Moong Dal Kadhi | मूंग की दाल की कढ़ी

Moong Dal Kadhi Ingredients : Moong Dal Dhuli (Yellow Split Gram)- 1.5 cup Curd - 2.5 cup Hing (Asafoetida) - 1/2 tsp Cumin Seeds - 1/2 tsp Methi Dana (Fenugreek seeds) - 1/2 tsp Mustard seeds (Rai) - 1/2 tsp Turmeric powder - 1/2 tsp Green chillies (chopped) - 2-3 Red Chilli powder - 1/4 tsp Salt - 2 tsp Green Coriander (finely chopped) - 1 tbsp (optional) Desi Ghee - 3 tbsp Oil for frying pakodis Method : 1.  Wash and soak moong dal for 4-5 hours 2.  Strain it & grind it fine in a grinder using as little water as possible. 3. Divide the dal into 2 parts and a dd 1/4 tsp hing and 1 tsp salt to 1 part. 4. Beat this moong dal mixture to incorporate air in the batter.  5.  In a kadahi  heat oil for frying.   6.  When oil is hot, using a spoon ( which is narrow at the front)  drop batter in the kadahi to make pakoris.     7. Falahari Pomegranate   Raita | Anardana Raita Ingredients: Curd / Yogurt - 1 cup Pomegranate arils (Anardana) - 3/4 cup Roasted cumin powder - 1/2 tsp Black pepper powder - 1/4 tsp Sugar - 1 tbsp Rock Salt (Sendha Namak) / Black Salt   - 3/4 tsp Coriander leaves for garnish Method 1. Whisk curd in a bowl 2. Add sugar and stir well till sugar is dissolved 3. Add black pepper   powder, cumin powder and rock salt / black salt and mix well 4. Add the pomegranate arils and reserve a few for garnishing 5. Mix well 6. Chill the pomegranate raita in refrigerator 7. Pour the pomegranate raita in serving bowls and garnish with pomegranate arils and coriander leaves. Mint Raita | Pudina Raita | पुदीना रायता

Mint  Raita | Pudina Raita Ingredients: Curd / Yogurt - 1 cup Fresh mint leaves - 1/2 cup Red Chilli Powder - 1/4 tsp Roasted Cumin Powder - 1/2 tsp Chat Masala powder - 1/4 tsp Black Salt   - 1/2 tsp Salt - 1/2 tsp Method : 1. Whisk curd in a bowl 2.  Wash mint leaves nicely  3.  Grind mint leaves to a fine paste using 2-3 tbsp water  4.  Add mint paste along with its juices to the curd  5.  Stir very well 6.  Spice the curd with salt, black salt, red chilli powder, cumin powder and chat masala powder 7.  Mix everything very well 8. Garnish the raita with a sprig of mint leaves 9. Serve raita with baked or tandoori starters.  10. It can also be served as a side dish in any meal. 11. Carrot  Raita | Gajar Raita Ingredients: Curd / Yogurt - 1 cup Carrot (peeled and grated) - 1/2 cup Coriander leaves (finely chopped)   - 1 tbsp Mint leaves (finely chopped)   - 1 tbsp Green Chilly (finely chopped) - 1 Roasted Cumin Powder - 1/2 tsp Black Salt   - 1/2 tsp Desi ghee - 1/2 tsp Hing (Asafoetida) - a pinch Method : 1. Whisk curd in a bowl 2. Add the grated carrots (reserve 1 tsp for garnish) 3. Add the chopped green chilly, chopped mint leaves and mix well 4. Add cumin powder, black salt and mix well 5. In a small pan heat ghee 6. Add hing and fry hing for few seconds 7. Pour the tempering on raita and mix well 8. Chill the carrot raita in refrigerator 9. Garnish the raita with grated carrots and coriander leaves 10.
