ghee - 2 tbsp Hing (Asafoetida) - 1/4 tsp Cumin Seeds - 1/2 tsp Tomato - 2 (Chopped) Green Chilli - 2 (Chopped) Ginger - 1" piece (Chopped) Red Chilli Powder - 1/4 tsp Coriander Powder - 1/2 tsp Whole Red Chillies - 2 Method: 1. Wash Dal nicely and soak in water for 1 hour 2. Clean bathua by plucking leaves and removing sticks and grass 3. Wash it with water 3 times 4. Finely chop washed bathua 5. In a cooker add dal, chopped bathua, 3 cup water, salt and let it cook 6. After 1 whistle lower the heat and let it cook for about 5 minutes 7.  Heat 1 tbsp Ghee in a Kadahi 8. Bathua Ki Poori Ingredients: Bathua (Chenopodium)- 250gm Wheat Flour (Atta) - 3 cup Salt - 1 tbsp Carom Seeds (Ajwain) - 1 tsp Red Chilli Powder - 1/2 tsp Garam Masala Powder - 1/2 tsp Oil for frying Method: 1. Clean bathua by plucking leaves and removing sticks and grass 2. Wash it with clean water 3 times 3. Put 1 cup water in bathua and let it boil, covered with a lid 4. Cook it for 5-6 minutes 5. Remove bathua from fire and strain away the excess water 6. Let the boiled bathua cool 7. Grind bathua coarsely in mixie 8. Mix salt, carom seeds, red chilli powder and garam masala   in wheat flour 9. Add ground bathua in wheat flour and knead a dough 10. Bathua Raita Ingredients: Bathua - 200 gm Curd - 400gm (2 cup) Salt - 1/4 tsp Black Salt - 1/4 tsp Green Chilly - 1 (finely chopped) Hing - 1/4 tsp Cumin Seeds - 1/2 tsp Method: 1. Clean bathua by plucking leaves and removing sticks and grass 2. Wash it with clean water 2 times 3. Put 1 cup water in bathua and let it boil, covered with a lid 4. Cook it for 5-6 minutes 5. Dry roast cumin seeds and hing 6. Coarsely grind cumin seeds and hing 7. Remove bathua from fire and strain away the excess water 8. Let the boiled bathua cool 9. Grind bathua coarsely in mixie 10. Beat curd to make it smooth 11. Add ground bathua, salt, black salt, green chilly in curd and mix well 12. Sprinkle ground cumin seeds and hing 13. दाल  हरी  भरी  सामग्री: उड़द धुली दाल - १ कप पालक - ५० ग्राम  बथुआ - ५० ग्राम मूली के पत्ते - ३० ग्राम मेथी का साग - ३० ग्राम प्याज (बारीक कटा)- १ लहसुन  (बारीक कटा)- ५ कलियाँ टमाटर (बारीक कटा)- २ हरी धनिया  (बारीक कटा)- १/२ कप हरी मिर्च  (बारीक कटी)- २ हल्दी पाउडर  - १ छोटा चम्मच नमक - १ छोटा चम्मच जीरा - १ छोटा चम्मच  हींग - १/४ छोटा चम्मच  देसी घी - १ बड़ा चम्मच पनीर के टुकड़े (सजाने के लिए) विधि: १. पालक, बथुआ, मूली के पत्ते, मेथी का साग धो कर बारीक काट लें  २. उड़द की दाल धो कर कुक्कर  में  हल्दी, नमक, १ गिलास पानी  के साथ  डालें  ३.  सभी साग को भी उसी में डाल कर कुक्कर बंद कर दें और गैस पर रखें ४. कुक्कर में दो सीटी आने के बाद गैस बंद कर दें और कुक्कर को अपने आप ठंडा होने दें ५. फ्राइंग पैन में घी गरम करें और जीरा और हींग डालें ६. अब प्याज और लहसुन डाल कर गुलाबी होने तक भूनें ७. भुन जाने पर उसमे टमाटर, हरी मिर्च, हरी धनिया डालें ८. जब टमाटर गल जाए, तो इस मिश...
