Falahari Sweet Potato and Fruit Chaat   🧾  Ingredients: Sweet Potato (Shakarkand) - 250 gm Pomegranate - 1 Apple - 1 Banana - 2 Black Pepper - 1 tsp Rock Salt ( Sendha Namak) - 1 tsp Lemon Juice - 1 tbsp Method: 🧼🍠 1. Boil the Sweet Potatoes Wash the sweet potatoes thoroughly and pressure cook them for 3 whistles until soft. ❄️🔪 2. Cool & Peel Let the boiled sweet potatoes cool completely. Mango Chunda | Mango Sweet Pickle | Mango Kuchla Ingredients: Raw Mango - 2 kg Salt - 4 tbsp Hing ( Asafoetida) - 1/2 tsp Big Cardamom - 7 Cloves - 16 Cumin seeds -  2 tsp Black Pepper - 1 tsp Cinnamon - 2" piece Red Chilli Powder - 1 tbsp Sugar - 1 kg Method: 1. Peel the mangoes 2. Grate the mangoes 3. Add Hing and salt to the grated mangoes 4. Mix it with a clean and dry spoon and cover it with a muslin cloth 5. Keep it in sun for 2 days (Do mix it once a day with a clean and dry spoon) 6. Grind Big Cardamom, cloves, cumin seeds, black pepper and cinnamon to a coarse powder 7. Kadahi Paneer Ingredients: Paneer (Cottage Cheese) - 250 gms (Cut into long fingers) Capsicums - 2 (Cut into long fingers) Dry Red Chillies - 2 Coriander Seeds - 2 tsp Ginger -  ½  " piece (chopped finely) + 1" inch piece (finely shredded) Garlic flakes - 10 (crushed) Green chilly - 1 (chopped) Tomatoes - 2 (chopped) Fenugreek Seeds - A Pinch Green Coriander - 1 tbsp (chopped) Salt -  ½  tsp  Oil - 4 tbsp Method: 1. Green Mango Panna Ingredients: Raw Mango - 1/2 kg Cloves - 4 Black Pepper- 1/2 tsp Hing (Asafoetida) - 1/4 tsp Cumin Seeds - 2 tsp Black Salt - 2 tsp White Salt - 1 tsp Mint Leaves - 1+ 1/2 cup Boora (Powdered Sugar) - Optional Method: 1. Peel the mangoes and b oil them in sufficient amount of water 2. Dry Roast cloves, black pepper, Cumin seeds and hing 3. Wash mint leaves and grind them with the roasted masala 4. Let the mangoes cool along with the water 5. Separate the pulp of the mangoes from the seeds 6. Grind this pulp with the water 7. Add the mint paste in it 8. Sieve this mixture 9. Add black salt and white salt and mix well 10. Add sufficient amount of water and keep it in Refrigerator to cool 11. When you want to serve it, pour it in a glass and add 2-3 cubes of ice and serve it. Kairi Mango Pickle  Ingredients: Raw Unripe Mango- 3 kg Salt - 200 gm Hing (Asafoetida) - 10 gm Red Chilli Powder - 50 gm Sugar - 400 gm Saunf (Fennel Seeds) - 50 gms (Powder) Method: 1. Wash and wipe the mangoes 2. Peel the mangoes and cut them 3. Add Salt, Hing, Red Chilli Powder, Sugar, Saunf and mix well. 4. Fill the mangoes in Glass Jar or Bottle  and cover it with a muslin cloth 5. Keep this Pickle in Sun for 15 days and keep mixing it with a clean and dry spoon once a day. 6. 🍋 Sweet Lemon Pickle (Nimbu Ka Meetha Achar) Recipe A traditional Indian pickle that combines the tang of lemons with the warmth of spices and sweetness of sugar — perfect with parathas, rice, or as a flavorful side. Ingredients: Lemon - 2 kg Salt - 200 gm Ginger (Grated) - 100 gm Sugar - 1 kg Red Chilli Powder - 4 tsp Hing (Asafoetida) -  1 / 2  tsp Method: 💧 Step 1: Soak the Lemons Day 1: Boil enough water to fully submerge the lemons. Paneer Makhani Ingredients: Paneer - 250 gms (  ½  "  thick triangular pieces) Oil - 4 tbsp Kasoori Methi - 1 tsp Tomato - 400 gms (chopped) Ginger -  ½  "  piece (chopped) Tej Patta (Bay leaf) - 1 Badi Elaichi (Big Cardamom) - 2 (Skinned and crushed) Red Chilli powder -  ½    tsp Salt - 1 tsp Sugar - 1 tsp Garam Masala -  ½    tsp Cream or Well beaten Malai - 75gms (5 tbsp) Green Coriander - 1 tbsp (chopped) Method: 1. हरी धनिया की चटनी  सामग्री: हरी धनिया - १०० ग्राम  हरी मिर्च - ४  नीबू - १ जीरा (पिसा हुआ) - १ छोटा चम्मच नमक - स्वादानुसार विधि : १. हरे धनिये और हरी मिर्च को साफ कर धो लें और मोटा मोटा काट लें.  २. आधी छोटी कटोरी पानी डाल कर बारीक पीस लें ३. पिसा हुआ जीरा , नीबू का रस और नमक मिला दें  ४. लीजिये हरे धनिये की चटनी तैयार है. यह चटनी फ्रिज में रख कर ३ -४  दिन तक खाई जा सकती है.
