Corn Bhajiya Ingredients : Corn kernels - 4 cups Ginger (finely chopped) - 1 tbsp Green Chillies (finely chopped) - 1 tsp Green Coriander (finely chopped) - 2 tbsp Coriander powder - 1 tbsp Fennel seeds (Saunf) powder - 1/2 tbsp Red chilli powder - 1 tsp Salt - 1.5 tsp Kasoori methi - 1 tbsp Hing - a pinch Amchur powder - 1 tsp Suji - 3-4 tbsp Besan - 2 tbsp Oil for frying Method : 1. Boil corn kernels in 4 cup water with 1 tsp salt in a pan 2. Sieve the corn kernels and let them cool 3. Now grind the boiled corn coarsely 4. Transfer the coarse paste in a bowl 5. Add ginger, green chillies, green coriander 6. Add coriander powder and fennel seeds powder in corn mixture 7. Add red chilli powder, 1/2 tsp salt, hing, kasoori methi, amchur powder and mix it 8. Coffee Ice Cream (No Eggs) Ingredients : Full Fat Milk - 500 ml (2.5 cups) Cornflour - 1 tbsp Sugar - 1/2 cup Instant Coffee powder - 1.5 tbsp Fresh Cream - 150 ml (3/4 cup) Method : 1. Combine the coffee and 1 tbsp hot water in a bowl, mix well and keep aside 2. Combine the cornflour and 100 ml (1/2 cup) milk in a bowl, mix well and keep aside 3. In a deep pan add 400 ml (2 cups) milk and sugar and cook it on medium flame 4. Stirring occassionally cook it for 12-15 minutes 5. Add the cornflour milk mixture and mix well 6. Cook on medium flame stirring continuously for 7-8 minutes or till the mixture starts sticking to the ladle 7. Add the coffee water mixture and mix well 8. Cook for 1 minute stirring continuously 9. Mixed Dal Appe Ingredients : White Urad Dal - 1 cup Yellow Moong Dal - 1/2 cup Arhar / Toor Dal - 1/2 cup Chana Dal - 1/2 cup Salt - 1 tsp or as per taste Eno Fruit Salt - 2 tsp Onion (finely chopped) - 1/2 cup Coriander leaves (finely chopped) - 2 tbsp Ginger (grated) - 2 tsp Oil - 1.5 tbsp Mustard seeds - 1.5 tsp Green Chillies (finely chopped) - 2-3 Curry leaves - 10-12 Method : 1. Wash all dals together till water runs clear 2. Soak the dals in enough water overnight 3. Grind the dals with very little water till smooth 4. Heat 1 tbsp oil in a pan 5. Kala Chana Shami Kebab Ingredients: Black Chana - 3/4 cup Bread Slices - 5 Curd - 2 tbsp Green Coriander - 3 tbsp (finely chopped) Green Chilly -2 (Finely chopped) Garlic - 4 cloves (crushed) Coriander Powder - 1/2 tsp Garam Masala Powder - 1/2 tsp Turmeric Powder - 1/4 tsp Amchur Powder - 1/2 tsp Red Chilli Powder - 1/2 tsp Salt - 1 tsp Oil for frying Method: 1. Poori Kachori Ingredients: Atta (Whole wheat flour) - 2 cup Salt - 2 tsp Oil - 4 tbsp Urad Dal - 1/2 cup Ginger - 1 tbsp (finely chopped) Green Chilly - 2 (finely chopped) Cumin seeds - 1/2 tsp Red Chilli Powder - 1/2 tsp Coriander Powder - 1 tsp Fennel Powder (Saunf Powder) - 1 tsp Amchur Powder - 1 tsp Hing (Asafoetida) - 1/4 tsp Oil for deep frying Method: 1. Rinse the dal a couple of times and then soak in enough water for 3-4 hours 2. Grind the soaked dal to a coarse paste without adding water 3. Heat 1 tbsp Oil in a pan and add cumin seeds and hing & let them sizzle 4. Now add chopped ginger and green chilly 5. Saute till the raw aroma of ginger goes away 6. Crunchy Poha Delight Ingredients: Poha (Beaten Rice) - 3 cup Milk - 1/2 cup Salt - 2 tsp Black Pepper powder - 1/2 tsp Potato (Boiled) - 500 gm Green Peas (Boiled) - 1 cup Onions (Finely Chopped) - 3 Ginger (Grated) - 1 tbsp Green Chilli (Finely Chopped) - 2 Lemon Juice - 1 tbsp Garam Masala Powder - 1 tsp Oil - 2 tsp Oil for Frying Method: 1. Wash the Poha and drain out water 2. Add 1 tsp Salt and Pepper to it and mash well 3. Then add milk to bind a pliable dough 4. Set aside under a wet cloth 5. Grate the boiled potatoes 6.
