Kamal Kakdi Aloo Sabji – Traditional Punjabi Recipe with a Twist!

Punjabi Style Kamal Kakdi - Aloo Sabji  🧾  Ingredients: Lotus Stem (Kamal kakdi) - 250 gm Potatoes (peeled and cubed) - 2 (medium size) Onion (grated) - 2 (medium size) Tomato (pureed) - 2 (large) Mustard oil - 1 tbsp Ginger-garlic paste - 1 tsp  Tumeric powder - 1 tsp Red chili powder - 1 tsp Coriander powder - 1 tbsp Amchoor powder - 1/2 tsp  Cumin seeds - 1 tsp Cloves - 2 Cinnanom stick - 1 inch Garam masala - 1/2 tsp Salt - 1 tsp or to taste Mustard oil for deep frying (can use normal oil too) Coriander leaves for garnish Method: 🔪🥔 1. Prep the Lotus Stem Wash the lotus stem (kamal kakdi) thoroughly to remove all mud. Peel and slice into rounds about 1/4 inch thick . 🍳🔥 2. Stuffed Karela with Aloo Ingredients: Karela (Bitter Giurd) - 250 gm Potatoes (boiled) - 2 Turmeric powder - 1/2 tsp Red chili powder - 1/2 tsp Garam masala powder - 1 tsp Chat masala powder - 1 tsp Salt - 1 tsp Oil - 2 tbsp Method: 1. Wash the karelas and peel them slightly 2. Make a vertical slit on each karela. 3. Scoop out and discard seeds and pulp to fill the potato masala 4. Sprinkle and rub 1/2 tsp salt and 1/4 tsp turmeric powder to remove bitterness 5. Let it rest for 20-25 minutes 6. In a mixing bowl mash the boiled potatoes 7. Yoghurt Sandwich Ingredients: Bread Slices - 8 Hung Yoghurt - 1/2 cup Salt - 1/2 tsp Garlic cloves - 2 (minced) Black pepper crushed - 1/2 tsp Red chili flakes - 1/2 tsp Green chilly (chopped) - 1 Coriander (finely chopped) - 4 tbsp Butter - 3 tbsp Virgin Olive oil - 2 tsp Carrots (grated) - 1/2 cup Onion (finely chopped) - 1/2 cup Green capsicum (finely chopped) - 1/2 cup Tomato (deseeded finely chopped) - 1/2 cup Method: 1. In a mixing bowl add onion, tomato, capsicum, carrot, green coriander 2. Add garlic, green chili and mix nicely 3. Add hung curd, salt, black pepper, red chili flakes, olive oil 4. Palak Bhurji Ingredients: Spinach / Palak (chopped) - 1/2 kg Garlic (finely chopped) - 1 tbsp Ginger (grated) - 1 tbsp Green chilies (finely chopped) - 1 tsp Onion (thinly sliced) - 1 cup Mustard oil - 1 tbsp Cumin seeds - 1 tsp Whole dry red chilies - 3 Salt - 1/2 tsp or as per taste Coriander powder - 1 tbsp Amchur powder - 1 tsp Method: 1. Heat oil in a kadahi 2. Add cumin seeds, dry red chilies, garlic 3. Cook till garlic is slightly brown 4. Add grated ginger, green chilies, onion and cook on medium heat 5. Cook till onions acquire slight color 6. Add chopped spinach / palak 7. Add salt, coriander powder, amchur powder and mix 8. Cover and simmer for 4-5 minutes 9. Open and cook on medium flame for 1-2 minutes to concentrate flavors 10. Make sure the bhurji does not get completely dry 11. Serve with Dal, Roti and have a nutritious meal

Chilled Tomato Gazpacho Soup Ingredients : Ripe tomatoes - 1 kg Cucumber (peeled, chopped) - 1 Green Capsicum (chopped) - 100 gm Red Capsicum (chopped) - 100 gm Red Onion (chopped) - 1 Garlic cloves (peeled, crushed) - 2 Mint (chopped) - 1 tbsp White bread slice - 2 Salt - 1 tsp or as per taste Cumin powder - 1/4 tsp Lemon Juice - 1 tbsp Olive Oil - 4 tbsp Method : 1. Keep about 1 liter water to boil in a vessel 2. Wash the tomatoes 3. Make cross slits at the bottom of each tomato 4. Put the tomatoes in boiling water for 30 seconds 5. Take ice cold water in a large bowl 6. Switch off the flame after 30 seconds 7. Immediately take out the tomatoes and add in ice water 8. Leave them in ice water for a minute 9. Rava Kesari Ingredients : Semolina (Sooji) - 1/2 cup Desi Ghee - 4 tbsp Saffron strands - 8-10 Milk - 2 cups Sugar - 1 cup Turmeric powder - a pinch Pistachios (chopped) - 1/2 tbsp Method : 1.  Add saffron strands to 2 tbsp warm water and dissolve  2.  In a pan heat ghee and add semolina.  3.  Cook on low flame for 5-6 minutes till its aromatic and light brown in colour. 4. Add milk (room temperature) and kesar water to the roasted semolina and mix on low flame 5. Add sugar gradually on a low flame. Shankarpali Ingredients: All purpose flour (Maida) - 1.5 cup Semolina (Sooji / Rava) - 1/2 cup Powdered Sugar (Boora) - 1/2 cup Salt -  a pinch Desi Ghee - 2 tbsp Warm Milk - 3-4 tbsp Ghee / Oil for frying Method: 1. Sieve the flour with salt 2. Sieve the sugar on this flour 3. Add semolina in it and mix well 4. Melt the ghee, add to the flour mixture 5. Rub the ghee in the flour mixture and make bread crumbs like consistency 6. Add warm milk in intervals and knead to a tight dough. Milk quantity can be adjusted according to the quality of flour and semolina. 7. Cover with a muslin cloth and keep aside for 20-25 minutes 8. Divide the dough into two equal parts. Jaggery Foxnut | Gud Ka Makhana Ingredients: Foxnut (Phool makhana) - 50 gm Jaggery (Gud) - 100 gm Desi Ghee - 2 tbsp Method: 1. Cut jaggery into small pieces 2. Add 2 tbsp water in it and keep aside for 10 minutes 3. Roast makhanas in microwave for 30 seconds and then stir it 4. Repeat the process of roasting in microwave 3 times 5. Heat ghee in a pan and fry the makhanas till light brown and crispy 6. Take them out of the pan and keep aside 7. Now add the jaggery with the water in the pan 8. Keep stirring on high flame till it becomes little thick 9. To check correct thickness, put 2 drops on a spoon and then take the syrup between your index finger and thumb 10. Bathua Raita Ingredients: Bathua - 200 gm Curd - 400gm (2 cup) Salt - 1/4 tsp Black Salt - 1/4 tsp Green Chilly - 1 (finely chopped) Hing - 1/4 tsp Cumin Seeds - 1/2 tsp Method: 1. Clean bathua by plucking leaves and removing sticks and grass 2. Wash it with clean water 2 times 3. Put 1 cup water in bathua and let it boil, covered with a lid 4. Cook it for 5-6 minutes 5. Ginger Soup Ingredients: Ginger - 100 gm Lemon Juice - 2 tbsp Salt - 1 tsp Cumin Seeds - 1/2 tsp Hing (Asafoetida) - 1/4 tsp Desi Ghee - 1 tsp Method: 1. Peel and wash Ginger 2. Chop ginger into small pieces  3. Grind these ginger pieces to a smooth paste using 1/2 cup water 4. Sieve this ginger paste 5. Use 1 cup water to sieve the ginger finely 6.
