Pan Grilled Tofu Salad Ingredients: Tofu - 200 gm Broccoli florets - 1/2 cup Corn kernels - 1/2 cup Red bell pepper - 1/2 cup Yellow bell pepper - 1/2 cup Tomato (deseeded cubed) - 1/2 cup Garlic (minced) - 2-3 cloves Onion (cubed) - 1 (medium size) Lemon juice - 1 tbsp Jaggery powder - 1 tsp Oregano - 1 tsp Red chilli flakes - 2 tsp Salt - 1 tsp or as per taste Oil - 4 tsp Turmeric powder - 1/4 tsp Method: 1. Add broccoli florets, corn kernels in a colander and place it on a pan of boiling water and steam for 5-7 minutes 2. In a small bowl mix juice of lemon, jaggery powder, 1/2 tsp oregano, 1/2 tsp red chilli powder, pinch of salt for dressing 3. Cut Tofu lengthwise 4. In a bowl add 2 tsp oil, 1 tsp red chili powder, turmeric powder, 1/4 tsp salt 5. Coat tofu pieces nicely in this marination of spices and oil 6. Heat a pan 7. Corn Pulav (Renal & Diabetic Diet) Ingredients : Basmati Rice (Boiled) – 2 Cup Corn kernels (Boiled) – 3/4 Cup Onions (finely chopped) – 1/2 cup   Tomato Puree – 1/2 cup  Green chilly (chopped) - 1  Ginger – Garlic Paste – 1 tsp  Cumin Seeds – ½ tsp  Coriander leaves – a few – for garnish (Optional)  Oil – 1  tbsp Salt – 1/2 tsp    Method: 1. Heat oil in a pan. 2.  Add Cumin Seeds, Onion, green chilli and fry for some time. 3. Add ginger- garlic paste and fry for some time. 4. Add boiled Corn, Tomato Puree and salt and cook well. 5. When the puree is nicely cooked, mix in rice to the corn masala 6. Garnish with Coriander Leaves. Broccoli Corn Stir Fry | ब्रोक्कोली कॉर्न फ्राई

Broccoli Corn Stir Fry Ingredients : Broccoli florets - 1 cup Carrots (finely chopped) - 1/2 cup Corn (boiled) - 1/2 cup Garlic cloves (chopped) - 1 tbsp Cumin Seeds - 1/2 tsp Salt - 1 tsp Oil - 1 tbsp Red Chilli powder - 1/4 tsp Garam Masala powdet - 1/4 tsp Method : 1. Heat 3 to 4 cups of water in a pot and add 1/2 tsp salt, broccoli florets in it for 2 minutes 2. Rinse the florets under running water and drain in a colander 3. Heat Oil in a pan and fry cumin seeds and garlic 4. Add carrots, corn, broccoli and saute for a minute 5. Cover and cook till veggies become soft 6. Add 1/2 tsp salt, red chilli powder, garam masala powder and fry for 2-3 minutes 7.
