4 Super tasty Breakfast recipes with Cheese Whey Water (Paneer water)
Whey Water Recipes
Basic Ingredients :
Full fat milk - 1 litre
Lemon juice - 3 tbsp

Method to prepare Whey water :
1. Take milk in a pan and let it boil on high flame3. Add lemon juice and stir it till the milk is curdled and turned into whey water and chhena
4. Remove from fire

6. The water that we have got is whey water and the solid is Chhena, that can be used to make paneer or any other chhena recipe
7. If you are not preparing the recipes immediately, cool it and keep it in fridge.
Recipe 1 : Instant Khatta Dhokla
Ingredients :
Besan (Gram flour) - 1 cup
Sooji / rava (Semolina) - 1 cup
Whey water - 1.5 cups
Salt - 1 tsp
Turmeric powder - 1/2 tsp
Eno salt - 1 tsp
Oil - 3 tbsp
Mustard seeds - 1 tsp
Curry leaves - 10-12
Ginger (grated) - 1 tbsp
Green Chillies (finely chopped) - 2
Green chillies (split into 2) - 2
Lemon Juice - 1 tbsp
Method :
1. Add besan, rava and 1 cup whey water in a bowl
2. Mix nicely so that no lumps are formed
3. Now add salt, turmeric powder, ginger, chopped green chillies and 1/2 cup whey water
4. Mix nicely and keep aside for 10 minutes
6. Brush the idli plates or dhokla plate with little oil
7. Add eno salt in the mixture and mix
8. Transfer the mixture immediately on idli plates or dhokla plates and steam them for 10 minutes
9. Check with a knife if the dhokla is done.
10. Remove from heat and leave it for 2 minutes
11. Take out the dhoklas in a plate and let them cool
12. Cut the dhokla into desired size and shape pieces
13. Heat 2 tbsp oil in a tadka / small pan
14. Add mustard seeds, curry leaves, slit green chillies
15. After the mustard seeds splutter add 1/2 cup water and lemon juice
16. Let it come to a boil and then switch off the flame
17. Using a spoon pour this tadka on the dhokla pieces
18. Enjoy delicious Dhokla with coconut chutney or any chutney of your choice
Recipe 2 : Suji Upma
Ingredients :
Rawa / Sooji - 3/4 cup
Desi Ghee - 1 tsp
Oil-3 tbsp
Peanut - 2 tbsp
Mustard seeds - 1/2 tsp
Cumin seeds - 1/2 tsp
Curry leaves- 7 to 8
Chana Dal - 1 tsp
Urad Dal - 1 tsp
Hing - 1/4 tsp
Ginger (grated) - 1 tsp
Green chilli (chopped) - 2
Onion (finely chopped) - 3/4 cup
Salt - 3/4 tsp
Whey water - 2.5 cup
Coriander leaves (finely chopped) - 1 tbsp
Coconut (grated) - 1 tbsp
Lemon Juice - 1 tsp
Method :
1. Add desi ghee in a kadahi
2. Add sooji and roast on medium flame for 7-8 minutes. Don't let the colour of Sooji change
3. Take out the Sooji in a plate
4. Heat Oil in the kadahi and add peanuts
5. Fry them till they become light brown and crispy
6. Take them out in a plate
7. Add mustard seeds in the same pan / kadahi and let them crackle nicely
8. Now add cumin seeds and let them crackle
9. Add curry leaves, chana dal, urad dal, hing and saute them for a minute
10. Add ginger and green chilli and fry for a minute
11. Add onion and saute till it gets little caramalized (not brown)
12. Add roasted sooji, salt and mix nicely
13. Cook for 2 more minutes stirring continuously
14. Meanwhile heat whey water to add to upma
15. Change the flame to low and add hot whey water and mix nicely
16. Cover and cook on low heat for 5 minutes
17. Remove lid, add coriander leaves and mix
18. Remove from heat add lemon juice and mix
19. Serve hot fluffy and soft Upma garnished with fried peanuts and grated coconut
Recipe 3 : Instant Besan Rava Uttapam
Ingredients :
Besan (Gram flour) - 1/2 cup
Sooji / rava (Semolina) - 1 cup

Ginger (grated) - 1/2 tbsp
Green Chillies (finely chopped) - 2
Onion (finely chopped) - 1/2 cup
Carrot (grated) - 1/2 cup
Capsicum (desseded and finely chopped) - 1/2 cup
Tomato (desseded and finely chopped) - 1/2 cup
Oil - 3 tbsp
Method :
1. Add besan, rava and 1 cup whey water in a bowl

3. Now add salt, turmeric powder, ginger, chopped green chillies and 1 cup whey water
4. Mix nicely and keep aside for 10 minutes
5. Add onion, carrot, capsicum, tomato
6. Mix nicely
7. Heat a flat tawa and brush it with little oil
8. Lower the heat. Put 2 ladles of mixture in the center and spread it in circular manner using the back of ladle
9. Apply little oil on the sides of the Uttapam and change the heat to medium
10. When the lower side starts becoming brown, using the edges of spatula lift the Uttapam.
11. Flip the Uttapam and let it cook from other side
12. When it becomes golden brown from both sides, serve it with any chutney of your choice
Recipe 4 : Vegetable Daliya
Ingredients :
Daliya (Dry Roasted) - ½ cup
Onion (finely chopped) - ½ cup
Green Peas - ½ cup
Carrot (finely chopped)- ½ cup
Capsicum (finely chopped)- ½ cup
Ginger (grated) - 1 tbsp
Onion (finely chopped) - ½ cup

1. Put Daliya in ½ cup warm water
2. Heat Oil in a vessel
3. Fry onions to a golden brown colour
4. Add ginger, green chillies and fry for a while
5. Add green peas, carrot, capsicum
6. Add salt, coriander powder, cumin powder and mix well.
