Bihari Style Karela Aloo Sabzi | Potato Bitter Gourd Sabji

Bihari Style Karela Aloo Sabzi Ingredients: Karela / Bittergourd - 250 gm Mustard oil - 2 tbsp Cumin seeds - 1 tsp Garlic (finely chopped) - 4 cloves Onions (thinly sliced) - 2 Potatoes (thickly sliced) - 250 gm Turmeric powder - 1/2 tsp Garam masala powder - 1/2 tsp Coriander powder - 1 tsp Amchur powder - 1 tsp Red chilli powder - 1 tsp Salt to taste Jaggery - 1 tsp (optional) Method: 1. Wash, peel and cut thin strips of karela. If the seeds are too hard deseed it 2. In a pressure cooker add karela strips, 1/2 tsp salt, 2 tbsp water 3. Close the lid, cook for 2 whistles, turn off the heat 4. Release the pressure immediately to retain the bright colour of the karela  5. Take out from the cooker and keep it aside 6. Stuffed Karela with Aloo Ingredients: Karela (Bitter Giurd) - 250 gm Potatoes (boiled) - 2 Turmeric powder - 1/2 tsp Red chili powder - 1/2 tsp Garam masala powder - 1 tsp Chat masala powder - 1 tsp Salt - 1 tsp Oil - 2 tbsp Method: 1. Wash the karelas and peel them slightly 2. Make a vertical slit on each karela. 3. Scoop out and discard seeds and pulp to fill the potato masala 4. Sprinkle and rub 1/2 tsp salt and 1/4 tsp turmeric powder to remove bitterness 5. Let it rest for 20-25 minutes 6. In a mixing bowl mash the boiled potatoes 7. Add 1/4 tsp turmeric powder, red chili powder, chat masala, garam masala and 1/2 tsp salt 8. Mix everything nicely 9. Now fill the karelas with potato masala filling tightly 10. Karela Pickle Ingredients : Karela (raw and medium size)- 500 gms Salt - 2 tsp Fennel seeds - 8 tbsp Fenugreek seeds - 2 tsp Cumin seeds - 2 tsp Carom seeds - 2 tsp Yellow mustard seeds - 6 tbsp Hing - 1 tsp Black Pepper - 20 - 25 Mustard Oil - 1.5 cup Turmeric powder - 2 tsp Kashmiri Red chilli powder - 2 tbsp Black Salt - 2 tsp Kalonji - 1 tsp Lemon - 4 Vinegar - 4 tbsp Method : 1. Wash karela nicely and then make them dry completely 2. Remove stalks from both ends and cut them into 1/2 inch thick roundels 3. Transfer the chopped karela in a bowl 4. Add 1 tsp salt and mix well 5. Cover and keep aside for 1 hour 6. Now sieve the karela so that the water is removed from karelas.  7. Karela Do Pyaza Ingredients: Karela (Bitter Gourd) - 250 gm Onion - 250 gm (Chopped finely lengthwise) Turmeric Powder - 1/2 tsp Coriander Powder - 1 tsp Salt - 1 tsp Saunf (Fennel) Powder - 2 tsp Red Chilli Powder - 1/2 tsp Amchur Powder - 1 tsp Mustard Oil - 2 tbsp Method: 1. Lightly scrap the karelas 2. Wash them and cut them in thin rings 3. If there are hard seeds in the karelas, remove them 4. Add 1/2 tsp salt in it and mix. Keep it aside for half an hour 5. Now squeeze out the salt and water from the pieces of karelas 6. Heat Oil in a pan 7. Fry karela rings in oil 8. Keep stirring the karelas in between 9. Fry for 10 minutes or till they turn golden brown 10. Remove fried karelas from oil and keep aside 11. Add Onions in the pan now and cook until onions turn golden brown 12.
