Rava Uttapam: Low Potassium Recipe (Renal Diet)

Rava Uttapam Ingredients: Rava / Sooji / Semolina - 1 cup Dahi / Yogurt - 1/2 cup Green chillies (finely chopped) - 1/2 tsp Ginger (grated) - 1 tsp  Red bell pepper (finely chopped) - 2 tbsp Yellow bell pepper (finely chopped) - 2 tbsp Green bell pepper (finely chopped) - 2 tbsp Salt to taste Oil Method: 1. Over medium heat, dry roast 1 cup Rava or Semolina for 3 to 5 minutes till it just becomes aromatic but does not change colour. 2. Transfer to a bowl and let it rest. 3. After the Rava cools, add 1/2 cup dahi and salt (or Amchur for a low sodium, low potassium diet), and mix well. Ensure there are no lumps. 4. Gradually, add 1/2 cup water and mix well to form a thick batter. 5. Set the batter aside for 20 to 25 minutes to rest. I leave it for up to an hour. 6. Moong Sprouts Dosa Ingredients : Whole Moong Dal : 1.5 cups Green Chilli - 1 Ginger (grated) - 1 tsp Amchur powder - 1 tsp Turmeric powder - 1/4 tsp Rice flour - 2 tbsp Salt - 1/4 tsp Oil for cooking Dosa Method : 1. Soak moong dal in enough water for 10-12 hours 2. Remove moong dal from water and place them on a clean cotton wet cloth 3. Wrap it in this cloth, keep it in a bowl and cover it  4. Store it for 12-14 hours in a dark place 5. If the cloth has dried sprinkle some water on the cloth 6. Wrap it and store for 10-12 hours again  7. The beans should be sprouted to about 1.5" to 2" in length. If not then repeat steps 5 and 6. 8. Add moong sprouts, green chilli, ginger, amchur powder, turmeric powder, rice flour in a blender 9. Cabbage Rice (Renal Diet) Ingredients : Rice (boiled) – 2 cups  Cabbage (chopped) – 1 cup Carrot (grated) – 2 tbsp Capsicum (chopped) – 2 tbsp Onion (chopped) – 1/4 cup Coriander Leaves (chopped) – 1 tbsp Green Chilly (chopped) – ½ tsp Mustard seeds – ½ tsp Cumin Seeds – 1 tsp Chana Dal – 1 tbsp Curry Leaves – 1 sprig Garam Masala powder – ½ tsp Chilly Powder – ½ tsp Turmeric Powder – ½ tsp Oil – 3 tsp Salt - 1/4 tsp Method : 1. Heat Oil in a pan. 2. Temper with mustard seeds, jeera, chana dal, curry leaves.  3. Saute and let Splutter. 4. Add Onion, Green Chilly. Saute. 5. Add Carrot, Capsicum, Saute and cook. 6. Corn Pulav (Renal & Diabetic Diet) Ingredients : Basmati Rice (Boiled) – 2 Cup Corn kernels (Boiled) – 3/4 Cup Onions (finely chopped) – 1/2 cup   Tomato Puree – 1/2 cup  Green chilly (chopped) - 1  Ginger – Garlic Paste – 1 tsp  Cumin Seeds – ½ tsp  Coriander leaves – a few – for garnish (Optional)  Oil – 1  tbsp Salt – 1/2 tsp    Method: 1. Heat oil in a pan. 2.  Add Cumin Seeds, Onion, green chilli and fry for some time. 3. Add ginger- garlic paste and fry for some time. 4. Add boiled Corn, Tomato Puree and salt and cook well. 5. When the puree is nicely cooked, mix in rice to the corn masala 6. Garnish with Coriander Leaves. Veg Vermicelli Upma Ingredients : Whole wheat roasted Vermicelli - 2 cup Onion (finely chopped) - 1 cup Carrots (finely chopped) - 1/2 cup Peas (blanched) - 1/2 cup Tomato (finely chopped) - 1/2 cup Green capsicum (finely chopped) - 3/4 cup Oil - 1 tbsp Mustard seeds - 1 tsp Curry leaves - 2 sprigs Green chilli (finely chopped) - 2 Salt - 1/2 tsp Lemon juice - 1 tbsp Method : 1. Heat oil in a Kadahi 2. Add mustard seeds and let them crackle 3. Add curry leaves and stir for a while 4.  Add chopped onions, green chilli, carrot, peas and mix nicely 5. Vegetable Rava Upma (Renal & Diabetes Diet) Ingredients : Suji / Rava / Semolina - 1 cup Capsicum (finely chopped) - 1/4 cup Fresh green peas - 1/4 cup Onions (finely chopped) - 1/2 cup Green chilly (finely chopped) - 2 Green coriander (finely chopped) - 1 tbsp Lemon juice - 1 tbsp Salt - 1/4 tsp Vegetable Oil - 2 tbsp Urad dal - 1 tsp Chana dal - 1 tsp Mustard seeds - 1 tsp Curry leaves - 1 sprig Method : 1.  Boil 4 cups of water in a pan. 2.  In another heated hard bottom pan add oil.   3. Cold Cucumber Soup Ingredients : Cucumbers - 500 gm Ginger (chopped) - 2 inch piece Green Chillies (chopped) - 2 Salt - 1 tsp or as per taste Buttermilk - 2 cups Black pepper powder - 1/2 tsp Lemon Juice - 1 tbsp Method : 1. Peel the cucumbers and cut into chunks 2. In a blender add cucumber chunks 3. Add ginger, green chillies, salt, butter milk and blend to a fine puree 4. Add black pepper powder, lemon juice and blend again 5. Pour into 2 soup bowls 6. Chill in a refrigerator for at least 30 minutes 7. Rice and Poha Dosa 🧾  Ingredients: Short grain rice - 1 cup Fenugreek seeds - 1/2 tsp Poha - 1/2 cup Salt - 1/2 tsp Oil for cooking Dosa Method: 🧼🍚 1. Wash the Rice Rinse the rice thoroughly under running water and drain completely . 🌱🍚 2. Add Fenugreek Seeds To the washed rice, add a few fenugreek seeds (methi dana) for flavor and better fermentation. 💦🕒 3. Soak the Rice Add 2 cups of water and let the rice and fenugreek seeds soak for at least 3 hours . 🥣⏳ 4.
