Vegan Broccoli Salad Ingredients: Broccoli (small florets) - 3 cups Olive oil - 1 tbsp Sesame seeds - 1 tbsp Peanuts - 2 tbsp Spring onions green - 1 cup Salt as per taste Soy Sauce - 2 tbsp Vinegar - 1 tbsp Chilli Sauce - 1 tbsp Cornstarch - 1 tsp Method: 1. Wash and rinse broccoli florets very nicely 2. Heat a pan and add 3 tbsp water 3. Add broccoli and cover it 4. Cook on low flame for 4-5 minutes 5. Take 2 tbsp water in a small bowl, add cornstarch and mix nicely 6. Remove broccoli from pan 7. Now add 3 tbsp water in the pan and let it get hot 8. Add soy sauce, olive oil, chilli sauce, 1 tbsp vinegar 9. Add corn starch liquid and mix well 10. Now add broccoli, sesame seeds, peanuts, spring onions 11. Stir gently for 30 seconds 12. Add salt to taste and mix 13. Enjoy immediately or when cold

Instant Khatta Dhokla Ingredients : Gram Flour (Besan) - 1 cup Semolina (Sooji / Rava) - 1 cup Buttermilk (Chachh) - 2 cups Salt - 1 tsp Turmeric powder - 1/2 tsp Eno Fruit salt - 1 tbsp Ginger (coarsely grounded) - 1 tbsp Green chillies (coarsely grounded) - 1 tsp Oil - 2 tbsp Mustard seeds - 2 tsp Curry leaves - 4 sprigs Green chillies (slit) - 5-6 Lemon juice - 1 tbsp Method: 1. Mix gram flour, semolina, salt, turmeric powder in a bowl 2. Add 1 cup buttermilk and mix nicely so that no lumps are formed 3. Now add 1 cup buttermilk more and mix to make a smooth batter 4. Add ginger paste, green chillies paste to the batter and mix 5. Keep it aside for 10 minutes 6. Take about 1 litre water in a vessel and keep it to boil 7.   Milk Powder Jaggery Gujiya Ingredients (Covering): Maida (Refined Wheat Flour) - 3 cup Desi Ghee - 1/2 cup Milk - 1 cup Ingredients (Stuffing): Milk Powder - 1 cup Desi Ghee - 2.5 tbsp Milk - 1/2 cup Jaggery powder - 3/4 cup Dessicated Coconut - 1/2 cup Raisin (chopped) - 2 tbsp  Cashewnut (chopped) - 2 tbsp Almonds (chopped) - 2 tbsp Chironji (Chiroli) - 2 tbsp Green Cardamom powder - 1/2 tsp Ghee (for frying) Method (Covering): 1. Take refined flour in a large bowl or shallow plate and mix ghee in it. 2. Now add lukewarm milk in small portions and knead a bit stiff dough 3. Cover and keep aside the dough for 20 minutes to set. Method (Stuffing): 1.  Heat ghee in a pan and add milk to it. 2. Now mix milk powder in small parts and keep stirring constantly till it gets smooth and thick in consistency. 3. Kanda Poha Ingredients : Thick Poha / Chivda - 1.5 cup Salt - 3/4 tsp Oil - 2 tbsp Peanuts - 2 tbsp Mustard seeds - 1 tsp Hing (Asafotida) - a pinch Curry leaves - 7-8 Onion (Finely chopped) - 1 cup Green chillies (finely chopped) - 2 Turmeric powder - 1/2 tsp Green Coriander (finely chopped)  2 tbsp Coconut (grated) - 2 tbsp Lemon juice - 2 tsp Method : 1. Clean and wash the poha in a sieve 2. In a large bowl take poha and soak it in 3 cups of water for 1 minute 3. Drain out water from poha using a sieve 4. Add 3/4 tsp salt in it and mix it with gentle hand so that it does not get mashed 5. In a pan heat oil and fry peanuts on low flame 6. Fry till peanuts become cryspy. Take them out in a plate 7. Matar Phare Ingredients : Green peas - 1cup (boiled) Rice flour - 1 cup Green Chilli - 1 (finely chopped) Green Coriander - 1 tbsp (finely chopped) Ginger - 1/2 tsp (finely chopped) Red chilli powder - 1/2 tsp Hing (Asafoetida) - 1/4 tsp Cumin Seeds - 1/2 tsp Coriander powder - 1 tsp Amchur powder - 1/2 tsp Salt - 1 tsp or as per taste Oil - 2 tbsp Method : 1. Heat 1/2 tbsp oil in a pan 2. Add hing, cumin seeds,green chilli, ginger and saute little 3. Add boiled green peas, red chilli powder, coriander powder, amchur powder and mix nicely 4. Saute for 2-3 minutes  5. Add 1/2 tsp salt, 1 tbsp green coriander and mix nicely 6. Take it out in a bowl and mash it little and keep it aside 7. Namak Ajwain Paratha Ingredients: Whole wheat flour - 2 cups Oil - 2 tbsp Salt - 2 tsp Ajwain (Carom seeds) - 2 tsp Oil for roasting / frying Method : 1. Take whole wheat flour in a big bowl or plate and add salt, ajwain 2. Mix well using your fingers. 3. Add oil and mix well 4. Add water and knead a soft dough. 5. Apply little oil on the dough and cover it and keep aside for 30 minutes. 6. Heat a griddle or Tawa TRIANGLE PARATHA 7. Take lemon size portion from the dough. Dust and roll the dough ball to make a 4 inch circle. 8. Apply oil on the circle and sprinkle little dry flour and fold the sides to make a semi circle. 9. Apply oil again and then fold to make a triangle. 10. Dust and roll again to make a 5 inch triangle. 11. The paratha should not be too thin as the roti. It should be a little thick. 12. Simple Besan Chila Ingredients : Besan (Gram flour) - 1 cup Salt - 1/2 tsp or as per taste Ajwain (Carom seeds) - 1/2 tsp Red Chilli powder - 1/2 tsp Water - 1 cup Oil - 4-5 tbsp Method: 1. Take besan in a large bowl and add salt, red chilli powder and ajwain in it 2. Mix well 3. Now add about 1/2 cup water and mix well and make sure there are no lumps. 4. Now add the remaining water and mix well 5. Heat tawa and apply about 1/2 tbsp on it 6. Now lower the flame and spray some water on it 7. When the water evaporates, add 1 serving spoon mixture in the center of the tawa. Using the back of the spoon spread the mixture in circular manner. 8. 🟫  Singhare ki Namkeen Burfi 🧾 Ingredients: Singhara (Water chestnut) flour - ¾ cup Curd -  ¾ cup Green chili (finely chopped)- 2-4 Rock Salt (Sendha namak) - 1 tsp Desi Ghee - 3 tbsp Water - 1 cup Lemon juice - 1 tbsp Green coriander leaves (chopped) - 1 tbsp (optional) Method: 🧈 Step 1: Roast the Singhara Flour Heat 1 tbsp ghee in a pan. Add Singhara Aata (water chestnut flour) and roast on medium heat . Stir continuously to avoid burning. It will take about 10–12 minutes to turn golden brown. Falahari Sweet Potato Fry Ingredients: Sweet Potato (Shakarkand) - 250 gm Rock Salt ( Sendha Namak) - 1 tsp Black Pepper Powder- 1 tsp Lemon Juice - 1 tbsp Cumin Seeds - 1 tsp Desi Ghee - 1 tbsp Almonds (Chopped) - 1 tbsp Method: 1. Wash and Boil Sweet Potatoes in Cooker for 3 whistles 2. Let them cool and then peel them 3. Cut boiled sweet potatoes into circular about 1 cm thick pieces 4.
