Vegan No Sugar Mango Ice Cream

Vegan No Sugar Mango Ice Cream   Ingredients: Makhana - 1 cup Dates - 6-7 Cashew nuts - 1/2 cup Raisins - 1/3 cup Mangoes (chopped and frozen) - 3 (medium size)   Method: 1. Soak cashews, makhana, raisins, dates in 1 cup hot water for 1 hour 2. Remove seeds from dates and add it to the blender 3. Add the remaining soaked dry fruits in the blender 4. Blend it to make a paste 5. Add chopped frozen mango pieces of 2 mangoes and blend it to get a smooth puree 6. Transfer 1/2 quantity in a container that can be kept in a fridge 7. Spread 1/2 mango pieces over it  8. Add the remaining mixture over the mango pieces 9. Spread 1/2 mango pieces on the top 10. Cover and freeze for 8 hours 11. Ice cream is nicely set.  12. Mango Kulfi (without condensed milk / khoya) | मैंगो कुल्फी | आम की कुल्फी (बिना कंडेंस्ड मिल्क / खोया )

Mango Kulfi  Ingredients: Full fat milk - 1 litre Fresh Mango pulp - 1/2 cup Fresh mango chunks - 1/2 cup Kesar strands - 1/4 tsp Cornflour - 1 tbsp Sugar - 5 tbsp Cardamom powder - 1/4 tsp Method : 1. Combine the saffron strands and 1 tbsp warm milk in a bowl, mix well and keep aside 2. Combine the cornflour and 2 tbsp of water in another bowl, mix well and keep aside 3. Heat milk in a deep pan or kadahi 4. Boil it on medium flame for 6 minutes by stirring occassionally 5. Add the cornflour water mixture, sugar and mix well 6. Cook on low flame for 20-25 minutes , while stirring occassionally and scraping the sides 7. Switch off the flame and allow the mixture to cool completely 8. Once cooled, add mango pulp, saffron milk, cardamom powder and mix well using a whisk 9.  Add the mango chunks and mix gently 10.Pour the mixture into kulfi moulds and freeze for 10 hours 11. Mango Ice Cream with Milk Powder Ingredients : Milk - 2 cups Mangoes - 2 (for 3/4 cup puree) Sugar - 1/2 cup Cornflour - 2 tbsp Milk powder - 2 tbsp Method : 1. Peel the skin from mangoes, then chop it roughly. 2. Transfer chopped mangoes to a mixer jar and blend it to a smooth puree 3. In a small mixing bowl take milk powder, then add cornflour and mix well with a spoon. 4. Add 1/4 cup milk and whisk it well so that there are no lumps. 5. Keep it aside 6. In a sauce pan, bring remaining milk to boil 7. Now add sugar and mix well until sugar completely dissolves 8. Now add milk powder mixture and keep cooking until it becomes slightly thick and coats the laddle 9. Switch off the flame and set aside to cool. 10. Once completely cool, add mango puree to it and mix well 11. Transfer to a freezer proof box and freeze for at least 4 hours. 12. Then beat it again and freeze it.
