Falahari Pomegranate   Raita | Anardana Raita Ingredients: Curd / Yogurt - 1 cup Pomegranate arils (Anardana) - 3/4 cup Roasted cumin powder - 1/2 tsp Black pepper powder - 1/4 tsp Sugar - 1 tbsp Rock Salt (Sendha Namak) / Black Salt   - 3/4 tsp Coriander leaves for garnish Method 1. Whisk curd in a bowl 2. Add sugar and stir well till sugar is dissolved 3. Add black pepper   powder, cumin powder and rock salt / black salt and mix well 4. Add the pomegranate arils and reserve a few for garnishing 5. Mix well 6. Chill the pomegranate raita in refrigerator 7. Pour the pomegranate raita in serving bowls and garnish with pomegranate arils and coriander leaves. Falahari Sweet Potato Fry Ingredients: Sweet Potato (Shakarkand) - 250 gm Rock Salt ( Sendha Namak) - 1 tsp Black Pepper Powder- 1 tsp Lemon Juice - 1 tbsp Cumin Seeds - 1 tsp Desi Ghee - 1 tbsp Almonds (Chopped) - 1 tbsp Method: 1. Wash and Boil Sweet Potatoes in Cooker for 3 whistles 2. Let them cool and then peel them 3. Cut boiled sweet potatoes into circular about 1 cm thick pieces 4. Heat Ghee in a pan and   add cumin seeds and let them sizzle 5. Now add sweet potato pieces and stir 6. Add rock salt and black pepper powder and mix well 7.  🥣  Falahari Lauki Raita Recipe (Vrat Special Bottle Gourd Yogurt)  A light, cooling, and nutritious yogurt dish ideal for fasting days. Ingredients: Lauki (Bottle Gourd) - 300 gm Curd (Yogurt) - 300 gm Rock Salt (Sendh Namak) - 1 tsp Roasted Cumin Powder - 1 tsp Green Chillies - 2 (Finely Chopped) Method: 🥒 1. Prep the Bottle Gourd (Lauki) Wash and peel the lauki thoroughly. Grate it using a medium grater. 🔥 2. Boil the Lauki Boil the grated lauki in sufficient water for about 15 minutes until soft. Jaggery Foxnut | Gud Ka Makhana Ingredients: Foxnut (Phool makhana) - 50 gm Jaggery (Gud) - 100 gm Desi Ghee - 2 tbsp Method: 1. Cut jaggery into small pieces 2. Add 2 tbsp water in it and keep aside for 10 minutes 3. Roast makhanas in microwave for 30 seconds and then stir it 4. Repeat the process of roasting in microwave 3 times 5. Heat ghee in a pan and fry the makhanas till light brown and crispy 6. Take them out of the pan and keep aside 7. Now add the jaggery with the water in the pan 8. Keep stirring on high flame till it becomes little thick 9. To check correct thickness, put 2 drops on a spoon and then take the syrup between your index finger and thumb 10. Malai Ladoo | Paneer Ladoo Ingredients: Full Cream Milk - 1 litre Lemon juice - 2 tbsp Powdered sugar (Boora) - 5 tbsp Cardamom Powder - 1/2 tsp Saffron strands - 7-8 Almonds - 6 Method: 1. Keep milk on fire to boil in a thick bottomed pan 2. When it comes to boil lower the flame 3. Now add 1 tbsp lemon juice and mix. 4. If the milk curdles, need not add rest of lemon juice, else add rest of the lemon juice and mix 5. After the milk is curdled simmer for 2 minutes 6. Strain the whey using muslin cloth and keep 1/3 portion of whey with the coagulated milk solids 7. On low flame, keep simmering the coagulated milk mixture with whey 8. Stir at intervals 9. Singhare Ki Chaat  Ingredients: Singhare (Water Chestnut) - 1 kg Cumin Seeds - 1 tsp Green Chillies - 2 (finely chopped) Rock Salt (Sendha Namak) - 1 tsp Desi Ghee - 1 tsp Lemon Juice - 1 tbsp Roasted Peanuts - 1 tbsp Method: 1. Boil Singhara in cooker for 3-4 minutes 2. Drain, cool and peel boiled singharas 3. Chop each singhara into two pieces 4. Heat ghee in a pan 5. Add cumin seeds and let them splutter 6. Now add green chillies and fry for 10 seconds 7. Add chopped singhada to this  8. Add rock salt in it and fry on high heat for 30-40 seconds 9. Add lemon juice and take off heat 10. Kuttu Singhare Ki Poori Ingredients: Kuttu Ka Atta (Buckwheat flour) - 1 cup Singhare Ka Atta (Water chestnut flour) - 1 cup Arbi (Colocasia root) - 250 gm Rock Salt (Sendha Namak) - 1 tsp Peanut Oil for deep frying Method: 1. Wash and Boil Arbi for 3 whistles in Cooker 2. Peel the boiled arbi when it is cold 3. Grate the Arbi 4. Mix Kuttu Atta, Singhara Atta, Rock Salt in Arbi and knead a dough without adding water 5. If the mixture is too dry, add 1-2 tbsp water to knead a smooth dough 6. For nice result, now make a fist and just put it on whole dough. This makes the poori smooth and nice in texture 7. Makhana Kheer For Vrat | Foxnut Pudding For Fast Ingredients: Makhana (Fox nut) - 2 cup Milk - 1 litre Almonds - 1/2 cup Pistachios - 1 tbsp Chironji (Charoli Seeds) - 1 tbsp Green Cardamom Powder - 1 tsp Sugar - 1/2 cup Desi Ghee - 2 tbsp Method: 1. Soak Almonds and Pistachios in hot water for 10 minutes 2. After 10 minutes peel the almonds and pistachios 3. Finely chop the almonds and pistachios 4. Heat Ghee in a Kadahi 5. Falahari Vrat ki  Sukhi Arbi Ingredients: Arbi (Colocasia) - 500 gm Peanut Oil - 2 tbsp Ajwain (Carom Seeds) - 1 tsp Green Chillies - 2 (Slit lengthwise) Roasted Cumin Powder - 2 tsp Grounded Black Pepper - 1 tsp Rock Salt (Sendha Namak) - 1 tsp Lemon Juice - 1 tbsp Coriander Leaves - 1 tbsp (Finely chopped) Method: 1. Wash and parboil arbi so that it is still hard 2. Peel it when cold 3. Cut slices lengthwise 4. Heat oil in a pan 5. Add ajwain and slit green chillies 6.
