Veg Yoghurt Sandwich (3 Styles - Tawa, Grilled, Cold)

Yoghurt Sandwich Ingredients: Bread Slices - 8 Hung Yoghurt - 1/2 cup Salt - 1/2 tsp Garlic cloves - 2 (minced) Black pepper crushed - 1/2 tsp Red chili flakes - 1/2 tsp Green chilly (chopped) - 1 Coriander (finely chopped) - 4 tbsp Butter - 3 tbsp Virgin Olive oil - 2 tsp Carrots (grated) - 1/2 cup Onion (finely chopped) - 1/2 cup Green capsicum (finely chopped) - 1/2 cup Tomato (deseeded finely chopped) - 1/2 cup Method: 1. In a mixing bowl add onion, tomato, capsicum, carrot, green coriander 2. Add garlic, green chili and mix nicely 3. Add hung curd, salt, black pepper, red chili flakes, olive oil 4. Mix all the ingredients nicely TAWA YOGHURT SANDWICH 5. Butter 2 bread slices from both sides  6. Toast them on griddle / Tawa till they turn golden from both sides 7. Methi Bites Ingredients: Maida (All purpose flour) - 2 cup Oil - 1/4 cup Salt - 1 tsp Ajwain - 1/2 tsp Kasoori Methi - 2 tbsp Oil for frying Method : 1. Take maida in a big bowl or plate, add 1 tsp salt, 1/2 tsp ajawain and mix well. 2. Add 2 tbsp ksoori methi and mix 3. Add 1/4 cup oil and mix well 4. Now add little water at a time and knead a bit soft dough.  5. Cover the dough and keep it aside for 15-20 minutes to set. 6. Take a orange size portion from the dough and press between your palms to give smoothness 7. Roll out little thick circle from it 8. Using fork make marks on the circle so that the bites don't puff while frying 9. Using knife cut squares or triangles with size of your choice, from the circle.   10. Heat oil in a kadahi to fry 11. Arbi Ke Patte Ke Patode Ingredients : Arbi (Colocassia) leaves - 250 gms Besan - 2 cup Ginger (chopped) - 1 inch Green chillies (chopped) - 4 Amchur powder - 1 tsp Red chilli powder - 1/2 tsp Turmeric powder - 1/2 tsp Coriander powder - 1 tbsp Salt - 1 tsp Garam masala powder - 1/4 tsp Hing - 1/4 tsp Ajwain - 1/4 tsp Chat masala for sprinkling Method : 1. Wash all Arbi leaves thoroughly. Pat them dry using a kitchen towel 2. Cut the thick stems of leaves from the back of leaves using knife carefully so that the leaves don't break 3. Makke Ki Idli Ingredients : Maize Flour (Makki ka atta) - 1 cup Curd (whisked) - 1 cup Oil - 2-3 tbsp Green coriander (finely chopped) - 1-2 tbsp Kari Patta - 10-12 Chan dal - 1 tsp Urad dal - 1 tsp Green chillies (finely chopped) - 2 Ginger (grated) - 1 tbsp Mustard seeds - 1 tsp Eno fruit salt - 3/4 tsp Salt - 1 tsp Method : 1. Aata Namak Pare Ingredients: Wheat Flour (Aata)- 2 cup Refined Oil - 6 tbsp (1/2 cup) Carom Seeds (Ajwain) - 1 tsp Salt - 3/4 tsp Oil for frying Method: 1. Take wheat flour in a big plate. Add salt, carom seeds and mix nicely 2.  Add 6 tbsp oil in the wheat flour and mix nicely 3. Knead a hard dough of the wheat flour using little water at a time. 4. Shankarpali Ingredients: All purpose flour (Maida) - 1.5 cup Semolina (Sooji / Rava) - 1/2 cup Powdered Sugar (Boora) - 1/2 cup Salt -  a pinch Desi Ghee - 2 tbsp Warm Milk - 3-4 tbsp Ghee / Oil for frying Method: 1. Sieve the flour with salt 2. Sieve the sugar on this flour 3. Add semolina in it and mix well 4. Melt the ghee, add to the flour mixture 5. Til Bajra Tikki Ingredients: Bajra Aata  (Millet Flour)- 1 cup Til (Sesame seeds) - 2 tbsp Gud (Jaggery) - (less than 1/4 cup) Oil - 2 tbsp Oil for frying Method: 1. Add jaggery to 1/4 cup water and heat it till the jaggery dissolves 2. Keep the jaggery syrup aside 3. In a plate add bajra aata, sesame seeds and 2 tbsp oil. 4. Mix them all well 5.
