Moong Dal Khasta Kachori Ingredients : Maida - 2 cup Oil - 1/2 cup Salt - 1 tsp Moong dal - 1/2 cup (soaked for 2 hours) Green chilly (finely chopped) - 2  Coriander powder - 1 tsp Fennel powder - 1 tsp Red chilly powder - 1/4 tsp Hing (Asafoetida) - 1/4 tsp Ginger powder - 1/2 tsp (or 1 inch piece grated) Garam masala powder - 1/4 tsp Cumin seeds - 1/2 tsp Oil for frying kachoris Method : 1. Take maida in a big bowl or plate, add 1/2 tsp salt and mix well. 2. Add 1/4 cup oil and mix well 3. Now add little water at a time and knead soft dough same as required for making chapatti. Don't knead the dough too much.  4. Cover the dough and keep it aside for 15-20 minutes to set. 5. Coarsely ground the soaked moong dal.  6. Heat  1/4 cup oil in a pan  7. Matar Kachori Ingredients : All purpose flour (Maida) - 1 cup Oil - 3 tbsp Salt - 1 tsp Green peas - 1 cup Red chillli powder - 1/4 tsp Coriander powder - 1/2 tsp Amchur powder - 1/2 tsp Green Chilli (finely chopped) - 1/2 tsp Ginger (Finely chopped) - 1/2 tsp Cumin seeds - 1/2 tsp Gram flour - 1 tbsp Oil for frying Method : 1.  Add 1/2 tsp salt to all purpose flour and mix well 2. Add 2 tbsp Oil and mix and rub nicely in the flour 3. Make a tight dough by adding little water at a time 4. Wrap the dough in a clean dry cloth for 15 minutes 5. Boil peas in a sauce pan 6. When nicely soft, strain them with a strainer 7. When little cool, mash them with a masher 8. Heat 1 tbsp oil in a pan 9. Add cumin seeds and let them change the colour 10. Khasta Kachori Ingredients: Urad Dal (Split and dehusked black gram lentils) - 1 cup Ajwain (Carom Seeds) - 1 tsp All Purpose Flour (Maida) - 500 gm Oil - 1 cup Hing (asafoetida) - 1/2 tsp Salt - 2 tsp Coriander Powder - 1 tbsp Saunf (Fennel seed) Powder - 1 tbsp Red Chilli Powder - 1/2 tsp Baking Soda - a pinch Oil for frying Method: 1. Wash and Soak Urad Dal for 5- 6 hours 2. Remove Dal from water and grind coarsely using minimum water 3. Heat 3 tbsp oil and add hing 4. Add ground Dal and cook till it looses its moisture and becomes crispy and golden brown 5. Add 1 tsp salt, red chilli powder, coriander powder, saunf powder, baking soda and mix well 6. Aloo Sabji (For Poori /Kachori) Ingredients: Potato - 500 gm (Boiled) Coriander Seeds - 2 tsp Cumin seeds - 2 tsp Ajwain ( Carom Seeds) - 1/2 tsp Turmeric Powder - 1/2 tsp Amchur Powder - 1/2 tsp Red Chilly Powder - 1/2 tsp Garam Masala Powder - 1/2 tsp Hing ( Asafoetida)  - a pinch Ginger Powder - 1/2 tsp Oil - 2 tbsp Whole Red Chillies - 2 (Broken in 2 pieces) Tomato - 1 (Grated) Kasoori Methi - 1 tsp Coriander Leaves - 1 tbsp Method: 1. Dry roast coriander seeds, 1 tsp cumin seeds and ajwain in a pan 2. Coarsely Crush the roasted masalas 3.
