One Pot Vegetable Mangodi Tahiri / Pulao

Vegetable Mangodi Tahiri Ingredients: Basmati rice - 2 cups Mangodi - 1 cup Green Peas - 3/4 cup Potato (Cut in big pieces) - 1 cup Onion (thinly sliced) - 1 cup Ginger (grated) - 1 tbsp Green chillies (slit) - 2 Desi ghee - 3 tbsp Turmeric powder - 1/2 tsp Red chilli powder - 1/2 tsp Garam masala - 1 tsp Cumin seeds - 1 tsp Bay leaf - 1 Cloves - 6-7 Cinnamon stick - 1/2 " Black Cardamom - 2 Salt as per taste Method: 1. Rinse the rice in clean water 3-4 times  2. Soak the rice in water for 20 minutes 3. In a pressure cooker add 2 tbsp ghee 4. Add the mangodi and shallow fry them on low heat 5. When they have turned golden brown take them out in a plate  6. In the same cooker add 1 tbsp ghee 7. Add cumin seeds, bay leaf, cinnamon stick, cardamom, cloves 8. Saute for few seconds 9. Paneer Pulao Ingredients : Long grained Basmati rice - 1 cup Vegetable Oil - 2 tbsp Paneer (cut into cubes) - 200 gm Ghee - 2 tbsp Cumin seeds - 1 tsp Bay leaves - 2 Black peppercorns - 5 Cinnamon stick - 1 inch Green cardamom - 3 Black cardamom - 1 Green chillies - 2 Ginger garlic paste - 2 tsp Onion (cut in long slices) - 1 cup Carrot (grated) - 1/2 cup Green peas - 1/2 cup Salt - 1 tsp or as per taste Garam masala powder - 1/2 tsp Green coriander (finely chopped) - 1 tbsp Mint leaves (finely chopped) - 1 tbsp Method : 1. Wash rice nicely and soak in water for 30 minutes 2. Heat oil in a pan 3. Add paneer cubes and fry them till they turn brown from all sides 4. Take them out in a plate and keep aside 5. Corn Pulav (Renal & Diabetic Diet) Ingredients : Basmati Rice (Boiled) – 2 Cup Corn kernels (Boiled) – 3/4 Cup Onions (finely chopped) – 1/2 cup   Tomato Puree – 1/2 cup  Green chilly (chopped) - 1  Ginger – Garlic Paste – 1 tsp  Cumin Seeds – ½ tsp  Coriander leaves – a few – for garnish (Optional)  Oil – 1  tbsp Salt – 1/2 tsp    Method: 1. Heat oil in a pan. 2.  Add Cumin Seeds, Onion, green chilli and fry for some time. 3. Add ginger- garlic paste and fry for some time. 4. Add boiled Corn, Tomato Puree and salt and cook well. 5. When the puree is nicely cooked, mix in rice to the corn masala 6. Garnish with Coriander Leaves.
