Khamang Kakdi Ingredients: Cucumber (finely chopped) - 2 cups Peanuts (roasted) - 1/4 cup Freshly grated coconut - 1/4 cup Green chili (finely chopped) - 1 Lemon juice – 1 tsp Coriander leaves (chopped) - 1 tbsp Salt as required Sugar - 1/2 tsp or add as required Oil - 1 tbsp Mustard seeds - 1/2 tsp Curry leaves - 7-8 Method: 1. Rinse the cucumbers. Peel and then chop them finely. 2. Keep the chopped cucumber aside for 15 to 20 minutes in a bowl or plate. 3. Add the roasted peanuts in a mortar-pestle. Crush to a coarse powder. Or crush peanuts in a small mixer-grinder  4. After 15 to 20 minutes squeeze water from the cucumber by cupping between your palms or holding between your fists.  5. Then add the cucumber in a mixing bowl. 6. Add the coarsely crushed peanuts. 7. Add fresh grated coconut, chopped green chilies, chopped coriander leaves and 1 teaspoon lemon juice.  8. मखाने का पाग | Makhana Paag

Makhana Paag Ingredients : Makhana - 1 cup Desi Ghee - 1/2 cup Sugar - 6 tbsp Method : 1. Cut each makhana into4 pieces 2. Heat ghee in a kadahi and roast makhana till they become crispy 3. Take them out in a plate and let them cool 4. Take 1/4 cup water and sugar in the kadahi and let it boil 5. Prepare sugar syrup of one thread consistency (To check- take a drop of syrup in a bowl and  touch the syrup with a clean forefinger and then touch your thumb and forefinger together and pull apart gently.   One-thread consistency is when a single thread is formed (and does not break) when your forefinger and your thumb are pulled apart gently.  )  6. Immediately add the roasted makhana and mix nicely 7. Now transfer these contents on a greased plate  8. Let it cool 9. Keep it in an air tight container  10. Falahari Pomegranate   Raita | Anardana Raita Ingredients: Curd / Yogurt - 1 cup Pomegranate arils (Anardana) - 3/4 cup Roasted cumin powder - 1/2 tsp Black pepper powder - 1/4 tsp Sugar - 1 tbsp Rock Salt (Sendha Namak) / Black Salt   - 3/4 tsp Coriander leaves for garnish Method 1. Whisk curd in a bowl 2. Add sugar and stir well till sugar is dissolved 3. Add black pepper   powder, cumin powder and rock salt / black salt and mix well 4. Add the pomegranate arils and reserve a few for garnishing 5. Mix well 6. Chill the pomegranate raita in refrigerator 7. Pour the pomegranate raita in serving bowls and garnish with pomegranate arils and coriander leaves. Falahari Pumpkin (Kaddu) Raita | फलाहारी कद्दू रायता

Falahari Pumpkin (Kaddu) Raita Ingredients : Pumpkin (Kaddu) - 300 gm Curd (Yogurt) - 300 gm Rock Salt (Sendh Namak) - 1 tsp Roasted Cumin Powder - 1 tsp Green Chillies - 2 (Finely Chopped) Desi Ghee - 1 tsp Method: 1. Wash and peel Pumpkin 2. Grate the Pumpkin 3. Heat ghee in a pan 4. Add the grated pumpkin, 1/2 tsp rock salt and stir fry for a minute 5. Cover the pan and cook for 4-5 minutes on medium flame 6. Once the pumpkin is cooked remove from fire and let it cool 7.  Whisk Curd to make it smooth 8. Add 1/2 tsp Rock Salt, 1/2 tsp cumin powder, chopped green chilly and mix well 9. Stir in the cooked pumpkin in the curd  10 . Falahari Sweet Mango Raita | Aam Ka Raita  Ingredients: Curd / Yogurt -2 cups Sugar - 2  tbsp Ripe Mangoes (diced) - 1 cup Green Cardamom Powder - 1 tsp Saffron (Kesar) - 1/4 tsp Almonds (chopped) - 1 tbsp Method: 1. Add sugar and beat the curd till smooth 2. Add mangoes (reserve a few for garnish), cardamom powder and saffron and mix well 3. Chill the mango raita before serving 4. Garnish with chopped mangoes, chopped almonds 5. 🟫  Singhare ki Namkeen Burfi 🧾 Ingredients: Singhara (Water chestnut) flour - ¾ cup Curd -  ¾ cup Green chili (finely chopped)- 2-4 Rock Salt (Sendha namak) - 1 tsp Desi Ghee - 3 tbsp Water - 1 cup Lemon juice - 1 tbsp Green coriander leaves (chopped) - 1 tbsp (optional) Method: 🧈 Step 1: Roast the Singhara Flour Heat 1 tbsp ghee in a pan. Add Singhara Aata (water chestnut flour) and roast on medium heat . Stir continuously to avoid burning. It will take about 10–12 minutes to turn golden brown. Falahari Raw Banana Dry Sabzi Ingredients: Raw Banana - 500 gm Peanut Oil / Ghee - 2 tbsp Cumin Seeds - 1 tsp Green Chillies - 1 tbsp (finely chopped) Black Pepper - 1/2 tsp (crushed) Rock Salt (Sendha Namak) - 1 tsp Amchur Powder - 1 tsp Fresh Coconut - 3 tbsp (grated) Method: 1.  Wash the bananas properly, cut off the edges on both ends and b oil in cooker for 2 whistles 2. Let it cool and then peel it 3. Cut slices of the boiled banana 4. Heat Ghee / Oil  in a pan 5. Add cumin seeds and let them crackle 6. Now add green chillies in it and stir 7. Falahari  Khatta Meetha Kaddu for Vrat Ingredients: Pumpkin (Kaddu) - 500 gm Desi Ghee - 1 tbsp Cumin Seeds - 3/4 tsp Roasted Cumin Powder - 1 tsp Amchur Powder - 1 tsp Black Pepper powder - 1 tsp Green Chilly - 2 (finely chopped) Rock Salt (Sendha Namak) - 1 tsp Sugar - 1 tbsp Method: 1. Peel and chop pumpkin in bite size pieces 2. In a Kadahi heat ghee 3. Add cumin seeds and allow to splutter 4. Add green chillies and fry for few seconds 5. Add pumpkin pieces and mix and stir for a minute 6. Add rock salt and sugar and mix well 7. Cover and cook on medium flame for 5-7 minutes 8.  🥣  Falahari Lauki Raita Recipe (Vrat Special Bottle Gourd Yogurt)  A light, cooling, and nutritious yogurt dish ideal for fasting days. Ingredients: Lauki (Bottle Gourd) - 300 gm Curd (Yogurt) - 300 gm Rock Salt (Sendh Namak) - 1 tsp Roasted Cumin Powder - 1 tsp Green Chillies - 2 (Finely Chopped) Method: 🥒 1. Prep the Bottle Gourd (Lauki) Wash and peel the lauki thoroughly. Grate it using a medium grater. 🔥 2. Boil the Lauki Boil the grated lauki in sufficient water for about 15 minutes until soft. Malai Ladoo | Paneer Ladoo Ingredients: Full Cream Milk - 1 litre Lemon juice - 2 tbsp Powdered sugar (Boora) - 5 tbsp Cardamom Powder - 1/2 tsp Saffron strands - 7-8 Almonds - 6 Method: 1. Keep milk on fire to boil in a thick bottomed pan 2. When it comes to boil lower the flame 3. Now add 1 tbsp lemon juice and mix. 4. If the milk curdles, need not add rest of lemon juice, else add rest of the lemon juice and mix 5. After the milk is curdled simmer for 2 minutes 6. Strain the whey using muslin cloth and keep 1/3 portion of whey with the coagulated milk solids 7. On low flame, keep simmering the coagulated milk mixture with whey 8. Stir at intervals 9. Singhare Ki Chaat  Ingredients: Singhare (Water Chestnut) - 1 kg Cumin Seeds - 1 tsp Green Chillies - 2 (finely chopped) Rock Salt (Sendha Namak) - 1 tsp Desi Ghee - 1 tsp Lemon Juice - 1 tbsp Roasted Peanuts - 1 tbsp Method: 1. Boil Singhara in cooker for 3-4 minutes 2. Drain, cool and peel boiled singharas 3. Chop each singhara into two pieces 4. Heat ghee in a pan 5. Add cumin seeds and let them splutter 6. Now add green chillies and fry for 10 seconds 7. Add chopped singhada to this  8. Add rock salt in it and fry on high heat for 30-40 seconds 9. Add lemon juice and take off heat 10. Kuttu Singhare Ki Poori Ingredients: Kuttu Ka Atta (Buckwheat flour) - 1 cup Singhare Ka Atta (Water chestnut flour) - 1 cup Arbi (Colocasia root) - 250 gm Rock Salt (Sendha Namak) - 1 tsp Peanut Oil for deep frying Method: 1. Wash and Boil Arbi for 3 whistles in Cooker 2. Peel the boiled arbi when it is cold 3. Grate the Arbi 4. Mix Kuttu Atta, Singhara Atta, Rock Salt in Arbi and knead a dough without adding water 5. If the mixture is too dry, add 1-2 tbsp water to knead a smooth dough 6. For nice result, now make a fist and just put it on whole dough. This makes the poori smooth and nice in texture 7. Take small portion from the dough and make a smooth ball by rolling it between the palms 8. Apply little oil on this ball and roll it into thin round using a rolling pin 9.
