Paneer Pulao Ingredients : Long grained Basmati rice - 1 cup Vegetable Oil - 2 tbsp Paneer (cut into cubes) - 200 gm Ghee - 2 tbsp Cumin seeds - 1 tsp Bay leaves - 2 Black peppercorns - 5 Cinnamon stick - 1 inch Green cardamom - 3 Black cardamom - 1 Green chillies - 2 Ginger garlic paste - 2 tsp Onion (cut in long slices) - 1 cup Carrot (grated) - 1/2 cup Green peas - 1/2 cup Salt - 1 tsp or as per taste Garam masala powder - 1/2 tsp Green coriander (finely chopped) - 1 tbsp Mint leaves (finely chopped) - 1 tbsp Method : 1. Wash rice nicely and soak in water for 30 minutes 2. Heat oil in a pan 3. Add paneer cubes and fry them till they turn brown from all sides 4. Take them out in a plate and keep aside 5. Add ghee in the same pan 6. Add cumin seeds, bay leaves, peppercorns, cinnamon, green cardamom, black cardamom 7. Let the whole spices splutter 8. Falahari Paneer in Dhaniya Pudina Gravy Ingredients : Home made paneer (cottage cheese) - 300 gms Honey - 1 tsp Rock Salt (sendha namak)- 1 tsp or to taste Cream - 2 tbsp Ghee - 2 tbsp Green coriander (chopped fine) - 1 tbsp Black pepper powder - 1/2 tsp Lemon juice - 1 tsp Green coriander (chopped) - 1 cup Mint leaves - 1/2 cup Green chillies (chopped) - 2 Ginger (chopped) - 1 tsp Cashew - 6 to 8 Thick yogurt (dahi) - 1/2 cup  Method : 1. Dice the paneer in the desired size. 2. Toss the paneer with 1/4 tsp salt, pepper, lemon juice, 1 tbsp finely chopped coriander 3. Set aside to marinate for 30 minutes. 4. Soak cashews in hot water for 30 minutes 5. Grind 1 cup chopped coriander, mint leaves, green chillies, ginger, cashew, yogurt to a smooth paste. 6. Heat 1 tablespoon ghee in a pan 7. Palak Matar Paneer Bhurji Ingredients : Spinach leaves (finely chopped) - 250 gm Green peas - 1/2 cup Full cream Milk - 2.5 cup Desi Ghee - 2 tsp Cumin seeds - 1 tsp Lemon - 1/2 Onions (finely chopped) - 2 (medium size) Green chillies (chopped) - 1 tbsp Salt - 1 tsp or as per taste Method : 1.  Heat milk in a deep pan. 2.  Squeeze one half lemon into the milk and stir to mix.  3.  Let the milk come to a boil and milk curdles nicely. Keep stirring in between 4. When the milk curdles, s train the milk to get the paneer.  5. Let the paneer remain in the strainer and set it aside.  6.  Heat desi ghee in a pan. 7.  Add cumin seeds and let them change colour. 8.   Add onions and green chillies to the pan and sauté till golden brown. 9. Paneer Stuffed Bread Roll Ingredients : Bread Slices - 6 Paneer (crumbled) - 150 grams (1 cup) Capsicum (finely chopped) - 1/4 cup Green peas - 1/4 cup Green coriander (finely chopped) - 2-3 tbsp Ginger (grated) - 1 tsp Green chilly (finely chopped) - 2 Chat masala - 1 tsp Salt - 1/4 tsp or as per taste Oil - for frying Method : 1. Preheat 1 tbsp oil in a pan. 2. When oil is sufficiently hot, add green peas and capsicum into it and saute for while. 3. Now add ginger, green chilly, paneer, salt, chaat masala and saute for 2 minutes. 4. Keep stirring constantly for 1-2 minutes. 5. Add green coriander and mix well. Stuffing is ready, turn off the flame. 6. Take out stuffing in a plate so that it cools down. 7. Cut corners of a bread slice with help of knife. Likewise, prepare all bread slices. 8.
