Moong Sprouts Dosa Ingredients : Whole Moong Dal : 1.5 cups Green Chilli - 1 Ginger (grated) - 1 tsp Amchur powder - 1 tsp Turmeric powder - 1/4 tsp Rice flour - 2 tbsp Salt - 1/4 tsp Oil for cooking Dosa Method : 1. Soak moong dal in enough water for 10-12 hours 2. Remove moong dal from water and place them on a clean cotton wet cloth 3. Wrap it in this cloth, keep it in a bowl and cover it  4. Store it for 12-14 hours in a dark place 5. If the cloth has dried sprinkle some water on the cloth 6. Wrap it and store for 10-12 hours again  7. The beans should be sprouted to about 1.5" to 2" in length. If not then repeat steps 5 and 6. 8. Add moong sprouts, green chilli, ginger, amchur powder, turmeric powder, rice flour in a blender 9. Whey Water Recipes Basic Ingredients : Full fat milk - 1 litre Lemon juice - 3 tbsp Method to prepare Whey water : 1. Take milk in a pan and let it boil on high flame 2. When the milk comes to boit turn the flame to medium 3. Add lemon juice and stir it till the milk is curdled and turned into whey water and chhena 4. Remove from fire 5. Strain the Mixture 6. The water that we have got is whey water and the solid is Chhena, that can be used to make paneer or any other chhena recipe 7. Veg Vermicelli Upma Ingredients : Whole wheat roasted Vermicelli - 2 cup Onion (finely chopped) - 1 cup Carrots (finely chopped) - 1/2 cup Peas (blanched) - 1/2 cup Tomato (finely chopped) - 1/2 cup Green capsicum (finely chopped) - 3/4 cup Oil - 1 tbsp Mustard seeds - 1 tsp Curry leaves - 2 sprigs Green chilli (finely chopped) - 2 Salt - 1/2 tsp Lemon juice - 1 tbsp Method : 1. Heat oil in a Kadahi 2. Add mustard seeds and let them crackle 3. Add curry leaves and stir for a while 4.  Add chopped onions, green chilli, carrot, peas and mix nicely 5. Cold Cucumber Soup Ingredients : Cucumbers - 500 gm Ginger (chopped) - 2 inch piece Green Chillies (chopped) - 2 Salt - 1 tsp or as per taste Buttermilk - 2 cups Black pepper powder - 1/2 tsp Lemon Juice - 1 tbsp Method : 1. Peel the cucumbers and cut into chunks 2. In a blender add cucumber chunks 3. Add ginger, green chillies, salt, butter milk and blend to a fine puree 4. Add black pepper powder, lemon juice and blend again 5. Pour into 2 soup bowls 6. Chill in a refrigerator for at least 30 minutes 7. Kala Chana Pulao Ingredients : Kala Chana (Black Chickpeas) - 3/4 cup Basmati Rice - 1.5 cup Green Chilli (Slit) - 2 Ginger (chopped) - 1 tsp Onion (sliced) - 1 cup Tomato (finely chopped) - 3/4 cup Red Chilli powder - 1/2 tsp Garam Masala powder - 1 tsp Salt - 1.5 tsp or as per taste  Desi Ghee - 2 tbsp Bay leaf (tej patta) - 1 Cinnamon stick - 1 (1" piece) Black Cardamom - 3 Cloves - 6 Cumin Seeds - 1 tsp Curd - 3/4 cup Sugar - 1 pinch Fried Onion for garnishing (optional) Mint leaves for garnishing (optional) Method : 1. Amla Mirch ki Achari Subzi Ingredients: Indian Gooseberry (Amla) - 250 gm Green Chilly - 50 gm Mustard Oil - 2 tbsp Turmeric Powder - 1/2 tsp Red Chilli Powder - 1/2 tsp Coriander powder - 1 tsp Jaggery / Sugar - 1 tsp Salt - 1 tsp Cumin seeds -  1/2 tsp Fenugreek seeds (Methidana) -  1/2 tsp Fennel seeds (saunf) - 1 tsp Hing (Asafoetida) - 1/4 tsp Pickle masala from mango or chilli pickle (optional) - 2 tsp Method: 1. Ginger Soup Ingredients: Ginger - 100 gm Lemon Juice - 2 tbsp Salt - 1 tsp Cumin Seeds - 1/2 tsp Hing (Asafoetida) - 1/4 tsp Desi Ghee - 1 tsp Method: 1. Peel and wash Ginger 2. Chop ginger into small pieces  3. Grind these ginger pieces to a smooth paste using 1/2 cup water 4. Sieve this ginger paste 5. Use 1 cup water to sieve the ginger finely 6. Add 2  cup water to the ginger water  7. Heat ghee in a pan and add cumin seeds and hing 8. When it splutters add ginger water in it and let it boil 9. Add salt and lemon juice 10.
