Badam Ka Halwa | Almond Halwa | बादाम हलवा

Badam Ka Halwa Ingredients : Almonds - 1.5 cups Desi Ghee - 1/2 cup + 2 tbsp Sooji (Semolina) - 3 tbsp Saffron - a large pinch Milk - 1 cup Sugar - 1.25 cups or as per taste Method: 1. Wash and soak the almonds overnight or for 5-6 hours 2. Peel the almonds 3. Dry the almonds using a kitchen cloth or kitchen paper 4. Make a coarse mixture of these almonds in a mixer (leave about 8 almonds aside for garnishing) 5. Heat 1/2 cup ghee in a pan 6. Add sooji and roast it till it becomes light golden and fragrant 7. Add the almond mixture and mix well 8. Roast till the mixture turns light golden and fragrant 9. Add 1 cup water and mix well 10. Add saffron and mix 11. Add milk, mix and cook till the mixture thickens 12. Add sugar, mix and cook till the sugar melts and the mixture thickens, stirring occasionally 13. Moong Dal Halwa | मूंग दाल हलवा

Moong Dal Halwa Ingredients : Moong dal - 1 cup Desi ghee - 1 cup Sooji (Semolina) - 1 tbsp Besan (Gram Flour) - 1 tbsp Sugar - 1 cup Water - 1 cup Green Cardamom powder - 1/2 tsp Pistachios, Almonds, Cashew Nuts - 2 tbsp each (chopped) Method : 1. Soak moong dal for at least 4 hours 2. Take out moong dal from water and grind it without using water 3. Heat ghee in a kadahi 4. Add sooji, besan and slowly mix this and roast this until it turns brown 5. N ow add ground moong dal and cook on low flame or else there may become knots (guthliyan) in the halwa 6. Ghee appearing to be too much will be absorbed by the Moong dal  7. Keep cooking on slow flame 8. By the time it is roasting prepare sugar syrup 9.   A dd water in another pan and add sugar in it 10. Poppy Seeds Halwa | खसखस का हलवा | पोस्ते का हलवा

Poppy Seeds Halwa  Ingredients: Poppy seeds (Khaskhas) - 1 cup Dried Dates - 8 Dry Coconut (Gola Nariyal) - 100 gm Almonds - 20 Sugar - 1 cup Desi Ghee - 3 tbsp Milk - 2 cup Green Cardamom Powder - 1 tsp Almond slivers - 1 tbsp Method: 1. Cut dry coconut to small pieces and soak in water for 2 hours 2. Soak almonds, dates and poppy seeds in water separately for 2 hours 3. After 2 hours remove skin from almonds 4. Deseed the dates 5. Grind Poppy seeds, coconut (removed from water), almonds and dates to a smooth paste 6. Heat ghee in a Non stick Kadhai and  Add the Poppy seeds paste  7. Cook and keep stirring till it becomes aromatic and changes its colour  8. Turn the heat to low, add sugar and cardamom powder 9.  Gradually add the milk and mix well 10.
