Mango Chunda | Mango Sweet Pickle | Mango Kuchla Ingredients: Raw Mango - 2 kg Salt - 4 tbsp Hing ( Asafoetida) - 1/2 tsp Big Cardamom - 7 Cloves - 16 Cumin seeds -  2 tsp Black Pepper - 1 tsp Cinnamon - 2" piece Red Chilli Powder - 1 tbsp Sugar - 1 kg Method: 1. Peel the mangoes 2. Grate the mangoes 3. Add Hing and salt to the grated mangoes 4. Mix it with a clean and dry spoon and cover it with a muslin cloth 5. Keep it in sun for 2 days (Do mix it once a day with a clean and dry spoon) 6. Grind Big Cardamom, cloves, cumin seeds, black pepper and cinnamon to a coarse powder 7. After 2 days, add  grounded powder and red chilli powder  8. Mix well with a clean and dry spoon  9. Add sugar 10. Mix well with a clean and dry spoon  11. Kadahi Paneer | कढ़ाही पनीर

Kadahi Paneer Ingredients: Paneer (Cottage Cheese) - 250 gms (Cut into long fingers) Capsicums - 2 (Cut into long fingers) Dry Red Chillies - 2 Coriander Seeds - 2 tsp Ginger -  ½  " piece (chopped finely) + 1" inch piece (finely shredded) Garlic flakes - 10 (crushed) Green chilly - 1 (chopped) Tomatoes - 2 (chopped) Fenugreek Seeds - A Pinch Green Coriander - 1 tbsp (chopped) Salt -  ½  tsp  Oil - 4 tbsp Method: 1. Heat Red Chillies on a tawa, till slightly crisp and Dry 2. Pound (Crush Roughly) red chillies and coriander seeds 3. Heat 1 tbsp Oil in a Non Stick Pan 4. Saute Capsicum till done. Keep aside 5. Heat 2 tbsp oil. Add crushed garlic. Fry till light brown 6. Add Pounded mixture and cook for 15 sec 7. Add chopped ginger and green chillies 8.
