Rava Uttapam: Low Potassium Recipe (Renal Diet)

Rava Uttapam Ingredients: Rava / Sooji / Semolina - 1 cup Dahi / Yogurt - 1/2 cup Green chillies (finely chopped) - 1/2 tsp Ginger (grated) - 1 tsp  Red bell pepper (finely chopped) - 2 tbsp Yellow bell pepper (finely chopped) - 2 tbsp Green bell pepper (finely chopped) - 2 tbsp Salt to taste Oil Method: 1. Over medium heat, dry roast 1 cup Rava or Semolina for 3 to 5 minutes till it just becomes aromatic but does not change colour. 2. Transfer to a bowl and let it rest. 3. After the Rava cools, add 1/2 cup dahi and salt (or Amchur for a low sodium, low potassium diet), and mix well. Ensure there are no lumps. 4. Gradually, add 1/2 cup water and mix well to form a thick batter. 5. Set the batter aside for 20 to 25 minutes to rest. I leave it for up to an hour. 6. Just before you are ready to make Uttapam, add 1/4 cup water and mix well. The batter should slide off a spoon. 7. Add green chilies, ginger and mix 8. Corn Pulav (Renal & Diabetic Diet) Ingredients : Basmati Rice (Boiled) – 2 Cup Corn kernels (Boiled) – 3/4 Cup Onions (finely chopped) – 1/2 cup   Tomato Puree – 1/2 cup  Green chilly (chopped) - 1  Ginger – Garlic Paste – 1 tsp  Cumin Seeds – ½ tsp  Coriander leaves – a few – for garnish (Optional)  Oil – 1  tbsp Salt – 1/2 tsp    Method: 1. Heat oil in a pan. 2.  Add Cumin Seeds, Onion, green chilli and fry for some time. 3. Add ginger- garlic paste and fry for some time. 4. Add boiled Corn, Tomato Puree and salt and cook well. 5. When the puree is nicely cooked, mix in rice to the corn masala 6. Garnish with Coriander Leaves. Veg Vermicelli Upma Ingredients : Whole wheat roasted Vermicelli - 2 cup Onion (finely chopped) - 1 cup Carrots (finely chopped) - 1/2 cup Peas (blanched) - 1/2 cup Tomato (finely chopped) - 1/2 cup Green capsicum (finely chopped) - 3/4 cup Oil - 1 tbsp Mustard seeds - 1 tsp Curry leaves - 2 sprigs Green chilli (finely chopped) - 2 Salt - 1/2 tsp Lemon juice - 1 tbsp Method : 1. Heat oil in a Kadahi 2. Add mustard seeds and let them crackle 3. Add curry leaves and stir for a while 4.  Add chopped onions, green chilli, carrot, peas and mix nicely 5. Add tomatoes and  salt and mix nicely 6. Cover and cook for 2 minutes 7. Remove cover, add capsicum and mix 8. Cover and cook till vegetables are soft. 9.  Add 4 cups of water and bring it to a boil. 10.  Once the water starts boiling, add the roasted vermicelli  11.
