Rice and Poha Dosa
🧾 Ingredients:
Short grain rice - 1 cupFenugreek seeds - 1/2 tsp
Poha - 1/2 cup
Salt - 1/2 tsp
Oil for cooking Dosa
Method:
🧼🍚 1. Wash the Rice
Rinse the rice thoroughly under running water and drain completely.
🌱🍚 2. Add Fenugreek Seeds
To the washed rice, add a few fenugreek seeds (methi dana) for flavor and better fermentation.
💦🕒 3. Soak the Rice
Add 2 cups of water and let the rice and fenugreek seeds soak for at least 3 hours.
🥣⏳ 4. Soak the Poha
After 3 hours, add poha (flattened rice) to the soaking rice just 5 minutes before grinding.
🔁🛑 5. Drain the Soaked Ingredients
Once poha has softened, drain all water completely from the soaked mixture.
⚙️🥄 6. Grind to a Coarse Paste
Transfer the soaked ingredients to a grinder.
Add ⅓ cup water and grind to a coarse paste.
⚙️💧 7. Grind to a Smooth Batter
Add another ⅓ cup water and grind again until you get a smooth batter.
🥣✅ 8. Check Batter Consistency
Pour the batter into a vessel.
The right consistency: it should slide off a spoon in ribbons, not clumps.
🕯️⏳ 9. Ferment the Batter
Cover the vessel and place it in a warm spot to ferment for 8 hours or overnight.
🧂🤲 10. Add Salt After Fermentation
Once fermented, add salt and gently mix the batter without overbeating it.
🍳🧴 11. Heat & Grease the Tawa
Lightly grease a non-stick tawa with a few drops of oil.
Heat it on medium flame until evenly hot.
🌀🥄 12. Pour & Spread the Batter
Pour about ⅓ cup batter into the center of the tawa.
Using the back of a ladle, quickly spread the batter to form a thick dosa.
🍂👀 13. Cook Until Edges Brown
Let the dosa cook until the edges begin to turn golden and lift slightly.
🍽️🔄 14. Flip the Dosa
Using a turner or flat spatula, gently loosen the edges first, then flip and cook the other side for a couple of minutes.
🌶️🥣 15. Serve Hot
Serve your soft and crispy Rice & Poha Dosa immediately, paired with chutney or sambar of your choice.
