Lobia Salad Ingredients: Lobia / Black Eyed Peas- 1 cup Cucumber (chopped) - 1 cup Tomatoes (chopped) - 1/2 cup Onion(chopped) - 1/4 cup Coriander leaves (chopped) - 2 tbsp Sunflower seeds/ peanuts - 1/4 cup Olive Oil - 2 tbsp Lemon Juice - 1 tbsp Cumin powder - 1/4 tsp Pepper powder - 1/2 tsp Salt to taste Potatoes (boiled and cubed) - 1 cup Method: 1.  Soak the lobia for 3 to 4 hours. 2. Wash the soaked lobia and add them to the Pressure cooker. 3. Add 2 cups of water, 3/4 tsp salt and cook for 2-3 whistles  4. Let the pressure release on its own and then strain the lobia and keep it aside 5. Dice boiled potatoes 6. Finely chop onion, tomatoes, cucumber, and cilantro. 7. In a mixing bowl add olive oil, lemon juice, 1/4 tsp salt, cumin powder and freshly ground black pepper powder and whisk together 8. Add finely chopped onions, tomatoes, cucumber and potato cubes 9. Soya Bathua Sabji Ingredients :   Bathua - 250 gms Soya chunks - 1 cup Onion (finely chopped) - 1 cup Tomato (finely chopped) - 1 cup Green chillies (finely chopped) - 1 tsp Ginger (grated) - 1 tsp Mustard oil - 2 tbsp Cumin seeds - 1/2 tsp Coriander powder - 2 tsp Turmeric powder - 1/2 tsp Red chili powder - 1/2 tsp Garam masala powder - 1/2 tsp Salt - 1 tsp or as per taste Curd - 1/2 cup Method : 1. Remove the bathua leaves from the stem and discard the stem 2. Wash the bathua leaves 2 times nicely with water 3. Boil 2 cup water in a pan and add 1/2 tsp salt, soya chunks to it. 4. Cook for about 5 to 6 minutes or until the soya chunks become spongy and enlarged.  5. Next, run cold water over the cooked soya chunks to rinse them well.  6. Kali Gajar Ki Kanji Ingredients : Black Carrot - 250 gm Mustard seeds - 2 tbsp Salt - 1 tsp or as per taste  Hing (Asafetida) - 1 tsp Water - 1 liter Mustard Oil - 1/2 tsp Method : 1. Soak mustard seeds in 4 tbsp lukewarm water for 30 minutes 2. Peel and wash the carrots properly 3. Cut the carrots into batons about 3-4 inch long 4. Boil 1 liter water in a sauce pan 5. In the boiling water add carrots and let it come to a boil again 6. Remove from heat and cover it for 5 minutes 7. Grind mustard seeds to a fine paste 8. Add mustard seeds paste, salt, hing and oil to the carrot water and mix nicely 9. Transfer the carrot mixture to a glass or ceramic or earthen container after it cools to room temperature 10. Cover it and keep this container in the sunlight to ferment for 4-5 days 11. If there isn't ample sunlight, keep it in a warm place and let it ferment 12. Methi Malai Paneer Ingredients: Paneer (Cottage Cheese) - 200 gms (Cut into small cubes) Shelled Peas (Boiled) - 1/2 cup Cinnamon - 1/2" piece Big Cardamom - 2 Cloves - 4 Cashew nuts - 10 Oil - 2 tbsp Onion (Grated) - 1 White pepper powder - 1/2 tsp Fresh Cream (Malai) - 1/2 cup (75 gms) Kasoori Methi - 4 tbsp Salt - 3/4 tsp Sugar - a pinch Milk - 1 cup Method: 1. Pound together Cinnamon, cloves and seeds of big cardamom to a coarse powder 2. Pound 6 cashews separately 3. Heat Oil 4. Add grated onion and cook on low heat till oil separates. Kadahi Paneer Ingredients: Paneer (Cottage Cheese) - 250 gms (Cut into long fingers) Capsicums - 2 (Cut into long fingers) Dry Red Chillies - 2 Coriander Seeds - 2 tsp Ginger -  ½  " piece (chopped finely) + 1" inch piece (finely shredded) Garlic flakes - 10 (crushed) Green chilly - 1 (chopped) Tomatoes - 2 (chopped) Fenugreek Seeds - A Pinch Green Coriander - 1 tbsp (chopped) Salt -  ½  tsp  Oil - 4 tbsp Method: 1. Stuffed Karela  Ingredients: Karela (Bitter Gourd) - 500 gm Salt - 1 tsp Turmeric Powder - 1/2 tsp Coriander Powder - 1 tsp Red Chilli Powder - 1/2 tsp  Saunf Powder (Fennel Seed) - 1 tbsp Raw Mango - 1 Onion - 2 (Medium Size) Oil - 1 tbsp Sugar - 1/2 tsp Method: 1. Peel the bitter gourds slightly 2. Mark a cut on the bitter gourds lengthwise from one side, so that it does not break into two parts 3. Sprinkle 1/2 tsp salt on these bitter gourds and keep for half an hour 4. Grate onions 5. Peel and grate Raw Mango 6. Heat 1/2 tbsp Oil in a Pan 7. Soya Methi Ingredients: Soya Granules - 1/2 cup Kasoori Methi - 1 tbsp Onion - 1/2 cup (Chopped) Tomato - 1/2 cup (Chopped) Green Chilli  - 1 (Chopped) Ginger - 1 tsp (Chopped) Salt - 1/2 tsp Oil - 1 tbsp Coriander leaves - 1 tsp (Chopped) Method: 1. Boil Soya granules in enough water and drain out water. 2. Wash Kasoori Methi nicely 3. Heat Oil in a Pan and fry onions till golden brown 4. Add ginger, tomatoes, green chillies and stir well 5. Kulfi Ice Cream Ingredients: Full Cream Milk - 1 litre Poppy seeds (Khaskhas) - 2 tsp Sugar - 1/2 cup Cream - 1/2 cup Almonds - 12 (Soaked and Peeled) Cashew nuts - 12 Pistachio - 1 tsp Green Cardamom Powder - 1/2 tsp Method: 1. Soak Poppy seeds in lukewarm water for half an hour 2. Chop Almonds lengthwise 3. Chop Pistachios lengthwise 4. Grind Cashew nuts and Poppy Seeds.  5. Add 1 tbsp milk in the grinder and grind again to get a smooth paste 6. Heat Milk for boiling on high flame 7. When it is about to boil lower the flame and let it boil till it remains 3/4th of the quantity 8. Add the cashew poppy paste in this milk and keep boiling till it becomes 1/2 of the quantity 9. Moong Bricks Curry  Ingredients: Moong Dal - 1 cup Red Chilli Powder - 1/2 tsp Turmeric Powder - 1/2 tsp Coriander Powder - 1 tsp Garam Masala - 1/2 tsp Salt - 1 tsp Oil  - 1 tbsp Onion -1 (Cut to pieces) Ginger - 1 inch (Cut to pieces) Coriander leaves - 1 tbsp (Finely chopped) Method: 1.
