Falahari Pomegranate   Raita | Anardana Raita Ingredients: Curd / Yogurt - 1 cup Pomegranate arils (Anardana) - 3/4 cup Roasted cumin powder - 1/2 tsp Black pepper powder - 1/4 tsp Sugar - 1 tbsp Rock Salt (Sendha Namak) / Black Salt   - 3/4 tsp Coriander leaves for garnish Method 1. Whisk curd in a bowl 2. Add sugar and stir well till sugar is dissolved 3. Add black pepper   powder, cumin powder and rock salt / black salt and mix well 4. Add the pomegranate arils and reserve a few for garnishing 5. Mix well 6. Chill the pomegranate raita in refrigerator 7. Pour the pomegranate raita in serving bowls and garnish with pomegranate arils and coriander leaves. Mint  Raita | Pudina Raita Ingredients: Curd / Yogurt - 1 cup Fresh mint leaves - 1/2 cup Red Chilli Powder - 1/4 tsp Roasted Cumin Powder - 1/2 tsp Chat Masala powder - 1/4 tsp Black Salt   - 1/2 tsp Salt - 1/2 tsp Method : 1. Whisk curd in a bowl 2.  Wash mint leaves nicely  3.  Grind mint leaves to a fine paste using 2-3 tbsp water  4.  Add mint paste along with its juices to the curd  5.  Stir very well 6.  Spice the curd with salt, black salt, red chilli powder, cumin powder and chat masala powder 7.  Mix everything very well 8. Garnish the raita with a sprig of mint leaves 9. Serve raita with baked or tandoori starters.  10. It can also be served as a side dish in any meal. 11. Carrot  Raita | Gajar Raita Ingredients: Curd / Yogurt - 1 cup Carrot (peeled and grated) - 1/2 cup Coriander leaves (finely chopped)   - 1 tbsp Mint leaves (finely chopped)   - 1 tbsp Green Chilly (finely chopped) - 1 Roasted Cumin Powder - 1/2 tsp Black Salt   - 1/2 tsp Desi ghee - 1/2 tsp Hing (Asafoetida) - a pinch Method : 1. Whisk curd in a bowl 2. Add the grated carrots (reserve 1 tsp for garnish) 3. Add the chopped green chilly, chopped mint leaves and mix well 4. Add cumin powder, black salt and mix well 5. In a small pan heat ghee 6. Add hing and fry hing for few seconds 7. Pour the tempering on raita and mix well 8. Chill the carrot raita in refrigerator 9. Kachumber Raita Ingredients: Curd (Yogurt) - 2 cups Potato (Boiled and chopped) - 1 Cucumber (Finely chopped) - 1 Tomatoes (Finely chopped) - 4 tbsp Onion (Finely chopped) - 4 tbsp Carrot (grated) - 2 tbsp Capsicum (Finely chopped) - 2 tbsp Green Chilli (Finely chopped) - 1 tsp Red Chilli powder - 1/2 tsp Roasted Cumin powder - 1/2 tsp Mint leaves (Finely chopped) - 1 tbsp Coriander Leaves (Finely chopped) - 1 tbsp Sugar powdered (Boora) - 1/2 tsp Salt - 1 tsp Method: 1. In a bowl take well whisked curd 2. Add roasted cumin powder, powdered sugar, red chilli powder and mix well 3. Add potato, cucumber, tomatoes, onion, carrot, capsicum, green chilli, mint leaves 4. Bathua Raita Ingredients: Bathua - 200 gm Curd - 400gm (2 cup) Salt - 1/4 tsp Black Salt - 1/4 tsp Green Chilly - 1 (finely chopped) Hing - 1/4 tsp Cumin Seeds - 1/2 tsp Method: 1. Clean bathua by plucking leaves and removing sticks and grass 2. Wash it with clean water 2 times 3. Put 1 cup water in bathua and let it boil, covered with a lid 4. Cook it for 5-6 minutes 5. Dry roast cumin seeds and hing 6. Coarsely grind cumin seeds and hing 7. Remove bathua from fire and strain away the excess water 8. Let the boiled bathua cool 9. Grind bathua coarsely in mixie 10. Beat curd to make it smooth 11. Add ground bathua, salt, black salt, green chilly in curd and mix well 12. Sprinkle ground cumin seeds and hing 13. Vrat ka Aloo Raita Ingredients: Small Potatoes - 250 gm (Boiled) Curd - 250 gm Rock Salt - 1 tsp Black Pepper Powder- 1/2 tsp Roasted Cumin Powder - 1 tsp Green Chillies - 2 (Finely chopped) Cumin seeds - 1/2 tsp Desi Ghee - 1 tsp Method: 1. Peel the boiled potatoes 2. Cut the potatoes into circular pieces 3. Whip the curd to make it smooth 4. Add rock salt, cumin powder, pepper powder in curd and mix well 5. Now add the potato pieces in the curd and mix with gentle hand 6. Heat ghee in a tadka pan 7. Add cumin seeds in it and let them sizzle 8. Now add green chillies in it and fry till they become little crispy 9. Pour the tadka on the raita 10. Mughlai Paneer Ingredients: Cottage Cheese (Paneer) - 200 gm(Cut into cubes) Onion - 3 Cashew-nuts - 10 Poppy Seeds - 1 tbsp Curd - 1/4 cup Tomato - 2 Milk - 1/4 cup Oil - 3 tbsp Salt - 1 tsp Red Chilli powder - 3/4 tsp Garam Masala - 1/4 tsp Oil for deep frying Method: 1. Heat Oil and deep fry paneer to golden brown colour and keep aside. 2. Soak Poppy seeds in 3 tbsp water for 15 minutes 3. Slice Onions finely 4.
