पालक भुर्जी | Palak Bhurji | Scrambled Spinach

Palak Bhurji Ingredients: Spinach / Palak (chopped) - 1/2 kg Garlic (finely chopped) - 1 tbsp Ginger (grated) - 1 tbsp Green chilies (finely chopped) - 1 tsp Onion (thinly sliced) - 1 cup Mustard oil - 1 tbsp Cumin seeds - 1 tsp Whole dry red chilies - 3 Salt - 1/2 tsp or as per taste Coriander powder - 1 tbsp Amchur powder - 1 tsp Method: 1. Heat oil in a kadahi 2. Add cumin seeds, dry red chilies, garlic 3. Cook till garlic is slightly brown 4. Add grated ginger, green chilies, onion and cook on medium heat 5. Cook till onions acquire slight color 6. Add chopped spinach / palak 7. Add salt, coriander powder, amchur powder and mix 8. Cover and simmer for 4-5 minutes 9. Open and cook on medium flame for 1-2 minutes to concentrate flavors 10. Make sure the bhurji does not get completely dry 11. Serve with Dal, Roti and have a nutritious meal

Bathua Boondi Raita Ingredients: Bathua - 500 gm Curd - 500 gm  Boondi - 1 cup Salt - 1/2 tsp Black Salt - 1/2 tsp Green Chilly - 1 (finely chopped) Cumin powder - 1/2 tsp Red chilli powder - 1/4 tsp Oil - 1 tsp Cumin seeds - 1/2 tsp Hing - 1/4 tsp Method: 1. Clean bathua by plucking leaves and removing sticks and grass 2. Wash it with clean water 2 times 3. Put bathua in 2 cups of boiling water and let it boil 4. Cook it for 5-6 minutes 5. Remove bathua from fire and strain away the excess water 6. Let the boiled bathua cool 7. Squeeze the bathua with hands 8. Grind bathua coarsely in mixie and take out in a bowl 9. Broccoli Potato Stir Fry (Indian style) Ingredients : Potato (cubed) - 1 cup (1/2 inch pieces) Broccoli - 250 gm Oil - 2 tbsp Cumin seeds - 1/2 tsp Green chilli (chopped) -1 Garlic (chopped) - 1 tbsp  Turmeric powder - 1/8 tsp Red chilli powder - 1/4 tsp Garam masala powder - 1/2 tsp Cumin powder - 1/4 tsp Coriander powder - 1/4 tsp Salt - 3/4 tsp or as per taste Lemon Juice - 1 tbsp Sesame seeds (toasted) - 1 tsp Method : 1. Tricolour Parathas Ingredients: Whole wheat flour - 3 cups , more for rolling Bathua / spinach (blanched and puréed) -1/2 cup  Carrot (boiled and puréed) -1/2 cup  Ajwain - 1/4 tsp Kashmiri red chilli powder - 1/2 tsp Salt -1.5 tsp or as per taste  Oil as needed Method: 1. Using three bowls, add 1 cup of flour into each. 2. Add the bathua / spinach purée into one bowl along with a tablespoon of oil, ajwain and 1/2 tsp salt.  3. Bel Sharbat | Wood Apple Juice Ingredients: Bel Fruit - 1 Black Salt - 3/4 tsp Roasted Cumin Powder- 3/4 tsp Sugar - 4 tbsp Method: 1. Slightly hammer Bel fruit along one of the circumference by rotating it slowly. Cut it into two parts 2. Using a spoon extract the pulp from it. 3. Soak the pulp in 4 cups of water for about 2 hours. 4. Mesh the pulp in water properly with hand. Don’t use mixer, as it will crush the seeds making the juice bitter. 5. Sieve the pulp to remove fibers and seeds. 6. Add little more water in the sieve and extract the remaining pulp from the fiber and seeds of the sieve 7. Now we have the smooth bel fruit extract 8.
