पालक भुर्जी | Palak Bhurji | Scrambled Spinach

Palak Bhurji



Ingredients:

Spinach / Palak (chopped) - 1/2 kg
Garlic (finely chopped) - 1 tbsp
Ginger (grated) - 1 tbsp
Green chilies (finely chopped) - 1 tsp
Onion (thinly sliced) - 1 cup
Mustard oil - 1 tbsp
Cumin seeds - 1 tsp
Whole dry red chilies - 3
Salt - 1/2 tsp or as per taste
Coriander powder - 1 tbsp
Amchur powder - 1 tsp

Method:

1. Heat oil in a kadahi
2. Add cumin seeds, dry red chilies, garlic
3. Cook till garlic is slightly brown
4. Add grated ginger, green chilies, onion and cook on medium heat
5. Cook till onions acquire slight color
6. Add chopped spinach / palak
7. Add salt, coriander powder, amchur powder and mix
8. Cover and simmer for 4-5 minutes
9. Open and cook on medium flame for 1-2 minutes to concentrate flavors
10. Make sure the bhurji does not get completely dry
11. Serve with Dal, Roti and have a nutritious meal
