Jaggery Foxnut | Gud Ka Makhana Ingredients: Foxnut (Phool makhana) - 50 gm Jaggery (Gud) - 100 gm Desi Ghee - 2 tbsp Method: 1. Cut jaggery into small pieces 2. Add 2 tbsp water in it and keep aside for 10 minutes 3. Roast makhanas in microwave for 30 seconds and then stir it 4. Repeat the process of roasting in microwave 3 times 5. Heat ghee in a pan and fry the makhanas till light brown and crispy 6. Take them out of the pan and keep aside 7. Now add the jaggery with the water in the pan 8. Keep stirring on high flame till it becomes little thick 9. To check correct thickness, put 2 drops on a spoon and then take the syrup between your index finger and thumb 10. Open the index finger and thumb opposite to each other and if it shows 1 or 2 strings of syrup coming up, your syrup is ready 11. Now add the fried makhanas in this syrup and keep stirring it 12. Mixed Vegetable Pickle Ingredients: Cauliflower - 500 gms Carrot - 500 gms Green Peas - 1 cup Small Potatoes - 500 gms Radish - 500 gms Hing (Asafoetida) - 1 tsp Mustard Oil - 100 gm (1/2 cup) Yellow / Black Mustard Seeds  - 2 tbsp (grounded) Turmeric Powder - 1 tsp Red Chilly Powder - 1 tsp Vinegar - 1 tbsp Salt - 3 tsp Method: 1. Boil potatoes for 2 whistles in cooker 2. Cut cauliflower into big pieces 3. Heat 2 glass water and add 1 tsp salt 4. Put the cauliflower pieces in this water, cover and keep aside for 10-15 minutes 5. Peel the boiled potatoes 6. Cut each potato into two pieces 7. Peel and wash the carrots 8. Peel and wash radish 9. Carrot and Tomato Soup Ingredients: Tomato - 500 gm Carrot - 200 gm Salt - 2 tsp Crushed Black Pepper - 1/2 tsp Roasted Cumin Powder - 1/2 tsp Sugar - 1 tbsp Basil / Tulsi leaves for garnishing Cream for garnishing Bread Croutons for topping Method: 1. Wash and Chop the tomatoes 2. Peel, Wash and chop the carrots 3. Put tomatoes and carrots to boil with 1 cup water and salt 4. When it comes to boil, lower the heat, cover and simmer till the vegetables are completely cooked through 5. Let the boiled vegetables cool 6. Blend the boiled vegetables in a blender 7. Strain the blended tomatoes through a strainer 8. Add 1/2 cup water to the vegetables in the strainer to strain it nicely 9. Add water to strained tomatoes to make up to 4 1/2 cups of liquid 10. Bathua Raita Ingredients: Bathua - 200 gm Curd - 400gm (2 cup) Salt - 1/4 tsp Black Salt - 1/4 tsp Green Chilly - 1 (finely chopped) Hing - 1/4 tsp Cumin Seeds - 1/2 tsp Method: 1. Clean bathua by plucking leaves and removing sticks and grass 2. Wash it with clean water 2 times 3. Put 1 cup water in bathua and let it boil, covered with a lid 4. Cook it for 5-6 minutes 5. Dry roast cumin seeds and hing 6. Coarsely grind cumin seeds and hing 7. Remove bathua from fire and strain away the excess water 8. Let the boiled bathua cool 9. Grind bathua coarsely in mixie 10. Ginger Soup Ingredients: Ginger - 100 gm Lemon Juice - 2 tbsp Salt - 1 tsp Cumin Seeds - 1/2 tsp Hing (Asafoetida) - 1/4 tsp Desi Ghee - 1 tsp Method: 1. Peel and wash Ginger 2. Chop ginger into small pieces  3. Grind these ginger pieces to a smooth paste using 1/2 cup water 4. Sieve this ginger paste 5. Use 1 cup water to sieve the ginger finely 6. Poppy Seeds Halwa  Ingredients: Poppy seeds (Khaskhas) - 1 cup Dried Dates - 8 Dry Coconut (Gola Nariyal) - 100 gm Almonds - 20 Sugar - 1 cup Desi Ghee - 3 tbsp Milk - 2 cup Green Cardamom Powder - 1 tsp Almond slivers - 1 tbsp Method: 1.
