Instant Rabdi Ingredients: Ghee - 1 tsp Green Cardamom - 1 pod Milk - 500 ml Saffron - 6-7 strands Paneer / Chhena (Homemade) - 1.5 cup Condensed milk - 1/2 cup Sogar (optional) - 2 tbsp Rose essence (optional) - 1/8 tsp Method: 1. Heat ghee in a pan on medium flame 2. Add crushed cardamom pod once the ghee is slightly hot 3. Turn the flame to low and fry the cardamom for 30 seconds 4. Add milk and bring to a simmer 5. Add saffron in a bowl    6. Add 2 tbsp of hot milk from the pan in the saffron bowl 7. give it a nice mix and add it to the pan with milk 8. Aloo Masala Poori Ingredients: Whole wheat flour - 2 cups Sooji - 2 cups Potato (boiled) - 4 (medium size) Red chili flakes - 2 tsp Kasoori Methi - 1 tsp Turmeric powder - 1 tsp Roasted cumin powder - 1 tsp Ajwain - 1 tsp Salt as per taste Coriander leaves (finely chopped) - 1 cup Oil - 4 tsp Oil for frying  Method: 1. Chutney Ke Aloo Ingredients : Small baby potatoes - 500 gm Coriander leaves - 100 gm (2 cup) Mint leaves - 2 tbsp  Ginger (chopped) - 1 tbsp Green Chillies - 4-5 Salt - 1 tsp Dry mango powder - 1/2 tsp Lemon Juice - 1-2 tbsp Chaat masala - 1/2 tsp Sesame seeds (dry roasted) - 1 tsp Method : 1. Remove the thick stems of coriander and cut the coriander leaves roughly 2. Mangodi Kadhi Ingredients : Gram Flour (Besan) - 1/2 cup Moong Dal Mangodi - 1/2 cup Curd - 1.5 cup Oil - 1 tbsp Hing (Asafoetida) - 1/4 tsp Cumin seeds - 3/4 tsp  Fenugreek seeds - 1/2 tsp Green Chillies (finely chopped) -  2 Ginger (finely chopped) - 1 tsp Turmeric powder - 1/2 tsp Red Chilly powder - 1/2 tsp Salt - 1.5 tsp or as per taste Desi Ghee - 2 tbsp Method : 1. Dry Green Peas Curry Ingredients : Dry Green Peas - 1.5 cup Ginger (grated) - 1 tbsp Bay leaf - 2 Cinnamon Stick - 1 (1 inch) Whole dry red chilli - 2 (broken into 2 parts) Cloves - 4 Green Cardamom - 2 Cumin seeds - 1/2 tsp Coriander powder - 2 tsp Kashmiri red chilli powder - 1 tsp Garam masala powder - 1/2 tsp Amchur powder - 2 tsp Hing (Asafoetida) - 1/4 tsp Salt - 1 tsp or as per taste Mustard Oil - 3 tbsp Green coriander (finely chopped) - 1 tbsp Method : 1. Namak Ajwain Paratha Ingredients: Whole wheat flour - 2 cups Oil - 2 tbsp Salt - 2 tsp Ajwain (Carom seeds) - 2 tsp Oil for roasting / frying Method : 1. Take whole wheat flour in a big bowl or plate and add salt, ajwain 2. Mix well using your fingers. 3. Add oil and mix well 4. Add water and knead a soft dough. 5.
