Karela Peels Fry | Karela Ke Chilkon Ki Sabji Ingredients: Karela (Bitter Gourd) Peels of 250 gm Karela Onion - 1/2 cup (Chopped finely lengthwise) Turmeric Powder - 1/2 tsp Coriander Powder - 1 tsp Salt - 1 tsp Saunf (Fennel) Powder - 1 tsp Red Chilli Powder - 1/2 tsp Amchur Powder - 1 tsp Mustard Oil - 1 tbsp Method: 1. Add 1/2 tsp salt in the karela peels and mix. Keep it aside for half an hour 2. Now squeeze out the salt and water from the peels of karelas 3. Chop the peels to small size 4. Heat Oil in a pan 5. Add Onions in the pan now and cook until onions turn golden brown 6. Add karela peels in it now 7. Now mix onions and karela peels on low flame 8. Add turmeric powder, 1/2 tsp salt, coriander powder, red chilli powder, saunf powder 9. Mix all the masalas in the karela peels and cover & cook on low flame for 5 minutes 10. Crispy Karela Fry without Onion Ingredients: Bitter Gourd(Karela) - 250 gm Turmeric powder - 1/2 tsp Red Chilli Powder - 1/2 tsp Roasted Cumin powder - 1/2 tsp Coriander powder - 1 tsp Fennel (Saunf) Powder - 1 tsp Garam Masala powder - 1/4 tsp Hing (Asafoetida) - 1/4 tsp Amchur Powder - 1 tsp Gram Flour (Besan) - 1 tbsp Mustard Oil - 2 tbsp Salt - 1/2 tsp Method: 1. Lightly scrap the karelas 2. Wash them and cut them in thin rings. 3. If there are hard seeds in the karelas, remove them 4. Heat Oil in a pan 5. Add the karela slices and saute on medium flame till the slices become lightly browned. 6. Keep stirring in between 7. Now add turmeric powder, red chilli powder, cumin powder, coriander powder, fennel powder, garam masala powder, hing, amchur powder, salt and mix well 8. Stuffed Karela without Onion Ingredients: Karela (Bitter gourd) - 250 gm Raw Mango - 1 Salt - 3 tsp Coriander Powder - 1 tsp Turmeric Powder - 1/2 tsp Red Chilli Powder  - 1/2 tsp Saunf (Fennel Seeds) Powder - 2 tsp Sugar - 1 tsp Mustard Oil - 2 tbsp Cumin Seeds - 1 tsp Method: 1. Wash and peel the karelas 2. Don't throw the peels 3. Cut the peels into small pieces 4. Slit the karelas from one side 5. Put 1 tsp salt on peels and mix and keep aside for 1 hour 6. Put 1 tsp salt on karelas and spread evenly on karelas and keep aside for 1 hour 7. Peel the raw mango 8. Grate the mango 9. After 1 hour wash the peels nicely and remove extra water 10. Stuffed Karela  Ingredients: Karela (Bitter Gourd) - 500 gm Salt - 1 tsp Turmeric Powder - 1/2 tsp Coriander Powder - 1 tsp Red Chilli Powder - 1/2 tsp  Saunf Powder (Fennel Seed) - 1 tbsp Raw Mango - 1 Onion - 2 (Medium Size) Oil - 1 tbsp Sugar - 1/2 tsp Method: 1. Peel the bitter gourds slightly 2. Mark a cut on the bitter gourds lengthwise from one side, so that it does not break into two parts 3. Sprinkle 1/2 tsp salt on these bitter gourds and keep for half an hour 4. Grate onions 5. Peel and grate Raw Mango 6. Heat 1/2 tbsp Oil in a Pan 7.
