Stuffed Capsicum with Potato (Microwave) Ingredients: Capsicum - 250 gm Potato - 250 gm (Boiled) Hing (Asafoetida) - 1/4 tsp Cumin seeds - 1/2 tsp Coriander powder - 2 tsp Red Chiili Powder - 1/2 tsp Garam masala powder - 1/2 tsp Amchur powder - 3/4 tsp Oil - 1 tbsp Salt - 1 tsp Cheese Slice - 1 (optional) Method: 1. Wash and Cut capsicum into two halves horizontally 2. Remove the seeds and stalk from the halves 3. Chop the boiled potatoes to small pieces 4. Heat oil in a pan 5. Add cumin seeds and hing 6. When cumin seeds splutter add chopped potatoes 7. Add coriander powder, red chilli powder, salt and mix well 8. Cook for 3-4 minutes and then add garam masala powder, amchur powder and mix nicely 9. Take out potato mixture in a bowl and let it cool 10. Fill the capsicum halves with potato mixture 11. Place the capsicums in a microwave safe bowl 12. Microwave the capsicum for 3 minutes 13.
