Fenugreek / Methi Sprouts Salad Ingredients: Fenugreek / Methi seeds - 1/2 cup Onion (finely chopped) - ½ cup Tomato (finely chopped) - 1 (large) Cilantro (chopped) - ¼ cup   Green chiles (finely chopped) - 2  Lemon juice - 2 tbsp Black salt - 1 tsp  Freshly cracked black pepper - ¼ tsp  Method: Sprouting Fenugreek / Methi Seeds Day 1 : Rinse and soak ½ cup fenugreek seeds for 24 hours. Make sure seeds are entirely submerged in the water. Day 2 : Rinse seeds with water thoroughly and soak again for 24 hours. Day 3 : Rinse seeds with water thoroughly by placing in a sieve. Once the seeds have been rinsed, place the sieve with seeds inside in a dark place and cover with a damp cloth. Day 4 : Repeat step 3 Day 5 : You will see that the fenugreek seeds have sprouted. If all the seeds have not sprouted yet, repeat step 3 one more time. Once your seeds have sprouted, rinse well and dry. Anjeer Dry fruit Lassi Ingredients : Dry figs (Anjeer) - 6 Cashew nuts - 7 Almonds - 7 Pistachios - 7 Jaggery powder - 2 tbsp Yogurt - 1.5 cups Chopped dry fruits for garnish  Method : 1. Soak almonds for 4-5 hours in water and then peel them 2. Soak dry figs for 2-3 hours 3. Add soaked dry figs, cashew nuts, almonds, pistachios, jaggery powder, 2 tbsp yogurt in a blender jar 4. Blend the ingredients together 5. Add the remaining yogurt to the jar and blend again 6. Pour the lassi into the glasses and garnish with chopped dry fruits 7. Cold Cucumber Soup Ingredients : Cucumbers - 500 gm Ginger (chopped) - 2 inch piece Green Chillies (chopped) - 2 Salt - 1 tsp or as per taste Buttermilk - 2 cups Black pepper powder - 1/2 tsp Lemon Juice - 1 tbsp Method : 1. Peel the cucumbers and cut into chunks 2. In a blender add cucumber chunks 3. Add ginger, green chillies, salt, butter milk and blend to a fine puree 4. Add black pepper powder, lemon juice and blend again 5. Pour into 2 soup bowls 6. Chill in a refrigerator for at least 30 minutes 7. Falahari Makhana Cutlet Ingredients : Makhana (Lotus seeds) - 2 cups Potato (boiled) - 4 (medium size) Green chilli (finely chopped) - 2 Coriander leaves (finely chopped) - 2 tbsp Roasted Cumin powder - 1 tsp Rock Salt (sendha namak) - 1 tsp Black Pepper powder - 1 tsp Cashew nuts - 10 (chopped into big pieces) Raisins -10 (cut into half) Buckwheat flour (Kuttu Aata) - 2 tbsp Peanut Oil -1/2 cup Method : 1. Low Calorie Green Chutney Ingredients : Roasted chana dal (Bengal gram) - 2 tbsp Coriander leaves (finely chopped) - 1.5 cup Green chillies (roughly chopped)- 2 -3 Cumin seeds  - 1 tsp Salt - 1/2 tsp or to taste Low-fat curd - 1 tbsp Lemon juice - 1/2 tbsp Method : 🌿 Step 1: Grind Dry Ingredients Add roasted chana dal , green chillies , and cumin seeds to a blender. Amla Mirch ki Achari Subzi Ingredients: Indian Gooseberry (Amla) - 250 gm Green Chilly - 50 gm Mustard Oil - 2 tbsp Turmeric Powder - 1/2 tsp Red Chilli Powder - 1/2 tsp Coriander powder - 1 tsp Jaggery / Sugar - 1 tsp Salt - 1 tsp Cumin seeds -  1/2 tsp Fenugreek seeds (Methidana) -  1/2 tsp Fennel seeds (saunf) - 1 tsp Hing (Asafoetida) - 1/4 tsp Pickle masala from mango or chilli pickle (optional) - 2 tsp Method: 1. Kala Chana Shami Kebab Ingredients: Black Chana - 3/4 cup Bread Slices - 5 Curd - 2 tbsp Green Coriander - 3 tbsp (finely chopped) Green Chilly -2 (Finely chopped) Garlic - 4 cloves (crushed) Coriander Powder - 1/2 tsp Garam Masala Powder - 1/2 tsp Turmeric Powder - 1/4 tsp Amchur Powder - 1/2 tsp Red Chilli Powder - 1/2 tsp Salt - 1 tsp Oil for frying Method: 1.
