Gur Ki Kheer Ingredients : Full cream milk - 1 ltr Rice (medium or small grain) - 1/4 cup Powdered jaggery(preferably date jaggery) - 1/2 cup Almonds (soaked, peeled and chopped) - 1 tbsp Cashew nuts (chopped) - 1 tbsp Pistachios (chopped) - 1 tbsp Golden raisins - 1 tbsp Green cardamom powder - 1/2 tsp Method : 1. Wash rice nicely and soak in water for 15 minutes 2. Heat milk in a heavy bottomed pan 3. As soon as the milk comes to a boil, lower the flame 4. Remove rice from water and add to the milk 5. Mix and cook on low medium flame for 15-20 minutes 6. Keep on stirring in between so that it doesn't stick to the bottom of the pan 7. Add raisins, chopped almonds, chopped pistachios, chopped cashew, chopped walnuts and mix 8. Add cardamom powder, mix and cook for 10-12 minutes more 9. Kulfi with Khoya and Jaggery Ingredients : Full Fat Milk - 3 cups (750 ml) + 3 tbsp Khoya (Mawa or evaporated milk) - 4 tbsp Jaggery powder - 3 tbsp Corn Flour - 1 tbsp Unsalted Pistachios - 20 Almonds - 20 Green cardamoms - 4 Rose water / Kewra water - 1 tsp Saffron - 6-7 strands Method : 1. In a wide pan heat 3 cups of milk on low flame for about 30 minutes.  2. The milk should reduce to 1/3rd of its volume. 3. Grate or crumble the khoya and keep aside 4. Powder the pistachios and almonds coarsely 5. Crush the cardamom pods in mortar-pestle and powder finely 6. Dissolve the cornflour in 3 tbsp milk and mix very well 7. When the milk cooking on heat becomes 1/3rd, add the cornflour paste 8. Keep on stirring after adding the paste so that no lumps are formed 9. Instant Malai Peda using Condensed Milk Ingredients : Condensed Milk - 400 gm Milk - 1.5 cup Cornflour - 1 tsp Lemon Juice - 1 tbsp Green Cardamoms (powdered) - 4-5 Desi Ghee - 1 tbsp Pistachios for garnishing Method : 1. Heat ghee in a pan 2. Add milk and lemon juice 3. Cook till the mixture starts curdling 4. Make a paste of cornflour with 2 tbsp water and add it to the milk mixture after it curdles 5. Add condensed milk and continue cooking on medium flame by stirring in between  6. Cook till the mixture leaves the sides of the pan  7. Add cardamom powder and mix 8. Remove from the flame and transfer to a dish 9. Let it cool a bit 10. Apply little ghee on your palms and shape the warm mixture to pedas 11. Garnish with pistachios 12.
