  Milk Powder Jaggery Gujiya Ingredients (Covering): Maida (Refined Wheat Flour) - 3 cup Desi Ghee - 1/2 cup Milk - 1 cup Ingredients (Stuffing): Milk Powder - 1 cup Desi Ghee - 2.5 tbsp Milk - 1/2 cup Jaggery powder - 3/4 cup Dessicated Coconut - 1/2 cup Raisin (chopped) - 2 tbsp  Cashewnut (chopped) - 2 tbsp Almonds (chopped) - 2 tbsp Chironji (Chiroli) - 2 tbsp Green Cardamom powder - 1/2 tsp Ghee (for frying) Method (Covering): 1. Take refined flour in a large bowl or shallow plate and mix ghee in it. 2. Now add lukewarm milk in small portions and knead a bit stiff dough 3. Cover and keep aside the dough for 20 minutes to set. Method (Stuffing): 1.  Heat ghee in a pan and add milk to it. 2. Now mix milk powder in small parts and keep stirring constantly till it gets smooth and thick in consistency. 3. Prep the Carrots Trim the tops and ends of the carrots. Wash thoroughly under cold water to remove any dirt. Peel the carrots and grate them using a grater or food processor. 🍳🧈 2. Aata Namak Pare Ingredients: Wheat Flour (Aata)- 2 cup Refined Oil - 6 tbsp (1/2 cup) Carom Seeds (Ajwain) - 1 tsp Salt - 3/4 tsp Oil for frying Method: 1. Take wheat flour in a big plate. Add salt, carom seeds and mix nicely 2.  Add 6 tbsp oil in the wheat flour and mix nicely 3. Knead a hard dough of the wheat flour using little water at a time. 4. Cover the dough with a clean cloth and keep it aside for 20 -25 minutes 5. After 25 minutes mash the kneaded flour 6. Divide the dough into two equal parts 7. Take a part of the dough and pressing between your palms make it round and smooth 8. Using a rolling pin roll the rounded dough into a thick circle 9. Khasta Kachori Ingredients: Urad Dal (Split and dehusked black gram lentils) - 1 cup Ajwain (Carom Seeds) - 1 tsp All Purpose Flour (Maida) - 500 gm Oil - 1 cup Hing (asafoetida) - 1/2 tsp Salt - 2 tsp Coriander Powder - 1 tbsp Saunf (Fennel seed) Powder - 1 tbsp Red Chilli Powder - 1/2 tsp Baking Soda - a pinch Oil for frying Method: 1. Wash and Soak Urad Dal for 5- 6 hours 2. Remove Dal from water and grind coarsely using minimum water 3. Heat 3 tbsp oil and add hing 4. Add ground Dal and cook till it looses its moisture and becomes crispy and golden brown 5. Add 1 tsp salt, red chilli powder, coriander powder, saunf powder, baking soda and mix well 6. Mewa Paag | Dry Fruits Paag Ingredients: Desi Ghee - 3 tbsp Makhane (Lotus Seeds) - 1 cup Gond (Edible Gum) - 1/3 cup Almonds (chopped) - 1/2 cup Cashew nut (chopped) - 1/2 cup Kharbuje ke beej (Muskmelon Seeds) - 1 cup Coconut (grated) - 1 cup Poppy Seeds - 1/4 cup Chironji - 1/4 cup Sugar - 2 cups Green Cardamom - 12 (powdered) Method: 1. Aate ke Ladoo | Wheat Flour Ladoo Ingredients: Aata (Wheat Flour) - 2 cup Boora (Powdered Sugar) - 2 cup Desi Ghee - 2 cup Gond (Edible Gum) - 50 gm Chironji (Charoli) - 25 gm Makhana (Fox Nut) - 50 gm Almonds - 1/2 cup Sonth (Dry Ginger) Powder - 1 tsp Method: 1. Micro wave makhana for 30 seconds and then stir it 2. Repeat this step to microwave and stir makhanas 3 times 3. Microwave gond for 30 seconds and then stir it 4.
